Hi everyone!

I haven't posted here in a while, but I have really been trying to stay on track with cooking at home since school started.

Here is the plan for this week:

Sunday: Leftover Lasagna (from tonight), salad, bread

Monday: Turkey subs, baked chips and grapes (Hubby has to work late)

Tuesday: Mac and Cheese, peas and salad

Wednesday: Grilled pork chops, baked potatoes, green beans

Thursday: Chili and cornbread

Friday: This is our one take out night... probably pizza

Saturday: Steaks, homecut fries, salad
 
Sunday: hamburgers, watermelon, home fries

Monday: vegetarian lasagna, salad

Tuesday: lemon pepper salmon, roasted asparagus, roasted carrots

Wednesday: black bean enchiladas

Thursday: teriyaki chicken thighs, coconut rice, peas and carrots

Friday: leftovers

Saturday: home made BBQ beef brisket, cole slaw, chips

Sunday: black bean barley chili, corn bread

Monday: pita bread with melted Swiss cheese and stir fry veggies on top, fruit salad

Tuesday: potato soup, garden salad, baguette

Wednesday: leftovers

Thursday: panko crusted salmon, roasted broccoli and orzo

Friday: lemon arugula pasta, wilted spinach salad

Saturday: pork tenderloin, sweet potato casserole, green beans almandine and apple cranberry crunch

Sunday: field greens with dried cranberries, walnuts and bleu cheese, tomato,avocado, Swiss panini

Monday: home made macaroni and cheese, broccoli

Tuesday: leftovers

Wednesday: Parmesan chicken breasts, Caesar salad and baguette

Thursday: grilled vegetable quesadilla, guacamole, salsa

Friday: tilapia, couscous, roasted carrots, peppers, green beans

Saturday: grilled marinated flank steak, twice baked potatoes, roasted,brussel,sprouts

Sunday: white bean chili, jalapeño corn muffins

Monday: shrimp scampi with lemon linguini, roasted broccoli with garlic, lemon and pine nuts

Tuesday: pepper steak, white rice, Hawaiian rolls

Wednesday: split pea soup, baguette

Thursday: leftovers

Friday: home made applesauce, pork chops, mashed potatoes, peas

Saturday: spinach salad, veggie quiche

That is the month for me!
 
Last week didn't go very well for us. I was sick most of the week so didn't cook a lot. Most of next week's menu is just what I didn't cook last week.

Sunday: Pork chops, rice and gravy, field peas and fried okra
Monday: DD has a choir performance on the coast--about an hour away-- so guess I will grab something on the way down there.
Tuesday: choir practice, crock pot night: Roast, mashed potatoes, cream corn and salad
Wednesday: church night: sandwiches or baked potatoes with cheese and ham
Thursday: hot roast beef sandwiches and fries
Friday: red beans and sausage, rice and cole slaw

Sunday: Potato Soup and fruit
Monday: Chicken Spaghetti, garlic bread and salad
Tuesday: Swedish meatballs with egg noodles and peas
Wednesday: Homemade vegetable beef soup and cornbread
Thursday: Grilled chicken wraps and fresh fruit
Friday: BBQ grilled chicken, corn on the cob, twice baked potatoes
Saturday: Meatball Po-boys and chips

I do once a month grocery shopping so I'll spare you a whole month of meal plans :rotfl2: Tonight we are having ground beef taco's. We had lemon oregano chicken, parmesan & herb potatoes and whole beets last night for dinner. We don't really eat breakfast unless its a bowl of cereal or what not. For lunch I had a banana and a Lunchables two cheese pizza. I never eat those. But they were on sale and I had coupons so I figured what the heck, I'll grab a couple. Anyways, DH and I are trying not to eat out at all this month to potentially save some money for our WDW trip in October.
 
What a great idea for a board! My menu this week is:
Mustard Chicken, green beans, waffle fries
Chicken tacos and mexican quinoa
Shredded beef salad
Unstuffed cabbage rolls
Open face pizza burgers
 
Thursday night we had pizza.

Friday night was pot roast with potatoes

Saturday was london broil with twice baked potatoes and salad

Tonight was tacos
 
Sunday - we had Turkey Breast, Squash, Stove Top, Cranberries
Today - mock Earl of Sandwich Holiday Sandwich with the leftovers, marinated cucumbers

Hot Dogs, Chips and Brocoli slaw
Fancy Grilled Cheese and Soup

Hi Everyone - looks like some great menus out there and everyone is doing well sticking to their plans!
this week it's just the Hubs and I

Sunday dinner was Ham, mashed potato and green beans (my DS was still home for this)
Monday -Shepards Pie with 3/4 mashed cauliflower 1/4 mashed potato topping
Tuesday - Hubs and I are going to the Fryeburg Fair for the afternoon - so no dinner will be needed!
Wednesday - leftover Stuffed Zucchini and biscuits (only for the Hubs)
Thursday - Dreamfields Spaghetti, Meatballs and Sauce after Zumba and the park Safety meeting
Friday - out for Hubs cousin's Bday day - TJ's Pizza I believe
Sat & Sun - up in the air as always :)
 
Tonight: Shepherd's pie
Tues: Leftovers
Wed: soup and grilled cheese sammies
Thurs: rotisserie chicken, stuffing, mashed potatoes, gravy, broccoli
Fri: chicken pot pie using leftovers from Thurs
Sat: Buffalo chicken wraps

Tonight we are having a lighter version of Chicken Pot Pie. I have some celery in the fridge I want to use up before it goes bad.

Tuesday: Beef stroganoff, leftover green beans, fruit salad

Friday: soup/grilled cheese
 
M-Taco night, made with soy crumbles
T-pasta, garden salad and garlic bread
W-leftovers from T, will add diced honeydew
R-Cuban style beans and rice, honeydew
F-grilled cheese and tomato soup
Sa-country vegetable soup and cornbread
Su-crock-pot sesame chicken, fresh broccoli and rice

I plan to bake pumpkin bread and applesauce muffins over the weekend for breakfast and/or snacks. On Sunday I am going to try making homemade uncrustables for school lunches and freeze enough for the week. Along with those the kids will get a string cheese or yogurt, pretzels and some kind of fruit.

We are affected by the shut-down and I am trying to cook as cheap as possible. I would like to shave off 200.00 from our monthly food budget.Any ideas you all have would be great!

There's a dish I have yet to try but it's on the radar...on the side of the store-brand mac n' cheese box was a recipe for something called "Western Dinner". Just the name made me laugh! Basically you fix the mac like normal, then stir in some cooked ground beef, sauteed onions, green pepper, a can of tomato paste and a can of corn. I think that was it. You mix them all together and bake it briefly. Sounds filling and moderately economical too.

Sounds like a good comfort food dish for the first time it rains...I'm picturing myself all cozy in the house, two cats on my lap, a good movie on the **** tube, shoving melty cheese in my face!
