Eat at Home 3!

Our menu is short this week, we leave on vacation on Friday. I have four days to cook all our fresh stuff. I also pulled chicken broth (I hope haha) and tomatoes from the freezer.

Tonight will be chicken pot pie.

We will have a spaghetti night but on rice.

That will leave a lot of lettuce, peppers, cucumbers, eggs, fruit, cheese, zucchini, beets, cabbage, brocolli and green beans to use up. So maybe two nights of veggie plates.
 
Normally we blow it on the weekends and go out to eat way too much. This weekend, we ate out only twice for breakfast. Every other meal, I cooked or heated left overs. It is a proud day!

Friday-taco nachos (taco meat on top of tortilla chips, melted cheese, tomatoes, and lettuce)
Saturday-Ribs, corn, broccoli, fries
Sunday-Fried chicken fingers, yellow rice, corn, baby lima beans
Monday-poppyseed chicken, corn
Tuesday-hamburger meat something. I have no idea what yet.
Wednesday-bbq pan fried pork chops, fries, corn, broccoli
Thursday-roast beef in the crock pot (roast beef, 1 packet onion soup mix, 1 can cream of chicken soup), rice, green beans, corn
Friday-hamburger steak and salad
 
Well the week is already underway but I'll put up my menu anyway. It helps to keep me on track.

Sunday ... Penne a la vodka
Monday ...BBQ chicken with sundried tomato pesto, asparagus with lemon, garden salads, baked potaoes
Tuesday... Seasoned ground beef, cheese, veggies, sour cream in whole wheat wraps
Wednesday...Breakfast for dinner - eggs, fruit smoothies, toast, Canadian bacon
Thursday...Chili and salad
Friday...Homemade pizzas
Saturday...? Likely bbq'ing something
 
It has been too long since I was here. I recently got a promotion at work and have been mega busy. That also means eating at home has been hard. But I am vowing to get better. I am no longer going to assign days to my meals but just make a list for the week and cross off as I go.

The rest of this week will be

Steaks with rice pilaf and Brussel sprouts
Chicken paprika with spätzle and salad
 

Just made my grocery list for the week and will go shopping tomorrow morning. We'll go out to dinner after church tomorrow night as usual but here is the rest of the week's meals:

Sun: BBQ pork sandwiches with leftover coleslaw and potato salad
Mon: pepper jack avocado chicken w/ Mexican rice (thanks for the idea Westcoastflgirl!)
Tues: spiced meatballs with spinach and couscous
Wed: grilled chicken w/tzatziki and Greek salad and pita chips
Thur: crab and tuna cakes with melon
Fri: steak nachos (it's DS's b-day and he requested this for dinner, then he gets to pick where we eat out Sat)

Definitely want to try toe skillet spaghetti lasagna. I've never made anything with marinara and alfredo sauce.
 
Well...the hubs is going back to eating low carb through the week...and this time, I'm going to do it with him. (At least for a couple of weeks.)

I started today and he's starting tomorrow.

Tonight I had a taco salad, DS had mac and cheese because DH spoils him :rolleyes: and DD and DH had beef soft tacos

On the agenda for this week:

Mon-veggie and cheese omelets (Meatless Monday)
Tues-Spaghetti squash pasta bolognese
Wed-Rotisserie chicken, broccoli cheddar soup
Thurs-Ham and 2x baked potatoes (the filling stuff is not too bad for carbs)
Fri-thin crust frozen pizza (carb night)
Sat-butter chicken, rice, naan, peas (carb night)
Sun-BBQ chicken

I haven't sorted all the side dishes out yet but it will be mostly veggies...broccoli, green beans, mushrooms, onions, peppers, salads, cuke, celery, tomatoes...stuff like that.

Wish me luck, man...I HATE this diet but need to jump start my stalled weight loss.
 
Tonight we ended up doing a leftover night. I was too tired to really cook anything but at least we ate at home.

Monday- chili from the crock pot, Caesar salad (we had chili, salad)
Tuesday- I'm thinking still chili, salad, cheese toast (we had leftover Indian from Sunday's dinner as hosts wanted the leftovers gone- yum!)
Wednesday- white fish, rice, frozen veg of some sort (we had chili, fries, salad)
Thursday- found a turkey carcass in the deep freeze- so thinking turkey soup to use it up - suppose to get hot later this week but oh well! (Sausages, pork and beans, cut veggies)
Friday- BBQ'd pork chops or pulled pork, quinoa, broc (pulled pork sandwiches, corn on the cob)
Saturday- DD11 has a soccer tournament- grilled cheese, tomato soup, cut veggies (we had tomato soup and grilled cheese for lunch- found a frozen pizza in the oven- after being at DDs soccer tournament all day, pizza and salad it was)
Sunday- DD11 still has soccer tournament- I'm thinking breakfast for dinner as I usually make "cooked" breakfasts on the weekends and prob won't have time with all the soccer (inlaws took us out for Chinese after soccer)

Monday: stuffed pasta (I think we have tortellini) with Italian sausage meat sauce, ceasar salad. (we had pasta with the Italian sausage meat sauce, salad and garlic bread)
Tuesday: Pork chops, corn on the cob, garden salad (we had pork chops, corn, salad)
Wednesday: white fish, rice, some sort of veg (beef stirfry as wanted to use up some veggies)
Thursday: DD's birthday- dinner at the farm- meal will be Costco chicken pot pie at DD's request (MIL did the pot pies and salad)
Friday: thinking BBQ chicken, homemade potato wedges, greek salad (DD visiting bio on- DH and I had leftovers, popcorn etc)
Saturday: DD visiting bio-mom- thinking appies and such (DH and I has yummy Mexican mango dip with taco chips and taquitos and salsa/sour cream)
Sunday: leftovers probably ( taco salads- yum!)

Decided that with ribeyes so cheap ($5.99/lb - have not seen that price here in years, and have not made this steak in about 4-5 years), I was gonna treat myself for the holiday weekend, vs going out to a steak place...so...
Sat - Grilled Ribeye Steaks with a Red Wine Sauce and Carmelized Onions, Mashed Potatoes (I'd usually bake them, but I don't want the oven on), Cilantro Cream Dressed Salad of Romaine, Cabbage, Carrots, etc (prebagged mix), Strawberries
Sun - Ribeye Steak, Green Pepper, and Onion Fajitas, Grilled Corn, Peaches and Blueberries
Mon - Pool Potluck with Hamburgers and Hot Dogs - Gonna bring desserts (probably a lemon bundt cake and vanilla dipped strawberries)
Tues - Potato-Corn Chowder (using any leftover mashed potatoes, carmelized onions, or corn on the cob - any steak will also be added to the end) with BLTs and Strawberries/Blueberries
Wed - BBQ Pork Sandwiches, Leftover Soup, Apple Slices, Banana Muffins
Thurs - Thai Peanut Baked Chicken, Green Salad, Bananas in Coconut Milk (or leftover Banana Muffins)
Fri - $5 deal or Frozen Pizza or Leftover Proteins, Fruit Smoothies

I had a Trader Joe's Thai satay peanut sauce that wasn't "right" or good as is (it wasn't nutty or satay enough - figured this out the 1st time I used it - I had to fix it on the fly that time:)) - so I now use a mixture of 1/2 of that sauce with 1/4 peanut butter and 1/4 sunflower seed butter (both softened together in the microwave) with a little extra salt, pepper, hot sauce (you can use siracha or stick with Tabasco), and honey (to taste).

I prebake the chicken pieces (bone in - you can do skin on or off) at 400 degrees for 30 minutes and then brush on the sauce all over and finish it at 350 for 10 minutes...you can also save some of the sauce before basting and warm it up to dip with afterwards...

You can also do this with boneless, skinless chicken breast - just adjust the cooking time down (I usually slice them to tender size and cook for 15-20 minutes at 400, add the sauce, and finish for 5-10 minutes at the lower temp)...

It tastes almost like chicken satay takeout when done (and I really like the sunflower seed butter to add the extra depth of nuttiness - if you don't have it, skip it - I tried it when I had 1/2 a jar to get rid of and it worked so well I stick with it:))...

And when I say 1/2 and 1/2, you adjust for how much chicken you're cooking - so if I use 1/2 cup satay sauce, I use 1/4 cup PB and 1/4 cup sunflower seed butter...and then the other ingredients are all to taste (and can be left out - it's just adjusting for salty/spicy/sweet, and if you like it extra sour, add some lime or rice wine vinegar - Thai is all about the balance of those 4 components:)...

And this is my version of a "Sandra Lee semi-homemade recipe" for those who used to watch her show (loved her concept, although not always her recipes or her show.)

We have been so busy lately, it has been really hard to stick to a menu, let alone eating at home! I'm really trying to stick with it, but it never fails, something gets in the way! o_O

Here's what we've got so far this week:
Sunday- Kiddos friends spent the night so we did a take and bake pizza for them and we ordered Chinese.
Monday- I made meatloaf, mashed potatoes & mushroom gravy, veggies, and yeast rolls (Dang was dinner good!!)
Tuesday- Broccoli Cheese soup with (I've made this before and it's really good! http://thepioneerwoman.com/cooking/slow-cooker-broccoli-cheese-soup/ ) Chicken salad sandwiches
Wednesday-I've got some chili in the freezer I need to pull out
Thursday- Tacos
Friday- Pasta of some sort
Saturday- We're hosting a going away cookout... I'm guessing burgers and hot dogs. Not sure what else I'll make... hoping to get some folks to bring side dishes
 
We tried eating out Saturday night but neither of us could figure out where to go. Eating in has been working better because I just fix something.

Saturday – sandwiches, soup, chips, carrots/dip

Sunday – I have some ham to use up…will find some way to do so. Probably ham and cheese omelettes

Monday – leftovers…everything must go

Wednesday – Well, HELLO FLORIDA!


Also making a big egg bake tomorrow night so my kids can have easy breakfasts when school is out.


Each Sunday I do sit down and write out our meal plan for the week. I have slacked the last few due to baseball, work, etc. It’s been a lot of on the fly cooking. Once vacation is over I will be getting back in the swing of it full time.
 
So I'm working on my next set of meal plans and decided to go ahead and post them now. So here is the plan for the rest of this week and then the next 2 weeks.

Tonight: Leftovers or at my aunt and uncles depending on other factors.
Thursday: Easy lentil, sweet potato, and coconut curry, rice
Friday: Leftovers
Saturday: Leftovers/clean out fridge/whatever
Sunday: Eggs and hashbrowns

Monday: Homemade pizza and fruit as I have a friend coming over to hang out and do some writing brainstorming. Italian sausage, onions, and peppers (and sauce for her).

Wednesday: Picking something up or grabbing a frozen meal as I work a 10 hour day
Thursday: Asian chicken legs, broccoli and peanut fried rice
Friday: Leftovers
Saturday: Indy Pop Con! I am taking food with me to snack on and will budget $15 for a meal out (money taken from my Pop Con budget and not the food budget)
Sunday: Burgers, mac and cheese, corn on the cob

Monday: Turkey dinner: Turkey, stuffing, sweet potatoes, green bean casserole, gravy, and pie (I do this once every summer when I get a craving and I eat off of it for a week!)
