Saturday - sausage / potato soup with rolls

Sunday - poached eggs in tomato sauce with peppers over toast / avocado slices

Monday - leftovers

Tuesday - BBQ beef sandwiches and baked oven fries.

Wednesday - taco soup with cornbread muffins

Thursday - leftovers

Friday - pizza

Sorry it's been so long since I have contributed. Trying to get back on track with everything. Hope you are all doing well.

This week:
Sunday: BBQ beef, pasta salad, baked beans
Monday-Chicken alfredo, salad
Tuesday: Patty Melts, salad and hand cut oven baked fries, salad
Wednesday: Turkey Meatballs and spaghetti, salad
Thursday: BLT's, Blueberry and strawberry fruit parfaits, pasta salad,
Friday: out
Saturday: Chicken noodle soup, summer salad and baguettes

Since my former postings our diet has changed. We largely eat organic. We have replaced almost all breads with sprouted grain varieties and pastas are gluten free.

Well we mostly stuck to last weeks menu but did switch up the days a bit. I still find it helpful to have a menu. It makes sure I have all the ingredients in the house and a few choices when it comes time to make dinner. It doesn't really matter what day we do what.

Now for this weeks menu..

Tonight.. Crockpot beef stew and homemade bread

Monday.. Eggs and toast and fruit

Tuesday.. Spaghetti and Meatballs

Wednesday.. Chicken fingers and fries and veggies

Thursday.. Leftovers

Friday.. Homemade pizzas

Saturday.. My Birthday. Not sure if we are going out as we are saving for a March Break trip but maybe we'll get take out

Sunday.. Chicken Fried Rice and salad
 

I have been lurking for a couple of years, and I have just started budget saving for our next Disney trip in 2017! I need to jump in somewhere and this seems like the perfect thread as I LOVE to meal plan!

Sunday-Salad with Flank Steak, blue cheese, and balsamic reduction
Monday-Farmhouse Chicken Chowder
Tuesday- Garlic Salmon with a fried egg on top and Sweet potato home fries
Wednesday-Chicken Alfredo w/ broccoli
Thursday-Salsa Crock pot Chicken
Friday- Philly cheese steak stuffed peppers
Saturday-baked chicken thighs with carrot/potato mash

The recipe is really quick and easy -

Peppers and Eggs
2 peppers sliced thin (I use red and orange peppers)
1 onion sliced thin or minced
1 jar spaghetti sauce
6 eggs
toasted bread (I like to use French bread)

Sauté onions and peppers in a large skillet. Add tomato sauce. Crack eggs in sauce and cover skillet. Cook for about 10 to 15 minutes until the yolks are to your liking. Serve over toast. Quick and easy dinner! :)
 
So tonite turned out to be panini sandwiches made to order and fruit. My sons best friend is staying with us for a few days while his mom and dad are at hospital with the younger brother (some diagnostic work ups for stomach issues). But the extra sandwiches will go in school lunches tomorrow :)
Monday: finish leftover pizza/pasta from weekend (I have my women's service club meetings on Monday-usually go straight from work so Monday's usually a leftover day)
Tuesday- Crockpot roast chicken
Wednesday : likely a stew
...not sure about rest of week yet- MIL coming to stay with kids while DH and I are out of town for work. We get back Saturday and hubs leaves Sunday for mtg in Wisconsin. All this is seriously messing with my menu planning lol!
I've got to work eggs in there somewhere - with the unseasonal warm weather my chickens are still laying- over 2 dozen eggs in fridge right now (I just gave away a dozen too). Going to try the poached eggs in tomato sauce!
 
Farmhouse Chicken Chowder

1-1/4 pounds boneless chicken breast or 3 cups cooked,* shredded or cut into bite-size pieces
sea salt and fresh black pepper
flour, for dusting raw chicken
olive oil for sauteing
1 large yellow onion, diced
5 cloves garlic, minced
1 teaspoon ginger, minced (or 1/4 teaspoon ground)
1 cup carrots, thinly sliced into coins
1/2 cup celery, diced
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
2 cups parsnips, thinly sliced into coins
2 cups potatoes, cubed
2 cups sweet potatoes, cubed
1 cup corn
5 cups low-sodium chicken broth
1/3 cup fresh parsley, finely chopped
2 packed cups baby spinach, stacked and cut into thin ribbons (chiffonade)
1 pint heavy cream

I do mine in the Crock pot, 5 hours for everything but the spinach and the cream that goes in for the last hour! I makes tons, and leftovers always taste better!

Joining in here :cool1: I've been spending an ungodly amount of money lately on groceries so I'm hoping by getting back into planning our meals by the month that it will limit some trips to the grocery store!

Monday - maple and brown sugar glazed pork tenderloin, au gratin potatoes, asparagus

Tuesday - Taco Tuesday - beef tacos, Spanish rice, beans, Mexican street corn

Wednesday - BBQ shredded chicken sandwiches, potato salad

Thursday - at DS's request Hamburger Helper

Friday - Chinese take out

Saturday - chicken Alfredo, salad, French bread

Sunday - Chili and various apps for SuperBowl
 
Saturday: BBQ Pork Chops, mashed potatoes, carrots
Sunday: Free for all - kids all wanted to make their own things
Monday: Spagetti with meatsauce, garlic bread, salad
Tuesday: Chicken and Rice
Wednesday: Quesidellas, fruit salad
Thursday: Italian Beef sandwhiches, French Fries, green beans
Friday: Beef Stragonoff, fruit, leftover green beans
 
Tonight-pork chops and rice, strawberries
Tues-chicken kebabs, noodles, frozen veg
Wed-turkey dinner
Thurs-lentil soup and grilled cheese sammies, veggies and dip
Fri-leftover turkey dinner
Sat-dinner at my mom's
Sun-beef tacos and cheese quesadillas

We have been sticking to a meal plan and even started couponing well actually my 8 yr old dd has and she loves helping us save money :cool1:

This week we are having a historic blizzard :sad: so we may have to alter the food plan if we loose power

Tomorrow may be chicken or hot dogs
Wednesday hot dogs or pork loin
Thursday whatever is left
Friday back to the store after the snow

Wednesday: Take-out BBQ
Thursday: Poached eggs over salad
Friday: Dominican-style beans, brown rice, avocado, salad
 
Well life is about to settle down again. We moved back home from California and did our week in Disney to celebrate our one year.
Sunday- pork chops
Monday- gumbo
Tuesday- roast
Wednesday- chicken
Thursday- leftovers
Friday- out to eat for my moms birthday
Saturday- TBD
 
Tonight- Ham steak, Lima beans and augratin potatoes
Tomorrow- beef stroganoff and green beans
Others in my docket: taco salad with Spanish rice casserole (casserole in freezer); spaghetti and meatballs (from freezer); appetizer/leftover night (my excuse to eat a tray of Costco spanakopita); buffalo chicken dip for adults and Mac and cheese for kids, maybe with chili (probably for Super Bowl); chicken tenders over garden salad; fish tacos
 
Stay warm figment! Hope the power stays on too!

Slight change of plans this week- Monday I ended up skipping my meeting as I didn't sleep night before- so we had omelets and fruit stuffed crepes
Home with sick child today so threw together a stew for crockpot
Wednesday - supposed to be upper 60's- steak on the grill!
Thursday - will make a baked mac n cheese for my MIL (who's watching the kids while hubs and I are out of town for work)

Planning baked potato soup for weekend (probably getting some snow- gotta love going from no jacket to heavy winter coat weather in a couple days )
