Tonight we are doing leftovers. We did have the ham with mac and cheese and spinach salad last night. I am thinking chicken stirfry tomorrow night as we have all the stuff in house and I am craving chinese food.
 
just made my two week menu starting Monday..

mon - Chicken cutlets w/rice & veggies
tues - Chicken nuggets w/vodka sauce
wed. tator tot casserole
thur - crockpot (more chicken)
fri - anything goes..
sat. - ?
sun - fishsticks w/pasta

mon - sloppy joe's and fries
tues - tuna melts
wed. meatsauce w/pasta and garlic bread
thur - Costo barbequed chicken
fri - Salmon and baked potato and creamed spinch
sat/?
sun/?
 
We had the planned shrimp creole last night. Tonight was supposed to be red beans and rice but we have a ton of leftovers so I'm switching the plans. We're going to graze from the fridge.

The red beans will be tomorrow if hubby is home.

We had a new recipe last night - Curried Tofu Wraps. It was delicious! Definitely on the "make again" list.

Tonight I made a vegan version of poutine: sweet potato oven fries, topped with a wonderful mushroom-onion gravy, and sprinkled with some Daiya (vegan cheese). Served with steamed broccoli and salad. Very satisfying in this really cold weather we've been having!

Tomorrow will probably be chili. I found a vegan chili recipe that uses brussels sprouts and I happen to have some brussels sprouts in the fridge, so I think that's the plan...

I went shopping today and got a whole bunch of stuff for free! When you bought the pot roast which was a 4 pounder, you got potatoes, celery, and carrots for free. I cut the roast up and now I have enough for three different meals. I also got free orange juice when I bought 5 Quaker cereal items at $2/each. I ended up spending about $85 and saving $35 in coupons.


You must have shopped at Jewel-Osco! That was in our ad, also.

I'm scrapping the planned red beans altogether. It's going to be freezing out so we're having chili over baked potatoes, cornbread and canteloupe.

Biscuits
Some sort of fruit salad-whatever looks good at the fruit stand.

Pasta with shrimp (probably tomatoes, basil, garlic and olive oil))
Green salad
Garlic bread

Thursday 1/27
Mexican lasagna made with b/s chicken breasts
Homemade refried beans
Fruit salad

Friday 1/28
TBD-leftovers if hubby is out.

Tonight we are having orange chicken stir fry. It is so much cheaper and healthier to make it home than it is to order it out.

Last night my mom had the stir fry because my BFF took me out for an early birthday dinner since he will be out of town for it next month. I am going to have some leftovers for lunch though.

Tonight my cousin (12) is coming over to spend the night as his parents are going to a wedding. He requested vegetable beef soup and cheddar garlic biscuits for dinner so I just put the soup in the crock pot.
 
I made a few changes to last week's meal plan, but did cook dinner every night.

Here is this week's plan

Sunday - homemade chicken and noodles, green beans, rolls
Monday - Mom is making white chili
Tuesday - spaghetti and meatballs and salad
Wednesday - pork chops and sweet potatoes
Thursday - steak wraps and fruit salad
Friday - deviled chicken, noodles, steamed broccoli
Saturday - eat out night
 
So this week starts my Monday night class so every Monday night is a slow cooker meal.

Monday: Teriyaki Chicken, Salad, Rolls
Wednesday: Salmon Fillets, couscous/rice, asparagus
Friday: Pot Roast, Carrots and Onions, Potatoes
Sunday: Penne with Shrimp and Herbed Cream Sauce, Garlic Bread

Tuesday: Kids=pork fried rice and dumplings; Parents=pork stirfry;
Wednesday: Roast, carrots and mashed potatoes;
Thursday: Mahi Mahi, rice pilaf and salad;
Friday: Baked Pasta and ceasar salad;
Saturday: Sleepover=Pizza; Parents=Potato bar;
Sunday: Fish, rice pilaf and mixed veggies;
Monday: Chicken and white bean casserole in crockpot;
Tuesday: Grilled Rosemary-balsamic chicken, rice and salad;
Wednesday: Pork roast, mashed potatoes and green beans;
Thursday: Skillet chicken and rice with peas;
Friday: Pizza
Saturday: Probably eat out to end the month and celebrate pay day!

We made it through the week with only changing the days around some. Tonight DH and I will have left over roast with mashed potatoes while the girls have pizza. I did go buy steak and mushrooms to grill tomorrow night, so my menu will be switched around a bit next week, but eating in. Good luck everyone with next week!
 
I did pretty good this week. I did have to get KFC for dinner last night because I got home so late :sad2:.

I bought 4 new Sandra Lee cookbooks so I'm sure I figure something out for the rest of the week.
 
We are having leftovers again as my mom is at drawing class until 7pm and I have some friends coming over to hang out. We have a ton of soup left plus a pan of chicken enchiladas since I made a double batch last time.
 
I stayed true to not eating out on my part. Grandma had other ideas and treated the boys to pizza on Thursday. I am trying to get into a rhythm and have some days the same every week such as crockpot meals on Mondays. Thats my goal for February. This weeks menu isn't the greatest but its end of the month eat out of the pantry time!

1/23 Brats/potato pancakes
1/24 Spaghetti w/ Chicken Sausage
1/25 Tacos
1/26 Fish Sticks
1/27 Beef Stew
1/28 Hamburger Helper
1/29 Penne with Meat Sauce
 
We were busy watching the Packers game so I made crazymac bowtie homemade mac and cheese. (with hamburger) A mouthfull to say and eat lol!
