I too have been a way for a while and need to get back to eating more at home.

Saturday - Pizza (we just got back from vacation and had no food in the house)
Sunday - Roasted chicken, mashed potatoes, Mac n cheese, fruit salad, rolls
Monday - Meatloaf, green beans, leftover rolls and fruit salad
Tuesday - Spaghetti and meatballs, garlic bread, and salad
Wednesday - Grilled cheese and soup (track meet night so it needs to be quick)
Thursday - BBQ chicken, baked potatoes, salad
Friday - steak fajitas, refried beans, spanish rice
 
stayhomemom77 - hope you and your hubby are doing well trying the low carb life out..

Thanks. I don't really like eating low carb, but I do love the rate of weight loss so we do intermittent low carb and eat regularly 3 days a week to keep our sanity. Last fall I was able to lose 30 pounds pretty effortlessly eating this way and since I packed it back on at Christmas, I thought I'd better give myself a jump start once again!

I'll be trolling your posts for ideas when I get tired of eating the same things all the time! :thumbsup2

Saturday:
Ravioli Bake
Green Salad
Garlic Toast

Sunday:
BBQ Ribs (Grilled or Crock Pot)
Twice Baked Potatoes
Oven Roasted Veggies (whatever fresh veggies I can get on clearance)

Monday: I have an evening event at work so DH will feed the kiddos
Pizza

Tuesday:
Ham and Hashbrown Bake with leftover Easter Ham (http://www.onedishdinners.com/2012/01/ham-and-hashbrowns-with-baked-eggs.html)
Fresh Fruit

Wednesday:
Creamed Tuna on Toast (or as it is called in the military- SOS ;))
Carrots and Dip

Thursday:
Crockpot Terryaki Chicken (http://www.sixsistersstuff.com/2011/02/camilles-teriyaki-chicken.html)
Rice
Steamed Broccoli

Friday:
Fritos Chili Pie (chili in the freezer)
Apple Slices or Carrots and Dip
 

Well, we couldn't sustain the low carb eating! :rolleyes1

We're bagging it, starting today. Menu doesn't change though as this was our last low carb day for the week (supposed to be) so we are still having chicken breasts and salad...I'm just making a side dish of fettucine alfredo to go with it.

Tomorrow is still homemade hamburger helper (beef stroganoff) and Saturday is still bean and rice burritos.

I got groceries today and picked up some ground pork so I can make homemade wontons (and consequently wonton soup) and decided to make homemade italian meatballs and mini tortieres with the rest of the package of pork.

I think I'll do all that up tomorrow and then freeze them for future meals.
 
Hi Everyone!

I told you a while back that my daughter has a mass in her lymph node on the left side. It's 19x24mm(almost 1 inch). We got an CAT scan last week and the original surgeon we saw didn't want to do the surgery and is sending us to the local Children's hospital. We are seeing my youngest DD's surgeon that removed her tonsils. I know this is the best place for her anyway. Our appt. wasn't until May but I managed to get her in this next week. In the meantime, we are trying to keep things as normal as possible. Our appointment is next week Thurs. so I will update next week.

Monday - Mexican chicken salad (grilled chicken, black beans, avocado, tomato over lettuce with cheese and a salsa dressing)

Tuesday - Beef fajitas / salad

Wednesday - Chicken florentine pasta

Thursday - Chicken wings / oven french fries/ veggie or salad

Friday - Steak fingers (cube steak cut in strips, rolled in flour and FRIED - yum!) with gravy, rice and veggie
 
Last night we had a doctors appointment (we're at the twice a week point bc I'm a high risk pregnancy) so we had chipotle after the appointment and then went to see G.I. Joe.

Tonight we had roasted lemon pepper chicken, Spanish style garbanzo beans with chorizo and potatoes in a saffron sauce with white rice. My mom made this tonight, I didn't have to cook it, so it tasted AMAZING! LOL It's funny how things taste so great when you don't have to cook them yourself.

Well, I am trying to go gluten free for the next several weeks to see if it helps my digestive issues. My Celiac test was negative, but I wonder if I still have a gluten sensitivity. My GI said it would not hurt to try, and at this point I'm game for anything if it will help. Anyway, that will complicate the meal planning process a little, although not that much. I'm also omitting milk, although I'm still eating cheese and eggs.

Sunday (today): honey garlic chicken in the crock pot - over brown rice with cabbage on the side.

Monday: Spaghetti (with gluten free pasta for me) and salad

Tuesday: Sloppy joes with homemade sweet potato fries (bunless for me)

Wed: leftovers (church night)

Thurs: spinach and turkey bacon quiche (crustless) with fruit salad

Fri - Sun: DH out of town at a men's retreat, I'll forage around the house :) I bought a few potatoes too so I might work those in somewhere. I eat a lot of scrambled eggs and fruit when it's just me.

I just went trough an colonoscopy and it was confirmed I don't have Celiac's but I did have colitis. I found I have a lactose problem too but I am not having as many bad days as I used to so diet may work for you. The diet thing is kind of a trial and error. Try to record what you are eating and when you have a bad day. That may help you figure out what your trigger foods are. I have other food allergies so visiting a allergist might help you out too.
 
For the previous 2 posters, I just got done reading a great book, It Starts with Food by the owners of the Whole9 website. The book promotes a Paleo diet but they have a Whole30 program that eliminates all dairy, grain, beans, etc for 30 days and has a way to gradually reintroduce foods to help determine what is causing issues. Might be worth looking at. They have their whole program for free on their website...the book just offers a consolidated, more in depth look at it.

My doctor and I are working on a possible gluten sensitivity for me as well. Nothing too serious thank god, but enough that I will have to be careful. We figured it out based off of a food diary and a journal I kept of symptoms. There was a definite correlation between over doing it with gluten and my problems (digestive issues, migraines, fatigue, etc). We are going to start with simply watching the amount of gluten I take in to see if reducing it alone will help.
 
Tinkmom you will be in our thoughts. I am sorry I have been MIA. We've been eating at home but it hasn't been anything interesting. Last week was using up all the leftovers. Money is tiiiiiiiight so until Thursday we will be eating whatever I can create out of nothing. In fact I have to go find something for tonight. I do ave a turkey in the freezer that I will take out, but that's not going to help me in the next 2 days. I'm thinking of starting to blog about our adventures in inexpensive dining home.

Hi Gang! My week is busy as DS is home this week and we have LAX 6 days/nights a week!

Sunday - I had roasted chicken and Hubs had a roast beef sandwich - DS ate at his dads
Tonight - Homemade Chicken tenders, Hubs with Cheddar, Jack & Bacon Kraft Fresh Take, DS with Extra Crispy Oven Fry and mine with Mayo, Parm and crushed bran flakes, DS will have garlic shells Hubs will have mashed potato and we all will have Green beans.
Tuesday - the boys will have Meatball subs and I'll have Shirmp and brussel sprouts after Zumba class
Wednesday - DS will have hamburger Helper and hubs and I will have grilled Pork chops (hubs will have potato) and we'll all have Green beans
Thursday - LAX Game 4pm - Pasta dinner for all - I'll be trying out the Dreamfield Pasta only 5 carbs per the box but we'll see what happens..
Friday - boys will get Pizza from the local pizza joint and I'll make a homemade pizza on a Low Carb crust
Saturday - Steak on the grill if the weather cooperates..
Sunday - ? Not sure yet...
