Eat at Home 3!

Figure I can finish the week and start next week:)...
Fri - Chicken Tenders, Mac and Cheese, Blueberries and Bananas
Sat - Spinach, Tomato, and Cheese Stromboli, Roasted Green Beans, Blackberries
Sun - Out for Belated Mother's Day Dinner (with no extra holiday charge!!:)
Mon - Honey Mustard Chicken Sandwiches with Lettuce and Tomato on Croissants, Roasted Zucchini, Strawberries
Tues - Indian Butter Chicken, White Rice, Berry Salad (all the last of the containers:)
Wed - Chicken Fried Rice, Cucumber Yogurt Tsatsiki Salad (I have a premade sauce and add fresh cucumber and dill), Apple Slices
Thurs - Hot Dogs with Mustard and Sauerkraut (I need to use the kraut up and my favorite uncured, nothing artificial hot dogs came back to my grocery, so this is for me:)), Asian Cabbage Salad (yes, double cabbage, so may swap this with the roasted green beans), Banana Muffins or Roasted Carrots
Fri - Spaghetti with Sardine Tomato Caper Sauce (threw this together this week with almost nothing left in my pantry and it was a huge hit of sour, spice - chili flake, sweet - red onion, garlic, fish, yum - so I'm gonna make it again, b/c I have 2 cans of sardines left that I got for almost nothing 6 months ago that sat on my shelf - now I know how to use them), Leftover Fruits/Veggies
 
I was off yesterday so I went grocery shopping in the morning, then I got invited to go out to a going away dinner for one of my old Scout mom friends, so I went to that and the guys got take out. So here's what I have lined up for the next week (in no order because it may change):

steak fajitas with guacamole
lemon chicken and pea pasta
orange pork chops with green beans and crescent rolls
Frito pie (DS requests this every so often) with watermelon
BLT French bread pizza
loaded nachos (DS also requested this because he helps make it)
breakfast for dinner- bananas foster waffles, sausage, hash browns, and berry smoothies
 
Just did my shopping yesterday for the next couple of weeks so here is the plan!

Today: Leftover fried chicken I picked up at the store yesterday because I had a bit of flexibility in my budget.
Tomorrow: Friend is having a belated Cinco de Mayo party so will be eating all the food there.
Monday: Egg Sandwiches and fried potatoes with onion
Tuesday: Asian style chicken legs (peanut sauce) with some sides I forage up
Wednesday: Leftovers
Thursday: Chicken tacos with fajita vegetables and refried beans
Friday: Leftovers
Saturday: Nachos using more leftovers

Sunday: Stroganoff
Monday: Leftovers
Tuesday: Fish with dill sauce, vegetables, and pasta
Wednesday: Tex Mex Mingas with roasted potatoes
Thursday: Asian noodles and vegetables in peanut sauce
Friday: Leftovers
Saturday: Leftovers
 
Week of 5/16. I am away for work right now and sooo ready to fly home tomorrow and get back to our routine.

Monday: Pulling out red sauce and meatballs from the freezer over whatever kind of pasta we have in the pantry.
Tuesday: A new mac and cheese recipe from the new Food Network magazine and salad
Wednesday: Workout class. Leftovers
Thursday: Chicken and cheese quesadillas, spanish rice
Friday: Homemade pizza, lemon bars for dessert
Saturday: Baked buffalo chicken, green beans, alexa waffle fries
Sunday: Leftovers
 

Menu Plan - week of May 14th

Sat- Chicken salad wraps/ sliced fruit
Sun- Fish tacos/ coleslaw/ corn on the cob
Mon- Chicken and peppers over rice
Tues - Bratwurst/ pasta salad/ grilled veggies
Wed - Leftovers
Thurs - Taco pasta, broccoli
Fri - Stuffed baked potatoes/ cucumber salad
 
Joining in for the first time!

Monday: Chicken Fajita Bake (3 boneless, skinless chicken breasts rubbed with taco seasoning and topped with 2 slices bell peppers, 1 sliced onion, 1 tbsp. olive oil, 1 cup frozen corn, 1/2 can of black beans and 1/2 cup shredded cheese, then bake at 375 for 45 minutes). I usually serve this with rice or tortillas.
Tuesday: Korean Beef Bowls (http://damndelicious.net/2013/07/07/korean-beef-bowl/) -- will serve this with frozen steamed edamame and rice.
Wednesday: Baked Macaroni and Cheese -- with steamed broccoli. This is my go-to recipe: http://thecountrycontessa.com/baked-macaroni-cheese/
Thursday: Chicken Pot Pie (frozen) with garden salad
Friday: Pizza dinner at church

We are still eating out of the freezer and pantry. As usual, leftovers go into lunch. We have tons of eggs, oatmeal, frozen fruit, and a box of two of cereal for breakfast The two week plan is...

Sunday - Fancy pasta salad and soup (done)
Monday - home made cheese and red pepper pizza made with our favorite asiago cheese. Fruit salad. (Done)
Tuesday - chickfila Cobb salads, free with our calendar cards. (Done)
Wednesday - German sausage, kraut, Brussel sprouts, and applesauce (that uses up all the kraut and Brussel sprouts)
Thursday - beef and broccoli on rice and wonton soup (done)
Friday - soft shell tacos (I will use our other calendar card to get a salad for the toppings) (Done)
Saturday - Updated - baked chicken quarters and salad. We ended up not working.
Sunday - dirty rice with beef in it, canjun pintos and peas (freezer veggies gone!)
Monday - Alfredo, with chicken for them, and shrimp for me (uses up Asiago, shrimp and pasta)
Tuesday - spaghetti on rice (canned garden tomatoes gone, out of pasta) (done)
Wednesday - orange chicken, carrots and rice, wonton soup
Thursday - home made Mexican pizza (I have a lot of premade frozen taco meat)
Friday - spiral ham, applesauce and whatever veggie is on sale at Aldi
Saturday - ham sandwiches, chips, misc fruit stuff
Sunday - hamburgers and tator tots

Did a Costco run earlier today and was able to get our meal plan for the week sorted out ... we picked up a big ole honker of their ground beef. So we'll be having that for much of the week's meals.

Tonight - Meatloaf with mashed potatoes
Monday - Beef Stew
Tuesday - Italian Shells
Wednesday - Meatloaf Balls
Thursday - Chicken Parmesan
Friday - (Wedding for us, so no planning!)
Saturday - Burgers on the Grills
Sunday - Root Beef Pulled Pork Sandwiches in the crock pot.

And the best part of all these is we have leftovers for work the following day. <3

Thursday-BBQ chicken drumsticks, baked potatoes, salad, corn? (We had leftover burgers, leftover quinoa, veggies etc)
Friday- Salmon Loaf, Rice, frozen veg (we had BBQed chicken drumsticks, salad, rice)
Saturday- (Leftovers)
Sunday- (DH had a frozen dinner as he worked, I had soup and watermelon)

This Week:

Monday: Butter chicken (chicken breasts, lots of veg), rice (we had butter chicken)
Tuesday: spaghetti, salad (we had the meat sauce with spiral pasta not spaghetti, salad)
Wednesday: I think we will try the chicken fajita bake above (had the hamburger helper and potatoes)
Thursday: Hamburger helper with veg added on mash potatoes (had the fajita bake)
Friday: chili, cornbread (stirfry)
Saturday: (In Vancouver visiting family so will eat with family there)
Sunday: (In Vancouver visiting family so will eat with family there)

I wing most stuff, but here is the pizza crust I use. I buy yeast in the big blocks, it is much cheaper. Our Asiago pizza was this dough, at maybe a quarter (we buy bread flour in hulk from SAMs), half a pound of $5 cheese, a can of 29 cent tomato paste, several shakes of Italian seasoning, and an Aldi red bell pepper that was 40 cents. So our fancy pizza was like $3.50. And the dough ball is bigger than our huge baking sheet so I can make a smaller pizza for lunch this week.

Saturday: We have family friends who will be in town. Going out to dinner with them.
Sunday: Slow cooker beef ragu over spaghetti http://www.budgetbytes.com/2016/05/sunday-slow-cooker-beef-ragu/, broccoli. The recipe says it makes a ton so I will freeze half.

Friday: Grilled pork chops with roasted veggies and potatoes
 
Last week was SUPER hectic at work, so one night I did pick up dinner on the way home, but that meal I will carry over to this week. Also, we just found out Air Force DS is coming home for a long weekend-yippee! I will start to try to include recipes or directions with my menus. Here's the plan for the next week, some things requested by DS:

Sun: BLT pizza; Basically you can use any pizza crust (I'm using store bought flat breads), any tomato sauce (I use canned and season myself), top with
bacon, tomatoes (any kind, sliced or diced), and mozzarella or mixed Italian cheeses, bake according to crust directions, then top with
shredded lettuce (any kind, I'm using leftover kale this time)
Mon: breakfast for dinner; bananas foster waffles (http://allrecipes.com/recipe/165384/bananas-foster-belgian-waffles/), sausage links, hash browns, and
lemon berry smoothies (put 1 1/2 cups milk, 1 1/2 tsp. lemonade mix, 8oz. vanilla yogurt, 1 cup fresh or frozen blueberries, and
1 cup ice cubes in a blender, cover and blend on high until smooth)
Tues: pepperoni pasta; cook any pasta you desire (I'm using leftover spaghetti noodles), drain, cook tomato sauce (I make my own but you can use jarred)
with pepperoni and black and/or green olives, serve over pasta, sprinkle with parmesan cheese
Wed: popcorn chicken wraps with watermelon; baking leftover popcorn chicken then wrapping inside leftover tortillas along with kale, tomatoes, onion,
cheddar cheese, and Ranch dressing, serving with watermelon (if there's any leftover watermelon DH or I
will take to work)
Thur: chicken fried steak with potatoes au gratin and apple tartlets (DH's dad sent us as a gift from Omaha steaks, we wanted to wait till DS was home)
Fri: ham & cheese sliders with broccoli salad; A lady at our church used to make the sliders for potlucks and the boys love them so I make them for dinner
from time to time- it's just two packages of Hawaiian rolls cut in half and toasted in the oven, then spread with
a chipotle aioli and topped with slices of deli ham and Swiss cheese and pineapple and heated in the oven to melt
the cheese. The broccoli salad I make that my family likes is a mixture of 2 cups chopped fresh broccoli, about
24 slices of pepperoni, 1/2 cup chopped celery, 2/3 cup mayo, 1/3 cup sugar, and 1/3 cup shredded cheddar. DS
requested this meal.
Sat: Going out to eat after church
Sun: Frito pie; DS requested this too. It's basically chili of your choice mixed with Fritos and topped with shredded cheese and sour cream.
Mon: Going to a cookout at a friend's before DS leaves. Not sure what I'm brining because our hostess hasn't decided yet!
 
Morning! We got back from our cruise last Sunday and I've been sick all week. The cruise was FANTASTIC though! :goodvibes Went to the commissary Friday and just got food for a week... I spent so little doing it that way! Usually I try and stock up, so I think I may try the weekly method for a while!

Sat- grilled burgers, corn on the cob, Mac salad. Apple crisp for dessert! Yum!
Sun- today headed to dads to see my grandma- were having ribs, corn, potatoes, and salad
Mon-grilled steaks, baked potatoes, green beans
Tues- brother in law graduation then out for dinner after
Wed- Cuban pork with black beans and rice
Thurs- lemon chicken and spinach orzo
Fri- probably pizza
