MacFam4, your menu sounds great! Can you share some of your recipes, if you don't mind? the chicken parisienne sounds intriguing, and the honey chicken (what type of chicken are you using, a whole one?) as well as the Rachel Ray cowboy spagetti. Thanks!

Honey Chicken Wings

3 pounds chicken wings
1 tsp salt
1 tsp black pepper
1/2 cup honey
1/2 cup BBQ sauce
2 tbs spicy brown mustard
1 clove garlic, minced

Rinse chicken and pat dry. Cut off wing tips, discard. Cut each wing at joint to make two pieces. Sprinkle salt and pepper on both sides of chicken. Place wing pieces on broiler rack. Broil 4-5 inches from heat about 10 mins, turning halfway through cooking. Place broiled chicken wings in slow cooker.

Combine honey, BBQ sauce, mustard and garlic in small bowl; mix well. Pour sauce over chicken wings. Cover, cook on low 4-5 hours.

My parents make the wings like this and love them. But, here's what I do:

I don't eat meat with a bone in eat :sick: Weird, I know. I use chicken breast instead of wings, throw them in the crockpot with the rest of the ingredients, and cook the same way. When cooked, I shred the chicken breasts and we either eat it over rice, or, we make sandwiches out of them and put them on a bun.


Chicken Parisienne

(I haven't actually made this yet so I don't know how it tastes)

6 boneless skinless chicken breasts, cubed
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 can condensed cream of mushroom or chicken soup
2 cans (4 oz each) sliced mushrooms, drained
1/2 cup dry white wine
1 cup sour cream
6 cup hot cooked noodles

Place chicken in slow cooker, sprinkle with salt, pepper, and paprika.
Add soup, mushrooms, and wine to slow cooker, mix well. Cover, cook on high 2-3 hours. In last 30 mins of cooking, add sour cream.
Serve over noodles.
 
Tonight is fend for yourself night. There is a ton of stuff in the fridge/freezer.

When I worked full time, I used to have "free for all Fridays". We had leftovers, canned soup, cereal, frozen pizza, whatever. I just didn't cook :thumbsup2

When I worked full time, I used to have "free for all Fridays". We had leftovers, canned soup, cereal, frozen pizza, whatever. I just didn't cook :thumbsup2

:thumbsup2 We always try to do this one night a week to get rid of things in the fridge.


Tonight we are having sesame ginger pork stir fry over rice.
 
Someone in our family is visiting from CA, and were staying about an hour away from us, with other relatives, no relation to us, but are related to her. They got in a fight and she came to stay with us instead, until Tuesday. I am happy I made enchiladas and chilli beans now, as she has been chowing down on them, instead of wanting to go out for every meal, like she usually does. ;)
 
Trying to stay on track especially because our van broke down last week to the tune of $2500 :scared1: So we're trying really hard to eat at home. Did our grocery shopping for 2 weeks this morning so here is my 2 week menu:

Sunday: Chili and cornbread

Monday: Baked grouper, baked potatoes and strawberry shortcake

Tuesday: Quick dinner out. Attending a preschool open house for a school we're interested in enrolling DD at.

Wednesday: Spaghetti and garlic bread

Thursday: Scrambled Eggs, turkey bacon and hashbrown patties

Friday: Sloppy joes and chips

Saturday: Chili Dogs and mac & cheese

Sunday: Scalloped potatoes and ham, green beans

Monday: Roast, mashed potatoes, corn

Tuesday: Stuffed Chicken breast, rice and pineapple

Wednesday: Ham and Cheese omlets, toast

We got a whole ham on sale today for $1.19/lb ($10 for the whole ham) so I brought it home and quartered it and stuck it in the freezer. The kids all like ham but we rarely have it because its usually so expensive.
 
Going out to dinner tonight. My mom got a giftcard from a friend for doing somw sewing projects for her. Tomorrow is grocery shopping day.
 
Today we had a get together at my moms house and then for diner we fended for ourselves. One dd had a grilled cheese another had a bowl of fruit. I had some chili hubby had hot dogs. Tomorrow is food shopping clipping coupons now just got a really good one for 3 dollars off 3 Pillsbury:banana: product!
 
Tonight is baked BBQ Chicken with Corn Fritter Casserole. YUMMY!

Really excited because we just got a new grill today! I can't now wait to try it out. Grilling is such a wonderful and healthy way to cook!

You take Grands biscuits and cut them in half lengthwise and flatten. Brown ground beef with onions/garlic/S&P drain off fats. Put the meat on one half of the flattened biscuit with some grated cheese, ketchup, and mustard. Fold and crimp the edges. Bake until browned. I will serve these will roasted broccoli and cauliflower.
 
Monday- Roast Chicken, baked potato green beans
Tuesday- meatloaf and mashed
Wed.-chicken,sausage, and potato skillet
Thursday-Frittata night
Friday- homemade pizza? maybe
Saturday stuffed chicken thighs
Sunday- chicken enchilladas

That sounds good. I wonder how it would be if I just browned the meat and used taco seasoning like I was making tacos. DS10 can't eat cheese and doesn't like mustard and ketchup, but loves the seasoned ground beef. the other two would love it like you make it, and so would I. But the diet won't allow it, oh well, the kids will love it.

The seasoned ground beef sounds great too! Bet it would be yummy~
 
I fell off the wagon big time! We had company last week and spend a few days in New Orleans. My friend is from Denmark and also a chef so we wanted to take her to some of our yummy NOLA favorites!

I got back in the groove yesterday-we had burgers on the grill and baked beans. Tonight will be spaghetti and meatballs, tomorrow is gumbo. After that I'm headed to Orlando with our oldest and his wife. I'm going to try to "eat at home" at Homewood Suites and All Star Music as much as possible. I'm bringing easy things like salads, tortilla soup and home-made burritos. This is a kind of unplanned and unbudgeted trip so I need to cut corners where I can!

Today is our grocery shopping day too! We just got home from Giant Eagle ~ gotta love an extra day off school!!
