Just came back from the grocery store and we only spent 86$ this week. ( I had 20 to put towards the bill from a return i had made) So here is my list

Tonight- Beef bake
Tuesday-Chicken and rice
Wednesday- Shepherds pie
Thursday- American chop souy
Friday- Pizza and a movie
Saturday-mac and cheese
Sunday- taco's

1/30 no eat out days

Would love to compare American chop souy. I make something with either ground beef or ground turkey, once browned add 2 cans stewed tomatoes, a can of either water chestnuts or beansprouts, and 2 cans of kidney beans. Add soy sauce to taste. Our kids call it Chinese chili :laughing:
We love this at our house, would love to know if you have a variation or a whole other recipe that we could try!
 
Had planned on making something fancy for my mom and I tonight but I came down with a cold so we are having homemade chicken noodle soup and sandwiches instead.

Mine is pretty basic we brown ground beef with Italian seasonings and some chopped pepper and onion then I pour in one can crushed tomatoes then we add that to some pasta and bake about 20 mins and enjoy I put cheese on mine
 
Yesterday I made spaghetti, garlic bread & salad, tonight I think I'll make chicken/rice bake (with mushroom soup for moisture/flavor) and the rest of the week maybe tacos, and clam chowder on friday.

Figment, my mom used to make something she called "goulash" with macaroni, browned hamburger, tomatoes, onions, celery, and probably whatever veggie she had to use up in the fridge...anyway, it was DELICIOUS and filling, and I'm sure, it was cheap to make! I think I'll make that soon in fact!
 

Sunday - Grilled sausages, baguettes, broccoli (we were supposed to have burgers but my Dad dropped off sausages).
Monday - :love:Valentines menu:love: - Whole wheat spaghetti, marinara sauce, homemade turkey meatballs, ceasar salad (from mix), garlic bread, corn and tomatoes, chocolate cake and ice cream.

Tuesday - Leftovers

Wednesday - McDonalds - This is no fast food February for us, but DS6 gets fast food on this one day.

Thursday - I'm going out with friends. Kids and DH - Hot dogs and chips

Friday - Frozen Fish Sticks and baked Fries and brocolli.

Saturday - Crockpot roasted chicken and sides from the freezer.

Not the healthiest week. I need to work on making it better.
 
Tonight we are having chicken and rice. I am still not feeling well so it will be quick and easy.
 
I cheated. I spent $12 on breakfast with my friends today. I used to go weekly. I have not gone in over 7 weeks now. Today I went. And it was worth every penny of that money.

But tonite is back on track to eat at home. I have to go back and look what I scheduled for today.
 
Lots of great meal ideas here.

We've been doing fairly well to be honest, I can't remember the last time we ate out on impulse. We eat out (usually pizza or subs) every Thursday before the kids' swimming lessons, but we used to go out at least once more every week.

I detest meal planning far in advance, but so far so good with the couple of day at a time plan.

Last night we had coconut chicken tenders and spinach salad
Tonight we're having veggie pizzas on greek pitas with spinach salad.
Tomorrow will be pasta of some sort and guess what ... spinach salad!

I really should find something else to do with the huge quantity of spinach I bought over the weekend.
 
Pork loin in the crock, with cream of mushroom soup, mushrooms, onions for the family, leftover pinto beans for me, with glazed onion rice, that my daughter is making.

I threw chili in the crockpot this AM. Hoping there will be some leftovers to have on top of hotdogs tomorrow night. I made a new recipe last night from my Betty crocker 'Best Chicken' cookbook. 'Spicy asian chicken tacos' they were pretty good. A little dry and next time I think I would just serve it with rice instead of in taco shells but it was something different!

Does anyone have a knock off recipe for the chicken and rice they serve at cracker barrel on Saturday nights? My husband loves that stuff!;)

Cracker Barrel Chicken & Rice

4 chicken thighs (Skin Removed)
2 cups Minute Rice
2 cups milk (I use skim, you can use any type)
1 can Campbells cream of chicken soup
1 can sliced mushroom

Pre-heat oven to 350 degrees. Grease bottom and sides of casserole dish (I use olive oil, you can use cooking oil or butter as well).

Pour minute Rice into dish, then add milk, cream of chicken soup and can of sliced mushrooms.

Stir until cream of chicken soup is distrbuted through mix.

Season Chicken (use your favorite seasonings) Eerything from garlic powder to regular chicken meat seasoning works well.

Place chicken in dish, spoon some of the mixture over each piece of chicken.

Cover and bake for 60-70 miutes. Remove from oven slightly mix and serve.

Thanks! I'll have to try a variation of this using the breast tenders, cracker barrel's is definatly breast tenders, hubby won't touch dark meat!
 
Something else I learned online- On Sunday they serve chicken and rice soup- it's just the stuff from the night before with Chicken Stock added to it to thin it out. Now that stuff I love!
 
Hope you are doing better Charming? I pulled a muscle in my shoulder and neck on Sat. and have been trying to work the kink out. However I am still sore. Then we have our ugly snow melting and our sidewalks are flooded. When I walk my daughter to school in the morning I have been slip slidding on the ice from the puddles. I wondered why my calves are sore lol!

Well I went shopping today. It was a meat week so I spent around $120/$37 saved in coupons. I did came home with a lot of meat. I purchased this chuck roast deal where you get free carrots, potatoes, and celery. I will be dividing that up into three meals. I also had to buy a huge tray of hamburger. It finally went on sale after a month. So I will be making one lb baggies up today.

Here is some of the plan for this week:
Goan Beef curry from Aarti Party (I am going to make this in the crock pot)
Philadelphia cream cheese southwest chicken (new sauce)
easy biscuit chicken pot pie
rigatoni and meat sauce
 
So Monday the 21st is the last swimming my DD do for 6 weeks. :banana: So, my goal is to eat dinners at home and not on the run. :idea: I wanted to thank everyone for their dinners they have posted so I have plenty of ideas.:worship: FYI tonight I am making meatloaf, hashbrown casserole, and a veggie.
 
Thanks for the well wishes. I am feeling pretty good today, not 100% yet but I can actually breathe through my nose.

Tonight I am not sure what we are doing. My mom is having her hair done (a perm at the beauty college which takes a long time) and then has an eye appointment at 4pm. I might have her grab a sub for us to share and add stuff from home to it for the sides.
 
Bumping the thread back up

Last night we ended up having fried chicken that my uncle stopped to get on his way over to get some work done.

Tonight we are having chicken sausages with mac and cheese and arugula salad
 
The cracker barrel chicken recipe sounds yummy. I think I'll put mushrooms on my shopping list for tomorrow and have that sometime next week.

I changed the plan for yesterday - made rice and beans instead of pasta.

Tomorrow will be cranberry chicken in the crockpot.

Saturday we're hosting a party for my parents, so they'll be lots of food there.

Sunday, we'll probably be eating leftovers from Saturday.
 
I have a good recipe for the crockpot and not too expensive for all of us:
Chicken In a Pot

1 lb boneless skinless chicken breasts
1 extra large can of cream of chicken soup(or cream of mushroom- whatever you prefer)
3 dry pkgs of Good Seasons salad dressing
2 pkgs cream cheese
rice(white or brown)

Cook chicken and Good Seasons dry packets in crockpot on low until chicken shreds with a spoon- usually 6 hours or so. Then add cream of chicken and cream cheese- let it all meld together. Cook rice and then pour chicken mixture over rice to taste. Very good, so easy!!!

I have put the chicken with a little(very little) water and the seasoning, went to work, came home, added the other two items, and cooked the rice while that was all melting and great dinner. DH always wants peas with it too, he actually mixes it with the dish- I hate peas- but he likes it. Hope everyone likes it, of course you may want to tweak it to your liking with more or less cream cheese and soup, more chicken, etc. Enjoy!!
