OK- here we go:

Sunday- Olive Garden zuppa toscana soup(I am making it) and little smokies wrapped in cescent rolls
Monday- probably leftovers from night before
Tuesday- Dh and DD will get fast food between school and dance, I will make something when I get home
Wednesday- chili and cornbread
Thursday- chicken tenders, mashed potatoes, and a veggie
Friday- going to visit my sister and family for the weekend and let her deal with the menu- LOL
 
Today we cleaned out the fridge so we are having leftover night. We have some leftover spaghetti so I took that and made a spaghetti and veggie fritata.

Tomorrow- Chicken and dumplings
Tuesday- Lemon chicken cutlets with rice and a veggie
Wednesday- Breakfast for dinner, french toast, sausage and fruit
Thursday- Pork chops with apples, mashed potatoes, and glazed carrots
Friday- Homemade macaroni and chees
Saturday- Meaty macaroni with sauteed zuchinni and yellow squash
Sunday- Superbowl party at Grandma's

I just bought a bag of lentils and was looking for a recipe to try out. I don't have beef soup base. Do you think I could substitute beef bouillon for the soup base?
Yes you can. If you are using the cubes you might have to add 3 or so. I use this powdered bullion too sometimes. So taste test it at 3 bullion cubes and add more to taste.

I don't use green pepper in mine or DS wouldn't eat it, and I use a jarred sauce instead of making it because it is much easier. The cottage cheese can be subbed with Ricotta, but I generally stick to the cottage cheese because I can fidn it cheaper.:)
There are several varaitions.. but that recipe is the basic idea. It is really easy and everyone likes it.
 
We went out for lunch to our favorite burger place with DD today. STILL haven't made it to the store. Leftovers tonight. I think I'm losing steam :guilty:

I ate out every night last week (fast food :scared1: ) What a horrible thing to do to my budget and my health! It's just I get home from student teaching, have a short time before DS has to go to karate, and I have to write my major project (what our program has instead of a thesis) at night! I am too busy to cook during the week.

So I planned out 5 meals and cooked them all today! It took 3.5 hours.

We're having:

Turkey, mashed potatoes, gravy, stuffing, green bean casserole (I used turkey drumsticks and thighs).

Lasagna (there was extra sauce for the kids to use as spagetti sauce as well)

Parmesan-mushroom-wine chicken and spiral noodles

Tostadas (made the refried beans and shredded the cheese today)

Kung Pao shrimp and fried rice

I'm pooped now. Glad DBF just called and said he wants to go out to dinner, lol. :)

Wow good for you. The whole cooking for the week thing is such a good idea but it really does take a lot of effort on the weekend. Your week will be so much easier though! :woohoo:

I'm doing pretty well with my eating at home. Lunches at work seem still to be the hardest habit to break. Last night I made a cheesy bacon skillet chicken with rice and brocolli. Tonight I'm making taco bake. For the next few nights I have planned

pasta with meatsauce and salad
beef strogonoff in the crock pot with egg noodles and broccolli
chicken stir fry with broccolli and noodles
chili
hot dogs
 
Ok Last week went well- with a few substitutions but no eating out.

Fake take out night
Dumlings (I have frozen from Trader Joe's)
Homemade Beef and Brocolli

Roasted potatoes- or maybe baked
stuffing

Wednesday
Spaghetti with Turkey Meatballs

Thursday
Chicken Enchilladas with leftover chicken from Tuesday
Spanish Rice

Friday
Either Turkey meatball subs or Baked Ziti with leftovers from Wednesday
Garlic bread
Salad

Saturday
Chicken Cutlets
Roasted potatoes

A lot of what I have read is that many of you go out to eat because you don't feel like cooking when you get home... my husband and I are the same way and have found that if we plan ahead and make some big meals on a Sunday, that we can almost not really have to cook during the week... for example, you can make a pot of stew or something along those lines on Sunday which you can heat up and eat on say Monday and Wednesday, you can also make a roast or big chicken or small turkey (or turkey breast) on Sunday... eat 1/2 of it Sunday, then the other half on like Thursday. On Tuesday make something simple like spaghetti or mac and cheese. Friday you can eat up any leftovers you have from the week or that will be the one day you may have to take and make something totally from scratch and take up some actual time. Something that actually takes very little time that most people never think of (and it takes very little effort)... throw some chicken breasts on the grill! (or steak) It's pretty quick and you can nuke a baked potato in no time.

Anyway, my husband and I rarely go out to eat, and there's just the 2 of us... so we only spend about $250 a MONTH on food.

(yes, we bring lunch to work every day and eat breakfast at home)

This weeks meals will be:

Tonight is Country Style Ribs in the Slow Cooker and Cole Slaw.

Wednesday is Italian Sausage, pepper, and onion fake bake with garlic bread.

Friday is Roasted Chicken, cornbread dressing, and corn.

Sunday is Superbowl munchies! Coconut Shrimp with dipping sauce, chicken wings, pan fried onion dip and chips, cheese and crackers, and something sweet (no idea what though).

Monday is whatever I decide I want while I am at the store as I only have to cook for myself.
 
I have to admit that we went out for dinner tonight. We were shopping and my mom decided she wanted to eat out. So this week's menu is going to be reworked.
 
new to this thread and late for this week but...

tonight we had cold sandwiches - turkey, lettuce, tomato, red onion, mustard on rye with cottage cheese, pickles, olives and quakes on the side

Tuesday = Baked ham, au gratin potatoes and brocolli
I will use leftover ham for sandwiches for lunch all week

Wed. = cheese tortellini w/ marinara, garlic bread and salad

thurs = bean burritos - i cover them with enchilada sauce and toss in the oven for 20 min.

Fri = french fried onion chicken, peas, mashed potatoes...o

Sat = hot dogs and fries

Sun = big potluck at church for lunch - then watching football so just snacks - chips/salsa, taquitos, guacamole, sour cream

Thanks. :) We actually ate at home tonight (yay!). An added bonus: doing the dishes meant just putting a few plates in the dishwasher. Often, I have to decide whether to do them or not (and I'm embarrassed to say, I sometimes get to Saturday with a mountain of dishes.) Weekend cooking may help me have a cleaner house. :goodvibes
 
We've been doing a great job eating at home too. I have to say I was at my moms Saturday and she treated for pizza and it was so nice not to have to cook.

Here's my menu plan thisweek
Mon - pasta and homemade italian sausage turkey meat balls
Tues - chicken stir fry with brown rice
Wed- mini burgers, butternut squash fries
Thur- monterey chicken, baked potato, roasted brussel sprouts
Fri- chicken enchilladas with tomatillo salsa
Sat-home made pizza and salad
Sun - niece and nephews birthday party so no cooking for me
 
Tonight we plan on having French Toast with ham and fruit. We got a good amount of snow last night so I am glad we have plenty of food in the house.

Thanks! The weekends are HARD. We've gotten in the pattern of taking DD out to eat and just can't seem to stop! Doing better now :-)

I've been watching the Weather Channel and they're all over the snow in the Midwest! We're just getting rain and cold, gonna have to cover the garden again.
