I'm excited about my menu for this week. I like the variety of flavors and meats and three of the recipes are brand new. It also contains one of my favorite family recipes with the Pot Roast. If I could only have one meal for the rest of my life it would be this Pot Roast. It is SOOOOO good and I always eat way too much of it.

1/24 Teriyaki Chicken (crockpot), Salad, Rolls
1/26 Salmon Filets, Couscous/Rice, Asparagus
1/28 Pot Roast, Carrots and Onions, Potatoes
1/30 Penne with Shrimp and Herbed Cream Sauce, Garlic Bread
1/31 Tangy BBQ Ribs (crockpot), Cole Slaw

We are switching things around already because of the weather. Currently we are getting rain, but it looks to be switching to snow already. It's cold and yucky and thus I am making the Pot Roast tonight. I feel like I need to make something that is warm and filling.

The Penne is also being moved to next week since we ended up with a hair appointment on Saturday so now I won't be home on Sunday.

I have been reading this thread for a bit, and am very inspired!

I have been trying to cut back on the eating out too, and doing pretty well at dinner time. There is still the occasional b'fast or lunch from out though. My son is very into routine (he's on the autisitic spectrum) so it's hard to convince him we need to NOT get bagels on Saturday mornings!

I am really enjoying the recipes, keep 'em coming! Great job everyone!

Last night's spaghetti and meatballs tasted so good for some reason. For lunch today I am taking the leftover sauce and meatballs and making subs. Dinner tonight is going to be out for my Grandma's birthday.

Sure! It's a take off of a recipe by Giada De Laurentiis.

Ingredients

* 1 pound penne pasta
* 1/4 cup olive oil
* 1 pound medium shrimp, peeled, and deveined (I use frozen usually)
* 4 cloves garlic, minced
* 1 (14.5 oz) can of diced tomatoes
* 1/2 cup chopped fresh basil leaves
* 1/2 cup chopped fresh flat-leaf parsley
* 1/4 teaspoon crushed red pepper flakes
* 1 cup white wine (or chicken stock)
* 1/3 cup chicken stock
* 3/4 cup heavy whipping cream
* 1/2 cup grated Parmesan

Directions

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta and set aside.

In a large skillet, heat the oil over medium-high heat. Add the shrimp and garlic. Cook, stirring frequently until the shrimp turn pink and is cooked through, about 3 minutes. Using a slotted spoon, remove the shrimp and set aside.

Add the tomatoes, 1/4 cup basil, 1/4 cup parsley, and the red pepper flakes. Cook for 2 minutes, stirring constantly. Add the wine 9or chicken stock), chicken stock, and heavy cream. Bring the mixture to a boil. Reduce the heat to medium-low and simmer for 7 to 8 minutes until the sauce thickens. Add 1/4 cup of the Parmesan, the cooked shrimp, the cooked pasta, and the remaining herbs. Toss together until all ingredients are coated.

Transfer the pasta to a large serving bowl. Sprinkle with the remaining cheese and serve immediately.
 
I did pretty good this week. I did have to get KFC for dinner last night because I got home so late :sad2:.

Ok last night I also veered. Off the plan, but it turned out great. With all the bread I have been making I had a little left over, so I made stuffing. And stuffed chicken thighs. It was pretty good and I was pleased with my cheap reuse of leftovers, rice from 2 nights ago got turned into fried rice to go along with it.

Tonite will definitely be peril. Low and slow in the oven.
 
We put the kibash on eating out a long time ago and now it's a treat again!! That is a good feeling. We also quit buying soda and other luxuries around the house such as cookies. I have my girls, who are 19 and 12 make cookies and cakes. It gets them in the kitchen, teaches them how to bake and cook and makes for family time (they are both well versed in the kitchen, so it's good practice).

I also have been using homemade laundry detergent which cut the cost of a load with Tide from 20cents a load to less than a penny and it only takes me 20 minutes to make and I double the batch. That lasts about two months and we do roughly 12 loads a weekend.

We also switched to all-natural household cleaners such as water and vinegar for general cleaning, homemade dusting spray and use baking soda and vinegar to clean the toilets, tubs and sinks.
 
Last night was a lot of fun. My Grandma loved that we did chinese for her birthday and since we split the check between all of us it was not that expensive.

Tonight I was going to do crock pot french dip but did not wake up in time to get it in the crock pot. So I will do that tomorrow and tonight I am not sure yet but I have to run to Walmart to get a few items so I might get one of their pizzas to make.
 
I ended up with stir fry Wednesday, crock pot pot sweet and tangy pot roast (a new recipe, it was pretty good) on Thursday and I'm making Sloppy Joes tonight. I've eaten out a lot of fast food lunches though, I need to stop that!:rolleyes:
 
Last night ended up being a mishmash of leftovers. We're getting new counter tops in two of the baths and they were here doing the installation from 5:30 till almost 10:00. Hubby ended up eating the last of the white beans with rice and I'm afraid I had chocolate cake for dinner :rolleyes:

Tonight is the Mexican lasagna that was planned for earlier in the week. Good thing that DD is coming home because I ended up with a huge pan full of it. We'll have a salad and I made black beans with Rotel, cilantro, cumin, onions, garlic and olive oil for a side.

I still haven't done the shopping so I have no idea what we're having after tonight!

We have been a bit off track this week since we had company and DH's funky work schedule but I am going shopping for groceries this weekend and have my meals planned out.

Vegetable night - 4 veggies, flavored rice and Biscuits
Beef stew with rice
Chili
BLTs and Baked Potatoes
Baked Ziti with Salad
Something on the grill - either shrimp skewers or steaks (depends on what is on sale and looks good at the Commissary)

I still need one more so I am going to surf back through this thread for inspiration.
 
My life is crazy right now. We have my mil going through surgery today so we are waiting but I think we did ok this week

Monday was blts
Tuesday was grilled cheese and soup
Wednesday was American chop souy
Thursday we slipped pizza out but only 17$ for everyone 5 people
Friday chicken with rice

night before last I made chicken tortilla soup, and last night to celebrate my husband's new job promotion, we went out and had pizza & salads! Very yummy, and we have leftovers, which is always great!
 
Thanks for this post because we have not gone out for dinner at all this month! I know we still have a few days to go, but we will make it.

Being bad tonight...

I feel like crud... sore throat, exhausted, achy, and just yucky. Mom has a late night at work due to it being month end. So, we are grabbing a pizza. I hate the idea, but I really hate the thought of cooking tonight the way I feel. This way I can take a little nap instead.
 
Last night we ended up doing breakfast for dinner as my mom was not up to pizza. We had ham, eggs, hasbrowns and toast.

Tonight we are having crock pot french dip sandwiches with oven crinkle fries and carrot sticks.

Sat - not sure yet maybe flounder for 3 of us and a grilled chicken for one
