Eat at Home 3!

I have not been doing well with no eating out, especially for lunches. Been getting food way to often at work and on my way home from work. However, I just put $330 into my savings for Gen Con in August and, if I am good, I will be able to put another $300 towards it as well. Gen Con is my "vacation" this year so I want to be able to do it on my terms. So this week I am roasting a whole turkey tomorrow and making all the fixings. I will live off of that through Saturday (with eggs and toast if I get bored).

I don't have my work schedule for 2 weeks from now yet (grrrr) so I can't work on my next plan yet. Instead, I am simply looking through this thread and through some cookbooks to make a list of ideas. I am pretty much out of meat in the freezer minus some fish and hot dogs so that's no help. I can do it!!!
 
Tonight-wings for the hubs, chicken fingers for the kids, buffalo chicken wrap for me, salad for adults, veggies and dip for kiddos
Tues-turkey with all the fixings
Wed-leftovers
Thurs-I wrote down chicken breasts and noodles, but I think we'll still be working on the turkey leftovers
Fri-packed picnic in the car (out of town for the weekend to see my dad and FiL for belated Father's Day)
Sat-either at my mom's or at MiL's
Sun-soup and grilled cheese sammies
 
We just got back from vacation and we have ten months to reign it in and save towards our next trip. So that means very little eating out for a long time.

No particular order. I am still working through the freezer so some meals will be weird assortments. I am determined to get that chest freezer emptied and defrosted.

1. Grilled pork chops from freezer, something that looks like white beans, and cheesy jalapeño grits
2. Ham, applesauce, veg medley, seasoned rice of some sort
3. Breakfast, omlets, waffles, apple sauce (we make our own and have a ton frozen)
4. Bbq ham, salad, veg fried rice (or maybe the ham in the rice fried with Chinese seasonings?)
5. Mexican pizza
6. Tacos and Mexican corn
7. Mystery containers. One looks like a chili, one looks like soup beans. I will make cornbread.

Breakfast will be muffins, oatmeal and eggs (I got eggs for 49 cents a dozen and froze them scrambled). Lunch will be mystery containers from the freezer, soup, fruit, and sandwiches.

If I follow this plan I only need fruit, a bag of frozen veggies, milk, salad stuff, a block of cheese, an enchilada sauce, salsa, and corn. That isn't bad at all.

Would you tell me how you freeze scrambled eggs? Thanks!
 
June is a tough month for us - 4 birthdays, plus this June had two weddings and my son has one week of camp. Then two more weeks of camp in July (total of $665), and it's been hot, so I'm sure our electric bill is going to be sky high. So...we'll be eating super cheap for the next few weeks. Here's my menu:

Monday (yesterday) - Hot dogs, pasta salad, corn
Tuesday (today) - Kielbasa, beans, cornbread, sliced tomatoes
Wednesday - Omelets w/ spinach, ham, tomato, onion, peppers
Thursday - Spaghetti and green beans
Friday - Grilled cheese and tomato soup and tossed salad
Saturday - Pasta w/ shredded chicken breast, garlic, olive oil, arugula
Sunday- Tuna salad sandwiches, french fries, peas
 

Just home from an 8 day family and game vacation...managed to get a little sick at the end, so this week is all about easy...
Sun - Free hotel dinner (love the Drury Inn)
Mon - Pizza (we ordered in once we got in last night)
Tues - Rotisserie Chicken, Mashed Potatoes, Asian Salad Bag, Strawberries
Wed - Buffalo Chicken Breast Sandwiches, Coleslaw, Fresh Cherries
Thurs - Leftover Buffalo Chicken over 5 Cheese Ravioli w/ a blue cheese alfredo sauce (think this will work - am winging it), Roasted Asparagus, Fresh Blackberries
Fri - $5 Protein (thinking subs), Berry Salad (whatever berries/cherries are left), Baked French Fries
Sat - Leftovers or Out
 
We have been doing ok around here. Saturday I worked all day and was prepared to pick up dinner but my mom surprised me by cooking. She made stuffed pork chops with grilled vegetables, yum. She is disabled and can't stand to cook for long periods of time but did it for me.

Sunday we ended up getting take out from Famous Dave's. I had worked my 4th 10+ hour day in a row, and was exhausted. Plus we had some family over to watch the Cavs game.

Last night we had corned beef sandwiches with chips and fruit.

Tonight I will be making London broil with hash browns and grilled zucchini

Tomorrow will be chicken enchiladas with Spanish rice

Thursday will be spaghetti and meatballs with salad and garlic bread

Friday and Saturday are still up in the air.
 
This sounds great! What recipe do you use?

I don't really use a recipe. I make sauce using canned tomato sauce and seasonings and herbs. For the pasta I use whatever we have- rotini, penne, etc. Then I add the "toppings" that everyone likes on pizza- usually at least pepperoni and black olives. I mix it up, top with mozerella or mixed Italian cheese, and bake to heat through and melt the cheese.
 
I stayed on track with all our meals this week. It's been a bit different for this week and next because DH has been working swing shift filling in for someone on vacation. The first night he took leftovers, then I've been packing up the dinner I make for DS and I for him the next night.

Older DS is coming to visit for about 5 days over the holiday- and his birthday- weekend coming up, which also probably means his girlfriend joining us for some meals, younger DS leaves for weeklong Boy Scout camp up in North Carolina July 3, and my mom and stepdad come to visit for a week that same day. After they leave here they will stop by to visit older DS in Florida and have a mini beach vacation. Then a week later younger DS will fly to Texas to stay with my brother and sis-in-law for the weekend, then stay with my mom and stepdad for another week to see the rest of the family. When he gets back he has three weeks of band camp- the first two weeks are 9-5 then the third week is 4-9. Needless to say meal planning will be a little crazy for the rest of summer!

On top of that, after going through a month of interviews and such, I was offered an assistant manager position at work two days ago! It's great financially, but we still want to stick with our normal lifestyle and work on paying off our vehicles sooner and putting more money into savings. Meal planning will be a bit more challenging too because I will now be working two nights and three days a week as opposed to 5 only days, and my shifts will change. I'll be looking to y'all for some ideas!

Here's what's on the menu at our house this next week:

Sun: cheesy steak sandwiches with fruit (using rest of pot roast from last week)
Mon: seasoned turkey with dill green beans and biscuits
Tues: spaghetti bake (using leftover tomato sauce from last week)
Wed: chicken sandwiches with fruit
Thu: chicken fried steak with au gratin potatoes and apple tartlets
Fri: southwest Cobb salad with chili-lime dressing and breadsticks
 
Changing the end of the week a bit, so I figured I'd post the whole thing:)
Fri - Baked fresh salmon with lemon, butter, and dill with yesterday's leftover chicken bacon alfredo ravioli pasta and roasted asparagus, fresh cherries
Sat - Premade chicken pot pie (huge deli special), fresh blueberries
Sun - Belated Father's Day Meal - Hamburger Helper Beef Lasagna (yes, that box - hubby gets it twice a year) topped with fresh tomatoes, fresh mozzarella, and fresh basil (adding fresh stuff does make it better and less salty), Cucumber Salad
Mon - Meatloaf, Roasted Cauliflower, Come Y Bebe Fruit Salad (fresh papaya, pineapple, and bananas in orange juice and honey)
Tues - Leftover Proteins/Pastas, Iceberg Wedge Salad with Fresh Tomatoes, Croutons, and Blue Cheese Dressing, Come Y Bebe Smoothies (adding in some greek yogurt and extra OJ and honey)
Wed - Thai Peanut Chicken, Leftover Cauliflower in same sauce, Apple Cinnamon Muffins
Thurs - Chicken Fajitas, Fruit/Veg TBD
 
Tonight- Doing Creamy Cheese and Sausage Pasta (Hopefully enough for leftovers, currently 8 of us are eating)
Saturday or Sunday, depending on if there are leftovers are not, doing one pot Swedish meatballs.

More meals to come.

That sounds delicious! I think I will pick up the ingredients for this to sub in for my fruit side one day, then I can make smoothies for me to take to work. Thanks for the idea!

Saturday - onion burgers, fried green tomatoes and corn on the cob
Sunday - Italian sausages and eggplant parm/ okra
Monday - grilled tilapia, zucchini and peppers, rice
Tuesday - black bean burgers and baked red potatoes
Wednesday - pot roast with carrots and potatoes
Thursday - salmon, broccoli, rice
Friday - pizza
 
We were given about 10-15 pounds of potatoes today so there will be a lot of them this week.

- Mexican pizza and salad
- general tso, green beans, rice
- beef stew
- baked chicken, peas, mashed potatoes
- shepherds pie, green beans (maybe zucchini?)
- loaded potatoes, soup
- chicken lo mien
 
Here is my plan for the next couple of weeks. I do have one day where I am planning to grabbing something on my way home for dinner, but otherwise I plan on eating "in" the rest of the time. Due to sales this week, I was also able to get some extra meats for the freezer so that will help on the next plan as well.

Sunday: No plan- spending day with my cousin (Ended up making some sliced potatoes with cheese, bacon, and sour cream... so very healthy)

Monday: 11-5:30 Grabbing something on my way home.

Tuesday: 7-1 Chicken legs, roasted potato, vegetable

Wednesday: Vegetable Stir Fry

Thursday: 9-5 Leftovers

Friday: Pork chops, roasted potatoes, vegetables

Saturday: 8:30-5 Leftovers

Sunday: At the house

Monday: Foil fish packets

Tuesday: 7-3 Hash and eggs

Wednesday: Brats and Italian Sausage, corn on the cob

Thursday: 4:30-8:30 Leftovers

Friday: 9-5 Leftovers

Saturday: 7-3 Leftovers
 
Last Week:
Monday: steak fajitas (we had the steak fajitas with salad and black beans)
Tuesday: BBQ ribs, rice, veg tbd (DH did chicken stiryfy to use up some veggies in the fridge)
Wednesday: shake n bake chicken, corn maybe (we had taco salad as we had salad stuff to use up)
Thursday: stuffed pasta with pesto, salad (had the stuffed pasta with salad)
Friday: (DD off to visit bio-mom for weekend- DH and I tend to slack with full meals) salad and homemade turkey soup
Saturday: We went out for lunch but used a coupon so the spend was quite minimal and came away with a big box of leftovers. For Dinner we had homemade turkey soup
Sunday: Leftover Mexican from our lunch out yesterday


This Week:

Monday: we had grilled cheese and tomato soup- DH and I just weren't motivated to cook anything
Tuesday: Ribs, corn, salad (we ate at the farm with FIL)
Wednesday: spaghetti, salad
Thursday: on the road- driving across the Rockies to Edmonton so will be something part way there
Friday: Family gathering dinner
Saturday: Dinner at my sisters- I think we are going to grill
Sunday: Dinner at my sisters- no idea yet

Need to get back into fixing meals. We are spending too much money eating out for lunch and dinner.

Saturday: I had a migraine so the family ordered out.
Sunday: Hotdogs/chicken sausage, broccoli salad, pasta salad, watermelon, spinach artichoke dip and chips (made enough leftovers for kids to eat during week)
Monday: Enchiladas, chips/salsa
Tuesday: Italian Chicken, Pasta, Salad
Wednesday: BBQ Chicken, mac and cheese, corn
Thursday: Frozen Pizza, salad
Friday: Beef Stroganoff, green beans

Wed-No More School Noodle night! (DS decided we should have pasta to kick off summer vacation!) Spaghetti Bolognese (over spaghetti squash for DH)

**We have salad stuff, frozen veggies and tons of fresh produce to go on the side of these meals...I just didn't assign anything specific as of yet.
 
Tonight was pasta. The rest of the week will be breakfast for dinner two times, cheeseburgers, grilled chicken and veggies. I'm in a slump. It's too hot for anything to sound very good, but I'm going to be strong and not go out! I'm trying to conserve where I can, we had a vacation in June and another in july. No cooking on vacation, so trying to save the eating out budget for that.
