Sunday - stir fry chicken (new recipe I'm trying)
Monday - turkey shepherd's pie
Tuesday - BBQ drumsticks, rice, mixed veggies
Wednesday - Pizza, candied carrots
Thursday - Turkey Meatloaf, couscous, green & yellow beans/carrots
Friday - Chicken Parmigiana, garlic bread, salad
Saturday - breakfast for dinner! Apple pancakes (new recipe I'm trying), turkey bacon & smoothies

Now I'd better get going on the cooking for tonight. I've been sick so the kitchen is a disaster and I still don't feel up to washing up so we'll see how it goes. :rolleyes:
 

We are having a Pot Roast in the crock pot with potatoes & carrots. I'm going to make gravy and biscuits as well.

did good today.....baked a cake, oatmeal cookies, got the crockpot ready for the roast ------- I can do it!
 
I switched out having spaghetti with meatballs to meatball subs tonight because neither of us were in the mood for pasta but I made the meatballs last night and we both wanted those. Tomorrow should still be chicken enchiladas.
 
I was supposed to plan menus for the week today but ended up doing my granddaughter's birthday party. We had wraps with seitan "chicken," some leftover chili, salsa, grilled red and yellow peppers, grilled onions, and salad greens to wrap up in the tortillas (whole wheat). Homemade vegan chocolate cupcakes with frosting for dessert (hey, it was a birthday party!).

Tomorrow will probably be leftover bean chili (from Saturday) with baked sweet potatoes - I'm working at the university all day and have a meeting in the evening.

My son did most of the cooking last week - he has been off work and loves to cook. He got a new vegan cookbook for Christmas (Appetite for Reduction) and has been trying out some great recipes. Some good ones:

Pad Thai Salad (the flavours of pad thai in a salad!)

Spaghetti squash with a primavera sauce. We hadn't tried spaghetti squash as a substitute for pasta before and it was very good.

Broccoli, Garlic, Chickpea bake - Great flavour (if you like garlic, of course - and I love garlic)

There were more good ones, but that gives you an idea.

If we get a menu planned I will post it. We rarely eat out, but don't always plan ahead. I think because we don't eat meat it's a little easier - I don't have to thaw things. We tend to create our meals based on what vegetables we have that we want to use up before they go bad. That's why I made chili on Saturday - we had some red and yellow peppers and onions that were getting a little soft, and I had half a can of crushed tomatoes that was in the fridge, so that became the basis of my chili. So the vegetables tend to be the focus.

Italian green beans. You know...they're flat. :laughing: Not sure how else to describe them.

I haven't been posting lately but we're doing really well, and this from a former eat-out-5+-nights-a-week person! All I can say is, thank heaven for my crockpot!!

This week:
  • Black Bean and Corn Soup
  • Cheesy Veggie Soup
  • Beef Lombardi
  • Slow Cooker Texas Pulled Pork
  • Sketti & Meatballs
 
So we're getting back on track and eating healthy for 2011! We did really good last week and ate at home for 5 nights. Here is our menu this week:

Sun - ate at SIL's for Christmas with FIL (other SIL was in from out of town). We had chicken chunks, cheese fries and spinach and artichoke dip. Unhealthy and delicious :rotfl:

Mon - Crockpot chicken noodle soup, whole wheat rolls

Tues - Crockpot beef roast, baked potatoes, green beans

Weds - Breakfast for dinner. Scrambled eggs and turkey bacon

Thurs - Leftover soup

Fri - Our nephews will be spending the night so we'll be ordering pizza

Sat - Unsure. Thinking maybe supper nachos since DSS's will be with us and they like these.

My hubby and I both lost around 5lbs this week with our new eating habits :banana:, so excited to see what this week brings us!

Oooohhh! I would love your recipe. I have a couple cans of beans in the pantry and this sounds delicious.
 
Here is the week

Sunday (our neighbor game us some Omaha steak -oh my this was so good)
Monday Lasagna my mother made a huge batch for my sister that had a baby and forgot that my sister hubby hates lasagna :rotfl2:
Tuesday Spare ribs, spinach and roasted potatos
Wednesday Soup and sandwich night
Thursday Crustless spinach quiche and make some bacon/sausage on the side
Friday Mexican Lasagna
Saturday Homemade pizza
 
10 days in to this - ya know, it really isn't that bad. I think the key is having a plan.


tonight we'll enjoy crock pot roast, carrots and potatoes - yum!
