Yesterday I made cheese coneys
Today we will have turkey burgers and corn on the cob
Tuesday is home made pizza
Wednesday will be ham, green beans, and potatoes
Thursday will be grilled chicken and baked potatoes
Friday we are going out of town for son's cross country meet and will eat at a restaurant with the team.
Not sure about Saturday yet.
 
Omg! We have been so broke. I finally went grocery shopping today:) Here is the plan for the next few days:
tonight chili dog casserole
chicken chop suey (crock pot) and spring rolls
corn tortilla enchiladas
homemade bacon and cheese pierogies
 
Yesterday we had red beans with sausage and rice. Meant to make cole slaw with it but with both granddaughters and ds over and then my mom stopped by just way too much confusion going on!

Monday--tacos
Tuesday--left over red beans and rice (may convert it into red bean stew)
Wednesday--sandwich night--ham and cheese on Hawaiian bread, veggie straws and fruit.
Thursday--fried shrimp, baked potatoes, cole slaw and roasted broccoli
Friday--pork chops, rice and gravy and field peas (dh's favorite meal and one I haven't cooked in awhile), and broccoli, cauliflower and carrot mix.

Ooooh, that is two fried meals in a row. Not good. might do boiled shrimp instead, its easier anyway.
 
Hi Everyone.. (hugs to you Lily, I can't imagine how tough this is for you) this week it's just the Hubs and I and I am fully back on Atkins so my week will have two menus as a result..

Monday - Hubs = L/O sheppards pie, Me = L/O stuffed zucchini
Tuesay - Hubs = L/O mac n cheese with chicken kiev, Me = sauteed cabbage and kielbasa
Wednesday - Hubs and I will both eat pork from the crockpot, Hubs will have carrots and pasta roni and I will have mashed caulilfower and brussel sprouts
Thursday - Hub = Cheese ravoili and meat sauce, Me = L/O sauteed cabbage and kielbasa
Friday - at my parents
Saturday = Hub = chinese, Me = Atkins sweet and sour chicken with extra brocoli

Alright, so some meal ideas for this week so far. They are in no order and I have to go to the store tomorrow.

Whole Roasted Chicken with Roasted Vegetables

Roasted Salmon, Quinoa, and Asparagus

Pizza with Garlic and Olive Oil Base, Red Bell Pepper, Onion, Chicken, Mushrooms, Spinach, and Fresh Mozz

Creamy Chicken and Pasta Bake

Grilled Vegetable Sandwich with Mozz. and Corn on the Cob

I am also going to make my own bread this week as finding "safe" bread is nearly impossible. I also have some "safe" Chicken Pot Pies in the Freezer. Next week I will continue to figure out meal ideas. Just stinks that a lot of my go to items are not allowed (tomato sauce, most (all) asian meals due to no soy or curry, or salads because I can't have most dressings due to no vinegar or citrus).
 
We call this birthday week at our house. It is not a good week for cooking at home. Our tradition is on your birthday you get to pick a place to eat out. It does not happen often so we love doing it. When we started our tradition we did not even think that we could possibly end up with this many birthdays in one week.

Monday: DD16 birthday ( picked Chili's)
Tuesday: My birthday (picked P.F. Chang's)
Wednesday: Chili, cornbread and apple slices
Thursday: Marinated steak, mac and cheese, green beans and salad
Friday: Spaghetti and Meatball, garlic bread and salad
Saturday: Potato Stew and carrots
Sunday: DS5 birthday ( will pick his favorite place to eat)

Tonight I am roasting a chicken with some root vegetables. Then tomorrow I will use some of the chicken to make a pizza (reminds me I should move the dough to the fridge from the freezer).
 
I like the other poster who stated they "have been slacking" in posting. Me too! But, you guys are keeping me on track. But, it is really hard this week. I house/pet sit for SIL when she goes out of town, and this time it is for 10 days! And we do not live close so I go to her house after work and stay a while. DH and DS are pretty much on their own, I try to keep things in the freezer and frig for them, but they are lazy. They went and picked up Chinese last night. Argh! So, no meal planning this week. Hit and miss! I will do better after shopping this weekend and getting back on track.

Thanks for the continued motivation! Yum, hamburger steaks sound so good, I might have to plan for those some time soon.

Tuesday-chicken, noodles, broccoli
Wednesday-kids had pb&j's with fruit, hubs had leftovers, I didn't eat
Thursday-chicken spaghettini alfredo with peas

And going forward...
Friday (tonight)-ham, potatoes au gratin, salad
Saturday-Indian night (butter chicken, jasmine rice, salad and maybe naan)
Sunday-leftovers from Friday

Now, next week...
Monday-fish and chips, frozen veggies
Tuesday-cream of mushroom soup pork chops, rice, frozen veggies
Wednesday-hot dogs and mac and cheese, veggies and dip
Thursday-chicken enchiladas, salad
Friday-Shepherd's Pie, salad
Saturday-Thai night (hubby in charge--likely a rice noodle bowl)
Sunday-leftover shepherd's pie

Wednesday nights have been a bit of a nightmare. The kids have activities at 7pm which is when DH gets home from work with the car. We generally rush out the door and get there 10 mins late. The kids never want anything I suggest making and have declared it a peanut butter sandwich night! :rotfl2:

I may start having Wednesdays as crockpot nights so that I can eat at dinner time and DH gets to have a meal at 7 pm that he doesn't have to reheat. The kids can have their sandwiches if they really want. They don't get to have them very often (can't have PB at school) and I'm usually to lazy to argue. :confused3

I've already got the meal plan done for October so I'll have to change Wednesdays going forward.
 
A little ahead of the game this week, already have the next week's menu done:

Saturday: Shrimp (boiled or fried), baked potatoes and cole slaw
Sunday: Chicken with Apple Pecan Stuffing, Salad, corn fritters and yeast rolls
Monday: Pasta and Sausage (me) Pasta and Marinara Sauce (dd), Garlic toast, salad
Tuesday: Ranch chicken breasts, lima beans, salad, rice w/chicken gravy
Wednesday: grilled ham and cheese sandwiches, carrots and ranch dip
Thursday: Chicken casserole (using a tuna casserole recipe and just using chicken instead), salad, peas and texas toast
Friday: Red beans and rice, sausage, cole slaw and corn bread


I am trying to make sure I also eat from home for lunch every day--way to easy to spend 10-15 dollars a day eating lunch out!!!! So, this weekend my plan is to make a huge pot of Taco Soup. I will go ahead and fix some bowls to grab for lunch and freeze some of it. At the same time, I want to fix some bowls of salad that I can grab with some grilled chicken or shrimp for other days. So I have my lunch menu too!

Monday: taco soup, chips and sour cream, fruit
Tuesday: leftover pasta and sausage
Wednesday: salad with grilled chicken, crackers
Thursday: taco soup, chips and sour cream, fruit
Friday: salad with shrimp, crackers
 
I'm back after a long hiatus! It's been a very busy summer for us!

Sunday: Chili with homemade cheddar garlic biscuits

Monday: Dance night so quick dinner of frozen pizza and salad

Tuesday: Tacos or loaded nachos, refried beans and corn

Wednesday: BBQ chicken, baked beans and green beans

Thursday: Pork chops, roasted potatoes, broccoli & cheese

Friday: Football so we'll grab something quick on the way or something at the game

Hello All! I am new to this thread. I am trying to eat at home more for 2 reasons: one, to have a better idea of the ingredients and sources of the food I am putting in my body and two, to save money! I am planning to use this thread for inspiration. It is just DH and me, so I hope to make one big meal a week that will provide plenty of leftovers and then a smaller meal or two during the week as well.

Mom_Rides, I would love to get the cheddar garlic biscuit recipe from you!

Friday night we had steaks with baked potatoes and roasted veggies

Saturday was roasted chicken with mashed potatoes and leftover veggies.
 
Hello all we have a had a busy couple of weeks and we have been slacking but as of today we are back on track. I thought we were going to give up our trip to disney next year because dd made a travel sports team but some ow we are still going to go!

Anyways not sure what we are eating tonight I will head to the store once I drop dd off at practice.
 
A day late posting this week, but Friday we went out for my birthday.

Saturday/Tuesday: Italian beef sandwiches, apple/blue cheese salad, baked potato

Sunday/Wednesday: BBQ chicken, rice, oven fried squash

Thursday: using some leftovers out of the freezer (yuck but it's the end of the month)
