Eat at Home 3!

Haven't posted here in a while but have been eating home mostly. Fri night I made beef stew, Sat was leftovers, Sunday was pizza. Monday (tonight) Chili & pizza leftovers. Tuesday is pasta with meat sauce. Wednesday & rest of the week have not gotten to yet.
 
Saturday we had pot roast. Sunday we had chicken wings with mashed potatoes, corn, and salad. Tonight we had leftovers.
 
Aaand this is why Pinterest is dangerous...
saw recipe for crockpot lasagne and had ingredients on hand except for ricotta cheese (and had to go out anyway for eye dr appointment...)-may make lasagne that way from now on!

Sure thing! Its not really a timesaver except being able to leave the house and not babysit an oven:

1 pound ground beef
1 large container ricotta cheese
1 egg
2-2.5 cups mozzarella or any combo italian cheeses-shredded
box lasagne noodles (no need for no boil noodles but they will also work)
2 jars pasta sauce (My personal fave is the Paul Newman line)

brown the beef (I tend to add 1-2 tablespoons dried italian seasoning). drain any fat and add 1 of the jars of sauce. Beat egg and mix with ricotta, add 1 cup of the shredded cheeses.
I line the crockpot with foil and spray with nonstick spray for easier cleanup. pour 1/2 of the remaining jar of sauce in bottom of pot-layer noodles, sauce mixture, and cheese mix like a regular lasagne (I break the noodles to fit the shape of pot as much as i can). Spread remaining 1/2 jar of sauce ontop of last layer of noodles and top with remaining shredded cheeses. be sure all noodles in each layer are covered with sauce. Four hours on low works great for my crockpot-tends to run on hotter side. M
My family thought this tasted like the stouffers lasagne-the noodle do tend to be a little softer than oven baked but it is sooo easy.

Saturday - Frittata (love this for leftover veggies!)
Sunday - Meatloaf, mashed potatoes, and zucchini
Monday - Leftovers
Tuesday - Fish, rice and asparagus
Wednesday - Chicken and peppers over rice
Thursday - Leftovers
Friday - Pizza
 
Here's the menu for the next few days:

Saturday: Steak sandwiches with provolone, grilled peppers and onions
Sunday: Minestrone soup
Monday: Chinese-style chicken stir-fry with cabbage, garlic, scallion and ginger
Tuesday: Fish tacos
Wednesday: whole-wheat pasta with olive oil, garlic, black pepper, parmesan and stir-fried baby broccoli
Thursday: Tuna salad sandwiches with lemon, olive oil and capers
Friday: ?? Maybe out with friends
 
Sunday-we had fresh made hotdogs from the sausage shop...YUM!

Mon-BBQ ham sandwiches--we were supposed to have these last week but they got bumped

Tues-pot roast

Wed--Nachos with beef

Thurs--ravioli with fresh italian sausage

Friday--pizza not sure if it will be take out or from the deli

Sat--won't plan until after my Wed shopping trip

The order may get moved around a little.
 
Ok back at this.. this weeks menu..

Tonight.. just the kids and I (all week actually) ..chicken fingers, cucumbers, parmesan noodles.

Tuesday...Tofu Parm

Wednesday.. Quiche and Salad

Thursday.. Pork Schnitzle , baked potato wedges , carrots.

Friday.. Homemade Pizza night

Saturday.. Baked Chicken Thighs, salad, rice, broccoli

Sunday.. Ground Chicken Chili
 
We just returned from a weekend getaway
Tonight: pork tenderloin with mashed potatoes and salad
Tuesday: crockpot chicken and gravy with egg noodles
Wednesday: red beans and rice
Thursday: chili
Friday: twice baked potatoes
Saturday: bacon ranch chicken quesadillas
Sunday: beef and broccoli
Monday: pot roast with potatoes and carrots
Tuesday: tacos
 
Sunny day, so we brought out the barbecue--- korean bbq pork, rice, korean style spinach, and kimchi.

Tomorrow's plan is nom nom paleo's cracklin chicken, and some leftovers (mashed potatoes and brussels sprouts roasted w/ bacon).
 
Yesterday-roti cheese pizza, fruit and veggies and dip
Tonight-crockpot italian chicken and veggies
Wed-italian sausages, noodles, broccoli
Thurs-fettucini and salad
Fri-chicken fingers and fries for the kids, fish and chips for the adults, not sure of veg
Sat-lasagna
Sun-leftovers
 
hubs and 2 of 3 kids went on impromptu road trip to see great grandma so still working on previous schedules menu-oldest DD and I ate leftovers (and takeout chinese)

Tonite-cheese ravioli with spinach and bacon
wednesday - crockpot continental chicken
thurs-leftover
friday- chili (kids get extra-making a pot for a cookoff)
Saturday-likely pizza as I work all weekend:)
Sunday-finish whats left of veg/meat-fill in with egg skillets a la Silver Dollar City

Have to really get serious about eating at home now-vacation time is getting closer :cool1:
 
I really need to start posting to this thread again! It always helps me keep on track. This week I'm cleaning out the fridge - we leave for Disney on Saturday!!! Yay!!!

Sunday we had a bunch of appetizers and watched the football game. We used leftover chicken to make buffalo chicken dip. I also made jalepeno poppers, little smokies in bbq sauce and onion peels dipped in ranch. Nothing healthy in that meal... but, it was fun!

Last night DH fired up the grill and made t-bones for him and the kids. I had grilled fish. Sides were spring green salad, baked potatoes, corn and broccoli.

Tonight we are having tacos - Taco Tuesday! We'll have soft and hard shells, corn, spanish rice and, either black or refried beans.

Tomorrow night we'll have my simplified version of Boeuf Bourguignon. I serve it over egg noodles. I'll also use up the spring greens and cucumbers I have in the fridge.

Thursday we'll have Stir Fry made with chicken.

Friday we are having Steak Fajitas with spanish rice and corn. Then we are going to bed early because we fly out at 5:00 am!!!
 
Monday- turkey burgers, Philly steak style
Tuesday- pasta, salad
Wednesday- soft tacos with guacamole
Thursday- chicken nuggets and tater tots
Friday- cheese and pepperoni pizza
Saturday- Grilled cheese and tomato soup
Sunday- pork chops and gravy, mashed potatoes and fresh green beans

Making homemade blondes and banana bread for snacks. Still trying to be in the mood to cook after the holidays!
