So many great recipes lately. I need to give them a try soon.

Tonight we are going out to dinner for my Aunt's Birthday. I do not mind eating out for an occassion, I am just trying to cut back on the "I do not know what to do for dinner, let's order takeout or go out" habit.

Tomorrow we are starting the big project of cleaning out our attic. So we are having vegetable beef soup in the crock pot.
 
Ok I need help. tomorrow is going to be tough. We are heading to the Zoo(membership so getting in is free) I know we will get home late. I was hoping to have something in the crockpot ready to go. I have skinless boneless chicken thighs- any ideas what I could do with those in the crockpot? I looked online but nothing is grabbing me.

Tonite is "mom's famous pizza" :rotfl2:which is just my homemade dough- some sauce and cheese. But the kids love it. And Chocolate cake for dessert for the birthday boy(youngest turns 6 today- hence the zoo trip)
 
Yummy sounding recipes!! Making me hungry, even though I rarely eat meat.;)

2/16: Tostadas (bean) and burritos (beef, for the rest of the family)

2/17: Red beans and rice, me, family had a frozen, 10 min. in the skillet, Shrimp dish.

2/18: Papa Murphey, take and bake pizza my son in law picked up. He got bread sticks for me.:thumbsup2

Tomorrow, I will try a new vegetarian meal. Not sure which one yet, as a friend at work, brought in a cookbook full of easy and fairly quick recipes. I'll pick one to try tomorrow!!

Last night was build your own taco night with chicken rice. Tonight it's meatloaf muffins and a potato and a veg.
 

2/20- Roast with potatoes, veggies, salad, etc

2/21 Ham and scalloped potatoes

2/23 Baked Chicken

2/24 Southwest beef stir fry

2/25 pasta and sausage

2/26 Panini's with something....

2/27 Chicken fried chicken
 
Coming back to this thread, ate out too much lately.

Today - Chicken and dumplings and bread pudding
Tomorrow - Beef and broc with brown rice
Tuesday - Pot Roast with potatoes and carrots
Wednesday - pasta and meatballs
Thursday - homemade mac and cheese and whatever fresh veg I buy at the store

That's all I have for sure so far. Need to go to the grocery store by Thursday to plan the rest if the week.
 
Last night we ended up having chef boyardee pizza. It was yummy and I loaded it up with veggies so it was semi healthy.

Tonight is going to be meatball subs with sweet potato fries and salad.

I decided to save the vegetable beef soup for tomorrow since we will be in and out all day.
 
How do you do meatloaf muffins? Maybe DS would eat those...he won't touch DH's regular meatloaf.

Meatloaf muffins are super easy to make. Here is the recipe!

1-2lbs ground beef or turkey
1 onion diced
1 box Stovetop stuffing mix
2 eggs
1 cup water
Salt and pepper

Set oven to 350. Combine the ground beef, onion, stuffing, and eggs. Start adding water to the meat mixture. You may not need the full cup. You want to make sure everything is moist. Add salt and pepper. Use Pam to spray the inside of a 12 hole muffin tin. Fill the tin with the meat mixture. I top mine with ketchup but you can also use tomato sauce. Bake for 35 minutes until no longer pink. I also drain the muffin tin of the grease before serving. Each serving is 2 muffins.

Monday: Vegetable beef soup with garlic bread
Tuesday:Greek Chicken in pitas w/ side salads
Wednesday: steaks sandwiches with sauteed mushrooms and peppers & corn on the cob
Thursday: Lemon chicken pasta with ceasar salad and garlic bread

Friday and Saturday eating out cause we will be out of town
 
Tonite is hopefully the mustard chicken we still have not eaten. or maybe the cracker barrel chicken and rice thing. Something with chicken will happen tonite.

Monday- Spaghetti and Turkey balls
Tuesday- meatloaf muffins (thanks for that recipe!)
Wednesday- fried chicken legs with arroz y gandules and fried plantains
Thursday- lasagna with leftover sauce and balls from Monday
Friday- Crusty chicken thighs with baked potatoes
Saturday- pizza probably- or leftovers or whatever not sure yet.

Grocery shopped today and spent $74!! (for a family of 6!) :banana:
got a 20 pound bag of rice so there will a lot of rice in our future.
 
We've been eating out entirely too much lately so I'm coming back to keep myself on track.

Sunday 2/20 - Meatloaf, baked potatoes, green beans and pears

Monday 2/21 - White chicken enchiladas

Tuesday 2/22 - Baked grouper, piergoies, corn

Wednesday 2/23 - Spaghetti (if I have ground beef in the freezer) or Pork Chops and baked potatoes

Thursday 2/24 - Dinner out - dance night/payday

Friday 2/25 - I work late so it will likely be pizza
 
I totally did not feel like cooking tonight, but I managed to whip up some frozen ravioli and salad. The kids loved it.

Here's the plan for the next few days:

Monday - leftovers from my parents' party last night (my parents are coming over to help us eat them!)

Tuesday - Cabernet beef in the crock pot (I'm working late)

Wednesday - soft tacos

Thursday will be pizza before the kids' swimming lesson

and I'll figure out Friday later in the week.
 
Tonight I am going out with th girls but I am making a pasta thing for the rest f the fam. For lunch w are having good old noodles
 
Monday and Tuesday: Feeding my inner hillbilly with soup beans, mustard greens, cornbread and peaches

Wednesday: parmesan crusted chicken breasts, peas, blackberries

Thursday: chili over baked potato, baked pears

Friday: scallops in cider/yogurt sauce, mashed potatoes, asparagus
