Eat at Home 3!

Home from vacay, so going very easy this week, eating the easy type meals we missed on vacay...

Wed - Aldi's Deli Pizza - surprisingly loved by fam (and so cheap $3.75 for cheese or pepperoni, and 44oz of product - we had 2/3 of a pizza left over) with sliced strawberries - I had a vegan burger
Thurs - All beef uncured Aldi's hot dogs with mustard, relish, and pickled onion, corn on the cob, sliced watermelon and blueberries
Fri - Chinese Orange Chicken stir fry with zucchini, onion, and bell pepper, White rice, more sliced watermelon and blueberries
Sat - Dinner at my friend's house - love her!
 
So, I have a menu heavy on the ability to pre-prep and have spouse toss things in the over last minute - aka, the swim season menu...

Sun - Fresh baked salmon filet with honey mustard sauce, green leaf lettuce and tomato salad, sliced strawberries
Mon - Chicken Madras Curry with onion, carrot, bell pepper and zucchini over white rice, fresh cherries
Tues - General Tso's Aldi Baked Chicken Bites, roasted asparagus, sliced peaches
Wed - Turkey burgers with swiss, bacon, spinach, tomato, and avocado with dijonaise, roasted potato salad (celery, zucchini, green onion, bacon bits, mayo), sliced watermelon
Thurs - Scrambled eggs with western toppings, microwave bacon, double blueberry muffins, fruit salad (watermelon, berries, red grapes)
Fri - Mozzarella sticks and vegan pizza (Amy's no cheese - I really don't like fake cheese, so this works for me) with fruit smoothies and green salads
Sat - Out (spouse and 2 oldest seeing grandparents, so I'll have the 2 youngest and we'll do something fast after swimming)
 
Tonight we had unstuffed cabbage rolls or cabbage casserole over rice. Tomorrow will be hot sausages and potatoes with field peas. I also plan to make a huge frittata tomorrow because we have tons of eggs and bell pepper that need to be used. And there is half a watermelon that needs to be finished.

Thanks for the baked orzo recipe! It's rare to get a baked vegan pasta dish that doesn't rely on "fake cheeses" to come together. I love how straight forward, flavor forward, and fresh forward it is...it's going on my summer "pre-prep/quick prep" dishes...(although I am wondering if this can sit in the fridge and then be baked...hmm, might have to trial and error that for fluids)...

You are welcome! I think it probably could sit in the fridge and then be baked. I'm not vegan, but my husband is. This dish is something that can satisfy both vegans and non-vegans. I plan to bring it to the next pot luck we are invited to.
 
I have been back from Disney for a little over a week. I'll be driving back down on 7/23 to move my daughter in for the Disney college program. Since most of my dinners are essentially for her and I, I am trying to clear out a lot of the meat I have in the freezer since she won't be home for 5 months. My husband is vegan and my younger daughter is extremely picky. Their meals are usually some aspect of our meal, or often times, my daughter eats taco meat, taco sauce and soft taco shells for dinner 😫. This is what we've had since we have been home:

Thursday 7/1: we had Chinese take out so that I could grocery shop

Friday 7/2: Burrito bowl (cooked rice with some lime juice and cilantro mixed in, pinto beans, lettuce, tomato, avocado, salsa, cheese, sour cream and chicken seasoned with taco seasoning)

Saturday 7/3: Ribs, salad, macaroni salad

Breakfast and Lunch will be OYO unless I get a "cooking urge"

Monday: Quesadillas, Chips, Homemade Salsa, Queso
Tuesday: Taco Tuesday - Will brown up ground beef, and chop the "stuff" and then its build it how you want. Will use up leftover queso from Monday and homemade salsa
Wednesday: Lefovers or Soup & Sandwiches after a day at Dr Appointments
Thursday: Breakfast for Dinner
Friday: Finger Food Friday; nuggets, fries, tator tots (will use up the bits and pieces in the freezer of "potato products" so that I have space again)
Saturday: Mom's Meatloaf from Prime Time Cafe
Sunday: Leftovers & Clean out Fridge
 
Since I had to cook during covid, 3 meals a day, and then my dad passed July 2022, my zeal to cook is gone. I came looking for this thread to get my cooking mojo back again. My poor DH has been roughing it the last year. He's pretty self sufficient so he's been figuring it out but we've been eating a lot of processed and fast food and junk food. I Gained 15 lbs in 6 months.

Monday we BBQ - hot dogs, burgers, chicken, salmon, summer salad, baked beans
Tuesday- leftovers
Wednesday- leftovers
Thursday- Buffalo chickpea Cobb salad
Friday- fast food on the road
Saturday- ballpark food softball tourny
Sunday - fast food on the road

After reading this, I'll probably make a couple of salads for the road.

Our week has been weird because I got a mis-delivered instacart order (they dropped off someone else's food!) They couldn't take it back, so we got a free random grocery order - from BJs, so there was lots of everything! Fortunately, it was mostly stuff we can use. They hadn't delivered our order to the wrong house yet, so we got our regular order too.

M- Memorial Day Burgers, potato salad and asian slaw
Tu- Bruchetta pasta salad (usually do this with fresh tomatoes/basil etc, but used the jar of bruschetta we got) with chicken sausage skewers
W- Steak salad ($26 of NY strip steak I didn't pay for), beets, bleu cheese and walnuts w. balsamic dressing
Th- Mexican rice bowls- rice, beans, leftover pulled pork, zucchini and a dollop of the queso I didn't buy
F- takeout
S- Fam is going to a soccer game and will eat at the stadium. I'll scrounge something at home.
Su- Going to play chopped and make a casserole with waffle fries, onions, queso dip (all stuff I didn't buy) and some ground beef I have on hand. Plus a salad- we got a bonus huge thing of romaine and will need something light with the casserole bomb.

Questions for you lovely people:

What should I do with 2 giant jars of extra spicy cocktail sauce (with horseradish)? Only thing I can think of is to serve it with shrimp, but that won't make much of a dent!

What else can I do with waffle fries (its a giant bag!)

What can I do to use up 2 giant bags of onions (sweet and red)? I also got my regular order, so I have like 15 pounds of onions! I will pickle some of the red onions, and maybe I will make some french onion soup next week. Other thoughts?

Chop up and freeze. These are great to add to soups, casseroles, omelets etc…

First, we've had this happen where we ended up with someone else's order in addition to our own. It used to happen with Walmart + a lot.

What about homemade French onion dip for the waffle fries?

Cucumber, tomato, onion salad (made with vinegar and sugar)

Seems like you could make salsa with the cocktail sauce, onions, cilantro, lime, etc.

A restaurant here does Irish Nachos with waffle fries. They top with cheddar, bacon, sour cream and chives. It’s delicious!
