Eat at Home 3!

Okay, meals for 4/19-4/25. Again, these are just lunches since we're on our own for dinners.

Monday: Egg Salad
Tuesday: Baked fish and rice
Wednesday: Tacos
Thursday: Lasagna
Friday: Brats and hot dogs
Saturday: Burgers
Sunday: Chicken Parm

I only need to pick up some ground beef, ketchup, lettuce, and taco shells for groceries, so this whole week is a freezer clean out week.

Next week is supposed to be a lot nicer out so I'm thinking of finally putting the massive pork thing I have in the freezer in the smoker and making a million pounds of pulled pork to separate and freeze into meal size portions. I also have a whole chicken out there that I should probably roast or slow cook and then separate out, make soup, and whatever else. Maybe I'll tackle that one this week sometime since it's supposed to be cold and rainy. Soup does sound pretty good.
 
Going really simple in case my husband cooks. I'm getting my second Covid vaccine tomorrow, so just in case I have a reaction, nothing except today's Indian food or the soup on Friday is more complicated than what he would normally cook.

Today: As yet undetermined Indian meat or fish, some sort of Indian cabbage, homemade roti, cilantro-mint chutney (cleaning out my cilantro and I actually have fresh mint)

Tuesday: Bagged salad and frozen lasagna

Wednesday: Tostadas and homemade salsa and guac

Thursday: Chicken quesadillas with salsa

Friday: Sopa de Albondigas, chips, salsa etc.

Saturday: Chicken breasts, potatoes, stovetop stuffing, some sort of frozen veggie
 
Back for another week of meals:)...

1. Sunday - Another Korean Bulgogi Beef and Veg Stir Fry over Rice with Sliced Strawberries and Blueberries - in a change, I'm gonna add some fresh okra to my normal veg (vidalia onion, green onion, red bell pepper, king oyster mushrooms, shredded carrots) so it will naturally thicken, I think:)

Then in no order...

2. Aldi's baked chicken breast patties BLTA (bacon, lettuce, tomato, avocado) sandwiches, roasted potato salad (roasted red potatoes, roasted vidalia onions, roasted bell peppers, fresh celery, bacon bits, mayo), fresh pineapple
3. Mesquite pork tenderloin, roasted brussel sprouts and onions in bacon fat, sliced apples, baked pretzel breadsticks (Aldi find)
4. Shrimp taco bowls with lettuce, roasted peppers and onions, fresh guacamole, real and fake sour cream, roasted taco-seasoned pineapple and rice, homemade honey corn bread
5. Chili dogs (all beef no preservative dogs - my spouse got himself a can of chili he wanted to try for this, so it will be available to all - I'll stick to dijon and relish on my hot dog:)), baked sweet potato fries, more sliced strawberries and blueberries
6. Leftovers or Bagged Dinner

Saturday - OUT (my kids have an escape room for their honor society on Saturday at 4:30pm, and it's near a Potbelly and Wegman's - we're deciding which might be the better place to feed my boys and get takeout for my girls before we have a vritual adult game night:))...
 
I've been following along but finally starting to meal prep for us, and started it today! Just DH and I so each meal just needs to feed 2 people.

Combination of good sale on meat and some gift cards I had meant I got a TON of meat and decided to prep it all. I made a huge batch of ground turkey and lentil chili (enough for 4 meals), enough ground turkey taco meat for 3 meals, 2 meals worth of Italian sausage meat sauce, a ham with pineapple marinade and prepped 6 chicken breast meals with various marinades (honey mustard, bourbon brown sugar, lemon herb, orange bbq sauce, al pastor, and rosemary bouillon). I also got a rotisserie chicken that I made chicken noodle soup with tonight and had enough left for another meal. My in-laws also got me a steak and seafood box for my birthday a few weeks ago and I have enough steaks left for 2 meals and enough scallops for 2 meals. So we have enough meat for over 3 weeks prepped and ready! Plan for this week is:

Monday: Chicken Noodle Soup
Tuesday: Orange BBQ Chicken breast with broccoli
Wednesday: Steaks with corn on the cob
Thursday: Taco Salads
Friday: Chili with cornbread
Saturday: Scallops with garlic spinach
 

So I am 2 months into my diet and I am down 10lbs. Super excited and happy. I do need to tighten up my logging some as my portions may be creeping.

Also, I am having to go back on restricting foods due to medical reasons. My pain levels have been bad the last couple of months including my IC. So I am cutting out items that I had been able to add back over the last couple years and being more strict with it. I have been trying to see the positives. This means a lot less ready to eat processed foods or eating out, which will be healthier in the long run. I have been wanting to eat healthier, more natural, and higher quality anyway. I have always wanted to learn how to bake better, both breads and sweets. So I am going to take advantage of all of this, along with the Farmers Markets that are starting back up and the wonderful fresh produce coming with the season.

Sunday-Tuesday: Pot Roast, potatoes, carrots, and onions
Wednesday: Veggie burger topped with swiss, avocado, and sauteed onions with air fryer french fries
Thursday-Friday: Chicken, mushroom, and kale stir fry with rice
 
My week has gone like this. :)

Sunday- met a friend for dinner at a local Italian restaurant. YUM!
Monday- Street tacos on corn tortillas with onion and cilantro, borracho beans
Tuesday- Baked Cod, baby carrots, peas, corn
Wednesday- Chef Salads (my fave!)
Thursday- Chef Salads again
Friday- meeting out of town family for dinner
Saturday- heading out of town and will be eating out all day
 
Another week, another "Korean meets American" dish. Actually, this week, I'll have 2 b/c Hmart put great sales on their marinated chicken thigh and bulgogi beef, so one's headed for a crockpot stew and one's headed for a stir fry. Here are this week's plans...

Sun - Korean Chicken Thigh and Veg Stew (since it's a very fruity meets Chinese-esque marinade, I went with veg that would love that and was on a great sale - so it's Calabaza Squash, Baby Carrots, Celery, Onion, Ginger and Garlic with the Chicken) over Rice with Sliced Apples
Mon - Korean Beef Bulgogi and Veg Stir Fry (more earthy marinade, so it's White Mushrooms, Bell Peppers, Green and White Onions, Shredded Carrots, Ginger and Garlic) with Roasted Red Potatoes and Red Grapes

And then the rest numbered...

1. Baked Fresh Salmon with Ponzu and Olive Oil, Roasted Zucchini, Sliced Strawberries, Double Blueberry Muffins
2. Baked Thai Peanut Chicken and Roasted Cauliflower, Rice Noodles, Clementines
3. Chicken Fajita Bowls (Bell Pepper, Onion, Zucchini) over Rice, Fresh Guacamole and Chips, Sliced Pineapple
4. Leftovers or Frozen Pizza Night with Fruit Salad
5. Out (before Mother's Day b/c I'm not paying Mother's Day prices - might be Indian or Thai b/c they won't put in higher prices Saturday:))...
 
Just a short plan till I go grocery shopping:

Today-- we had pan fried duck breast with orange sauce, asparagus, and oven roasted potatoes

Friday-- my husband's birthday dinner: crab legs, sourdough bread, green salad. German chocolate cake for dessert.

Saturday-- rice, broccoli, and Korean Chinese garlicky fried chicken (my husband calls it Korean General Tsao's)

Sunday-- I bought Rhodes cinnamon rolls to bake so I could have a low effort sweet breakfast (since its Mothers Day but we won't go out).

Dinner will be some sort of easy pasta, French bread, and salad. Hot fudge sundaes with choice of vanilla or banana brownie ice cream.
 
So, it's Mothers Day and I'm not cooking tonight, but I'm not sure what the family has planned, so it's a 6 day menu:)...

Sun - ?? (They are making me dairy-free/tree nut free belgian waffles with a fresh strawberry lemon sauce for brunch - my request)

And then...
1. Potluck - we're gonna bring the "vegan" make yourself entree with an Italian roasted veg platter with balsamic drizzle and then slices of French bread (free Safeway prize) to put the veg on top (but separate, so allergy folks can have one or the other) - I may slice up and bring a brick of mozzarella or some sliced pepperoni, even though I can't have them, but that would probably be popular - probably the mozzarella b/c a bunch of folks don't eat meat on Fridays, but only a few don't do dairy (and they, like me, can just go veg and bread!)...
2. Lemon dill fresh baked salmon filets, mashed potatoes, cucumber dill salad, strawberries
3. Aldi's gluten-free/dairy free general tso's chicken, homemade veggie and egg fried rice, sliced oranges
4. Homemade potato, corn, and bacon chowder, Asian wedge salad (shredded carrot, wonton strips, and toasted sesame dressing) homemade double blueberry muffins
5. Clean out the fridge night or frozen dinner meal
6. Out - either Church chicken dinner or a restaurant - still tbd

Monday was a rotisserie chicken and salad, Tuesday was buffalo chicken sandwiches and salad, tonight was steaks with mac and cheese and the last of the salad. Thursday will be chicken pot pie, and Friday is undecided... either beef and pasta bake or tacos.

Only 9 more night shifts and then I have a break for the summer. I don't know if I'll make it, lol.
This week is going to be jam packed, so I tried to plan some easy(er) dinners this week. It's been a month since I shared my meal plan. The last month has felt like a year!

It's this one: https://www.maangchi.com/recipe/kkanpunggi I make it a lot and use allepo pepper flakes for the "coarse red chili flakes." Not red chili flakes like we put on pizza, and rarely gochugaru, but that's because my husband is a spicy food wimp. We're pigs and eat a double recipe between the two of us. :o

For the rest of this week, this is the plan:

Tonight: tofu and broccoli stir fry, and hot and sour cabbage (no rice. . . trying to be healthy here to make up for tomorrow's carb fest at dinner)
Friday: lunch--hot and sour soup, Dinner-- Shrimp fra diavolo, salad, and asparagus
Saturday: Kabob koobideh, Persian saffron rice, salad, roasted peppers and tomatoes
Sunday: Lunch--shrimp and snow peas with some cabbage, Dinner-- Senate Navy bean soup (I got a ham bone and am sooo excited!!)

I don't even like pork chops but that recipe sounds good!
It was very good. It wasn't overly sweet, kind of a "light" meal, and it was pretty easy. I was going to double the sauce, but I ultimately didn't and I'm glad I didn't because it was plenty. I'm not a huge pork fan myself, but my daughter really likes it. It's funny because I tend to make things I like, and forget that just because I don't necessarily like something doesn't mean everybody else doesn't.
 
Some good news...my daughter had been accepted into the Disney college program in Jan 2020. Well, we all know how 2020 turned out. She recently received an email that took every plan she had in place for fall 2021 and turned them upside down and now she will be going to Disney in July for the fall 2021 Disney college program!!

I have a really difficult time planning meals that don't involve chicken. 🤷‍♀️ I have to make an actual effort not to make a chicken meal 7 days a week. Here is my plan for this week:
