Yesterday was sausage noodles.

Boil 1 lb. Of noodles. (my favorite is small shells, as the flavors blend well.

While water is coming to a boil and noodles cooking:

Chop 1 bell pepper
1 small onion
Quarter and cut 1/2 to 1 lb. Of Hillshire type sausage

Cook the onion, bell pepper and sausage in some olive oil until the onion and pepper are soft and tender and the sausage is browned. If your family likes them, add garlic, mushrooms, any spices you like. I use turkey sausage for lower fat.

Drain the noodles, put back in the pot, add the veggie/sausage mixture. Stir and serve.
 
Well we have no power at home so we are staying with my Grandma who does. The power company said it will take a few days to get everyone's power back. Our street had not one but three down lines.

So we had roasted chicken with sides from the grocery for dinner tonight.
 
Sorry, hope you get power back on sooner. That must be one big storm.

Tues - chicken quesadillas
Wed - leftover meatballs
Thurs - still looking for an idea edit - lentils
Fri - homemade pizza
Sat - not sure yet - edit - probably chicken with tzaziki (sp) sauce in gyro bread
Sun - baked ziti
Just realized that is alot of tomato sauce this week lol
 
Change of plans- I was feeling lazy so tonite we had chicken legs instead of the meatballs. A new recipe and they were yummy, cheap and easy(just like me:rotfl2:)

Honey Baked Chicken Drumsticks
2 pounds chicken drumsticks
2 tablespoons butter
2 tablespoons olive oil or Canola oil
1/2 cup flour
1 1/2 teaspoons Creole seasoning or a seasoned salt blend
1/3 cup honey
1/4 cup brown sugar
4 tablespoons lemon juice
2 teaspoons soy sauce
Preparation:

Wash chicken and pat dry. Toss in a food storage bag with the flour and Creole seasoning.
Melt butter with olive oil; pour into an 11x7-inch baking dish. Heat oven to 350°.

Arrange chicken in the baking dish, turning to coat with the butter mixture. Bake for 30 minutes.

In a saucepan, heat honey with brown sugar, lemon juice, and soy sauce, stirring to blend.

Pour the honey mixture over the chicken pieces and return to the oven. Bake for 30 to 40 minutes longer, turning the chicken pieces every 10 to 15 minutes.
Serves 4.

Tuesday - leftovers
Wednesday - Pork chops, corn, fruit
Thursday -leftovers
Friday - Dinner out celebrating the twins Birthday
Sat. - Dinner out or in. I am thinking about getting pizza before we head out to the step show
Sunday - I don't have clue. I will go grocery store Saturday.

Doing my Grocery Shopping on Wednesday and the list is actually pretty short for once! I need to start doing better at eating from the freezer instead of buying more food. Biggest problem is that I am out of chicken but have a ton of pork and beef... but we don't like to eat beef and/or pork more then once a week and prefer most meals to be chicken, seafood, or pasta.

So, here is my menu for the next week (Wednesday-Tuesday)

Wednesday: Rib Eye Steaks with Whiskey Cream Sauce, Fried Potatoes, and a Salad.

Friday: Chicago Deep Dish Pizza and a Salad

Sunday: Baked (grilled?) BBQ Chicken, Corn Fritter Casserole

Monday: Hamburger Soup and Fresh Bread
 
This week:

Monday - Italian chicken with diced tomatoes, rice, corn, french bread
Tuesday- Macaroni and cheese baked with turkey breast, peas, rolls
Wednesday - Scrambled eggs and popplers (:) bisquick and sausage balls)
Thursday - Ham, potatoes, and green beans
Friday - Hamburgers on the grill, french fries, salad
Saturday - Grilled cheese and homemade tomato soup
Sunday - sauerkraut stuffed pork loin, mashed potatoes, broccoli, rolls
 
Lots of great meal ideas here.

We've been doing fairly well to be honest, I can't remember the last time we ate out on impulse. We eat out (usually pizza or subs) every Thursday before the kids' swimming lessons, but we used to go out at least once more every week.

I detest meal planning far in advance, but so far so good with the couple of day at a time plan.

Last night we had coconut chicken tenders and spinach salad
Tonight we're having veggie pizzas on greek pitas with spinach salad.
Tomorrow will be pasta of some sort and guess what ... spinach salad!

I really should find something else to do with the huge quantity of spinach I bought over the weekend.

Try the chicken, bacon, spinach one....SO good! You can do it as a regular pizza or the french bread, too!
 
Tried to do some boneless skinless chicken breasts in the crockpot to add to BBQ sauce for pulled chicken sandwiches...left em for about 10 hours on low and they were absolute mush...I'm guessing they can't be left that long?

Had a similar experience recently with a cauliflower curry too...12 hours on low and it was like baby food!

I guess I really thought you could leave stuff for 10-12 hours and it would be ok...anyone have any thoughts?

What's the max you would do for those items?

Just last week I made pulled chicken sandwiches...I had two boneless, skinless chicken breasts and combined half a bottle of bbq sauce, 1/4 cup zesty italian dressing, a few squirts of worches. sauce, and about about 3 tbls of brown sugar..combined and poured over chicken breasts and cooked 4 hours on high then 1 hour on low..

It turned out PERFECT! After the 4 hours on high, I pulled out the chicken and shredded it and put it back into the crockpot and cooked it on low for the last remaining hour...and this is where (if I needed to) add more bbq sauce I would have but it turned out great!

I think 12 hours is a little long! Try this next time! :thumbsup2

So I have been eating out here and there like crazy. :scared1: So I am going to take it one day at a time and strive for better!:thumbsup2 So today we have to go grocery shopping and then i will put together my menu!

Today so far

Carmel french toast bake for breakfast
Lunch something quick maybe more ramen noodles
Diner- to be decided on later!
 
Well still no power but we are making it work at my Grandma's house. A neighbor called and when he spoke to the power company they still had no clue when power would be back on. So dinner at Grandma's tonight is from our fridge (we brought down a bunch of food we were going to use in the next few days), pork chops with sweet potato gnocci and brussel sprouts.

We actually order some pizzas and hot dogs 2-3 times a year. They get shipped down in dry ice and we eat them over a couple of months.
 
Sunday: Baked Ham with Mashed Potatoes and frozen peas (cooked of course)and salad (of course) we make our own dressing
Monday: Roasted Chicken (whole) with the left over potatoes, Salad and Green beans
Tuesday: Chicken tacos with roasted Veggies and Rice
Wedns. Chicken Soup (made from the left over chicken and broth made from the bones of the whole chicken) with the leftover rice from Tuesday
Thurs. Penne Pasta with black olives, canned tomatoes and feta cheese
Friday: Pea soup with the broth made from the juices of the ham bone
SAt. PIZZA BAGELS!!!
 
Ugh just as I thought I was getting back on track while baking lemon squares I touched the bottom crust and well it stuck to my finger and boy did it burn it:sad2: so I had no way to cook diner so we had fast food. Today will be a better day

Friday good old home made pizza and a movie
