MacFam4, your menu sounds great! Can you share some of your recipes, if you don't mind? the chicken parisienne sounds intriguing, and the honey chicken (what type of chicken are you using, a whole one?) as well as the Rachel Ray cowboy spagetti. Thanks!
Honey Chicken Wings
3 pounds chicken wings
1 tsp salt
1 tsp black pepper
1/2 cup honey
1/2 cup BBQ sauce
2 tbs spicy brown mustard
1 clove garlic, minced
Rinse chicken and pat dry. Cut off wing tips, discard. Cut each wing at joint to make two pieces. Sprinkle salt and pepper on both sides of chicken. Place wing pieces on broiler rack. Broil 4-5 inches from heat about 10 mins, turning halfway through cooking. Place broiled chicken wings in slow cooker.
Combine honey, BBQ sauce, mustard and garlic in small bowl; mix well. Pour sauce over chicken wings. Cover, cook on low 4-5 hours.
My parents make the wings like this and love them. But, here's what I do:
I don't eat meat with a bone in eat

Weird, I know. I use chicken breast instead of wings, throw them in the crockpot with the rest of the ingredients, and cook the same way. When cooked, I shred the chicken breasts and we either eat it over rice, or, we make sandwiches out of them and put them on a bun.
Chicken Parisienne
(I haven't actually made this yet so I don't know how it tastes)
6 boneless skinless chicken breasts, cubed
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 can condensed cream of mushroom or chicken soup
2 cans (4 oz each) sliced mushrooms, drained
1/2 cup dry white wine
1 cup sour cream
6 cup hot cooked noodles
Place chicken in slow cooker, sprinkle with salt, pepper, and paprika.
Add soup, mushrooms, and wine to slow cooker, mix well. Cover, cook on high 2-3 hours. In last 30 mins of cooking, add sour cream.
Serve over noodles.
