This week:

Breakfast dinner (biscuits, sausage gravy, home fries, eggs)
Hamburger stroganoff, veg
Tacos
Chili cheese dogs, fries, veg
Spaghetti
Cheese steak bake
Lentils with either ham hocks or chopped ham ~ whichever is cheaper this week (I just recently made lentils for the first time and LOVED them!) :thumbsup2
 
We have not eaten out in over 3 weeks!
This week's offerings in no particular order

Balsamic chicken and mushrooms
Pernil with plantains
Sausage and peppers
Pasta with bacon sauce
Breakfast fried rice
Mustardy chicken thighs over rice
Homemade pizza or calzones

What has helped us immensely is having homemade bread available nightly. I've been using that bread machine non stop.

Us too! I can't believe it!

Last week for us went all according to plan. Everything turned out real good and most of it was new recipes. The only thing that didn't turn out as I had hoped was the breaded chicken. All the breading came off when I cooked it. I usually do dry, wet, dry when coating it, but I followed this recipe that was just wet and dry, and it didn't stick.

I did my menu planning and shopping for the week. Here it is:

Mon- Left over chicken salad
Tues- Chicken quesadillas and homemade icecream sandwiches for dessert
Wed- Homemade pizzas and homemade pound cake w/strawberry sauce for dessert
Thurs- Crock pot potato soup, salad, and sandwiches
Fri- Spaghetti
Sat- Left over spaghetti
 
Monday 1/24
White beans with tasso
Brown rice
Mustard greens
Corn bread

Tuesday 1/25
Beef stew (l/o roast with carrots, celery, potatoes and peas)
Biscuits
Some sort of fruit salad-whatever looks good at the fruit stand.



I'm switching today and Tuesday. We had gumbo last night with andouille in it and that's too many sausage nights in a row :)

I'm excited about my menu for this week. I like the variety of flavors and meats and three of the recipes are brand new. It also contains one of my favorite family recipes with the Pot Roast. If I could only have one meal for the rest of my life it would be this Pot Roast. It is SOOOOO good and I always eat way too much of it.

1/24 Teriyaki Chicken (crockpot), Salad, Rolls
1/26 Salmon Filets, Couscous/Rice, Asparagus
1/28 Pot Roast, Carrots and Onions, Potatoes
1/30 Penne with Shrimp and Herbed Cream Sauce, Garlic Bread
1/31 Tangy BBQ Ribs (crockpot), Cole Slaw
 
we are doing so well...I am amazed at how easy this has been for us. Yesterday dd had a tournament in a neighboring town and it would have been so easy to stop somewhere on the way home, but I had chili in the crokpot!! and I took a case of water and plenty of snacks for the day!!
Tonight it's leftover chili!
 
I've been doing great during the week but weekends are still hard. Here is my week.

Monday - Black bean burgers, frozen french fries
Tuesday - chicken nachos with guacomole
Wednesday - broiled steak, potatoes, broccoli
Thursday - Teriyaki chicken over brown rice
Friday - Left overs (scout meeting doesn't leave us much time)
Saturday - Ground turkey spaghetti, green beans, garlic bread
Sunday - Crockpot roasted whole chicken, mashed potatoes, veg
 
Tonight I am taking some leftover ham and making cheesy ham and hashbrown casserole. We will have roasted brussel sprouts with it. I finally learned that I liked brussel sprouts so I am excited.

Tomorrow I am thinking spaghetti with meatballs. We have the meatballs already frozen in the freezer plus spaghetti and sauce in the cupboard. An easy pantry meal.

Wednesday is my Grandma's 91st birthday so the family is taking her out for dinner to her favorite chinese restuarant.

Thursday I am thinking crock pot french dip sandwiches with crinkle cut fries and salad.

I am not sure about the rest of the week yet. Waiting until I get the sales ads tomorrow.

We only went out to eat once last week and that was with a GC from Christmas. We only had to leave tip plus $.34, so our total was $4.34 :cool1: And we didn't go out to eat over the weekend at all :banana:

Here's our menu for this week:

Sunday: we had roasted boneless turkey breast, baked potatoes, glazed carrots

Monday: I used the leftover turkey breast and made Turkey/turkey bacon and cheddar sandwiches on Chiabatta buns with pasta salad

Tuesday: Biscuit topped chicken potpie

Wednesday: Beef tips and egg noodles

Thursday: Dance night for DD so we'll grab something out (this is also payday so we usually treat ourselves out)

Friday: Unplanned at this point but maybe homemade pizza

Saturday: Date night with the hubs :lovestruc DD is going to SIL's for the night and I told DH to plan the date night so I have no idea what he has in mind
 
We had last week's pot roast repurposed into a beef stew kind of mess (with added onions, celery, carrots, potatoes and peas) and served over egg noodles. Hubby loved it, me not so much. There was quite a bit left. He's taking a big portion to work, I'll have the rest for lunch. I guess getting three meals out of that roast was a good thing for the budget but I'm looking forward to beans and rice again!

So far so good with not eating out. We've only been once and that was a planned thing to treat our daughter for her birthday. I came this close to stopping at Popeye's for lunch yesterday ;)

Had to share this recipe. It was last nights dinner- replaced from the balsamic vinegar chicken I was planning. This was DELICIOUS and cheap!! I didn't make the creole stuff at the end since I had creole seasoning in the pantry- I just used that. And it was yummy. All 6 of us loved it.
It does take an HOUR to cook though so you have to plan to make this- It's not stand over it hour- it's 30 minutes one side flip 30 minutes on the next side. It takes about 10 minutes to get to that point. So active cooking time is only about 10 minutes.
Braised Chicken Thighs (Emeril Recipe)

ngredients
1 tablespoon olive oil
6 chicken thighs
1 tablespoon Essence, recipe follows
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
16 ounces button mushrooms, thinly sliced
1 cup sliced yellow onion
1 tablespoon minced garlic
2 tablespoons all-purpose flour
2 tablespoons tomato paste
2 cups dark chicken stock
2 tablespoons coarsely chopped fresh rosemary leaves
4 cups steamed white rice
2 tablespoons chopped fresh parsley leaves
Directions
Set a 10-inch, straight-sided saute pan over medium-high heat and add the oil. Season the chicken thighs with the Essence, salt and pepper. Place the chicken, skin side down in the pan and sear until golden brown, about 3 to 4 minutes. Turn the chicken over and sear on the second side for another 3 to 4 minutes. Remove the chicken from the pan and add the butter and mushrooms. Saute the mushrooms, stirring occasionally, until browned and most of the liquid has evaporated, about 4 to 5 minutes. Add the onions and garlic to the pan and saute for 3 to 4 minutes. Sprinkle the flour into the pan and cook, stirring often to make a light brown roux, about 4 to 5 minutes. Add the tomato paste, stock and rosemary to the pan, bring to a boil and reduce to a simmer. Return the chicken to the pan, skin side down and cook the chicken for 30 minutes. Turn the chicken over and cook until the meat is very tender, about 30 minutes. Serve the chicken over rice and garnish with the chopped parsley.

Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
 
I ran to Aldi's this morning and got a few items we need to tide us over until next month. Milk, bread, fresh fruit and veggies. Spent around $20.

Tonight we are having spaghetti with meatballs and garlic bread. I am going to add zucchini and yellow squash to the sauce and meatballs to add in some more veggies.

Yum! It's spaghetti tonight at our house too! I'm going to throw some chickpeas and carrots into the jarred sauce, and call it a meal.

Eating out is still a huge temptation for us, but we're resisting more often. Keeping organized makes a huge difference. I don't like planning meals more than a couple of days ahead, but I do make sure that I have several easy meal ideas in the freezer each week. I also try to plan more involved meals for the days that I'm home earlier, and save the quick stuff for the days that I work later (hence the spaghetti tonight!)

Not sure what I'm making tonight, maybe something with chicken or salmon?

Change of plans-again! DD is coming home for the weekend and pasta is her favorite so I'm moving tonight's dinner to Friday. We have to go out to Lowes this evening so we'll have leftovers tonight.


We had white beans/rice with cornbread and salads last night. Got fed up with working on our bathroom remodel yesterday afternoon so I took a break and baked a chocolate cake instead. We had that too :)

I'm just barely chugging along this week. I didn't make a plan for the week which was a big mistake! Luckily I do have a fully stocked freezer and pantry. Sunday I had a family birthday party for my DD which was for about 30 people. I did a soup party. I made fresh bread and had crock pots full of 4 different soups and chili. Everyone loved the idea. I had lots of soup left so we've been eating that. Monday night it was soup leftovers. Last night I made hot dogs (topped with leftover chili), frozen french fries and a salad. Tonight I took out chicken breast to make stir fry and I took out a roast to make a pot roast in the crock pot tomorrow. Friday is a busy night so I'm going to have to come up with something easy. Maybe there will be enough leftover potroast to have it a second night!:confused3
