Eat at Home 3!

Spring fever hit with upper '60's and low '70's so we are ordering out for pizza tonite-everyone just wanted to hang out and enjoy the warmth:) No set plan yet for rest of week but intending to include:
roast chicken
Macaroni and cheese,
Ribs with the fixins
spaghetti
breakfast for dinner (pancakes, fruit, sausage)
?crockpot beef roast? supposed to get colder again by end of week and always makes me want comfort food

Monday: Chicken bacon ranch tacos
Tuesday: Gluten Free pizza and wings
Wednesday: Potato bacon soup
Thursday: Meatball subs
Friday: out
Saturday: Steaks
 
Monday - Sausage and peppers, homemade mac and cheese

Tuesday - Shreded chicken tacos, rice and beans

Wednesday - Salusbury steak meatballs with gravy over egg noodles

Thursday - Lemon garlic chicken, red potatoes and green beans

Friday - Cheeseburger casserole

Saturday - Homemade pizzas and salad

Sunday - soup (haven't figured out which one yet) and sandwiches
 
I was a bit under the weather last week so the plan was tossed and my family ordered take out most of the week. So, I moving forward some of last weeks plan to this week.

Saturday - grilled steaks, baked potatoes and green beans.

Sunday- Mexican chicken soup

Monday - baked chicken, sweet potatoes, zucchini

Tuesday - salmon, green beans and tomatoes

Wednesday - Swedish meatballs and sautéed cabbage

Thursday - pot roast, carrots and potatoes

Friday - cube steak with gravy, rice and peas
 

I actually have a plan!
Last night - homemade pizza
Sunday- meatloaf, roasted potatoe, cheddar rosemary scones (one of my favorite things to make) and a veggie/fruit
Monday - lasagna roll-ups and cheesy bread from scratch (I love carbs and making bread on days off - it's a weakness)
Tuesday - baked mac & cheese, shake & bake chicken fingers, veggie/fruit and pillsbury biscuits
Wednesday - pasta salad
Thursday - slow cooker chili
Friday - apple pie baked french toast

I'm trying out new veggies, I'm in a serious side dish rut, and this week it's brussel sprouts. I've never bought or cooked brussel sprouts before. ever.
So if you have any ideas of how to prepare them, I'd appreciate the input.

We are fans of Roasted Brussel sprouts. Remove any yucky outside leaves and rinse. Cut in half, toss to coat with a little olive oil; place flat side down on baking sheet and sprinkle with a little salt; cook at 375 till browned to your liking (maybe 15-20 mins).

Did a huge shop last week and now have about 1 month's menu!! Lets hope I stick to it.
For this week - every meal includes a kale or spinach salad
Mon - Left over pea soup and biscuits for hubby, refried beans for me (we don't always like the same stuff)
Tues-Spaghetti and 'meat balls'
Wed -Nachos
Thurs- Pot-stickers and brown rice
Fri- Smoked salmon pasta (so good)
Sat- spaghetti and 'meatballs'
sun - eggs and pancakes

We do them the same way. 2nd. They are very good prepared that way. Much better than steamed imo. Ps. You can also prepare that same way but pan fry them if your oven is occupied.

I so glad that went to store Friday morning and still was crowded. We have bad weather for the rest of the week. I change this year. The kids off from school. Work has already call off tomorrow too.

We're under ice so I thawed a bunch of stuff in the fridge and we'll have whatever sounds good since we're stuck inside.

Ack! I've been horrible! Feeling sick on top of working means we have eaten burgers one too many times.(at least they were home made burgers)

But this week I want to get back on track. There is a turkey defrosting so I hope to have that tomorrow and a variety of "leftovers" for the beginning of the week.
Sausage and peppers one night
Might make enchillada casserole since that was a hit last time
Mac and cheese(on cauliflower for me)
And that is all I can think of. I need inspiration!

tonight; surf and tuft - galic rosemary steaks, popcorn shrimp and oven baked fries
Sunday - italian sausage, speg. and homemade bread of some sort
Monday - chicken stirfry
Tuesday - going to my parent's for my dad's bday
Wednesday- shepard's pie (my dh hates it, but he's not home which works perfectly becuase the kiddo and I love it)
Thursday- slow cooker meatballs for meatball subs
Friday- unsure, taco salad maybe.

no ordering or eatting out dinners for two weeks so far, which I think is some sort of record. We'll see how week 3 goes. Having a plan sure helps.
 
I finally bought a new blender yesterday after not having one for a couple of years. I'm looking for some tried and true smoothie recipes if you have any.

I have been cooking, cooking, cooking! Not so great with the planning, and way too many trips to the grocery store!

Chili and cinnamon rolls

Tonight will be salads with crispy chicken

Need to dig through my very full freezer and plan future meals!
