Completely forgot to get on here and post my menu for this week... :rolleyes1

Saturday: Had our Swiss Family Robinson movie night

Awesome, thanks!! Any tips for rolling/filling the wontons? Roll them very thin you said?

I used TONS of flour and just kept rolling and flipping the dough until it was as thin as I could get it. I used a knife to cut the squares but next time I'm going to try using a pizza cutter to see if that works any better. The knife was challenging.
 
Another busy week and hard to come up with new ideas. I get into food ruts easily, have to watch what I eat very carefully b/c of GERD, and have one kid who doesn't like pasta or rice.

Last night we have overnight guests, I made homemade Mac n cheese with salad
Today is teriyaki chicken, rice, mixed Asian-style veggies and Trader Joes postickers
Wed is leftovers
Thurs. is tortellini and salad; canned chili for my anti-pasta son
Friday is tacos and corn
Need to come with something for Saturday; Sunday is always a fend for yourself day.
 
You guys are so IMPRESSIVE!

We just went from a 2 income household to a no income household so we have to eat at home now. We're trying to do it cheaply but still sneak some veggies in (I don't like veggies at ALL) so tonight I tried making a kinda-jumbalya.

1 pkg breakfast sausage
1 large onion (chopped)
1 large green pepper (chopped)
4 cloves garlic (minced)
1 can tomato soup
2 cups rice
2 cups chicken broth
2 TBSP Cajun spice (or whatever you like to taste)

Chop up sausage to bite sized pieces and fry until cooked. Remove from pan and set aside. Throw in onion, green pepper and garlic, and cook until about how soft you like them. Toss the sausage back in along with everything else. Mix, bring to boil for about 30 seconds, then turn down to low, cover and let sit about 10 minutes or until the rice soaks up the liquid. Fluff it up and you're all done.

If that's too dry for you then you can just up the amount of broth. If you accidently add too much spice then grate some cheese over top.

Fairly quick, cheap, and a good way to sneak in some basic veggies...

Meals so far this week and plans for weekend:

Sunday: Pasta with hearty vegetables (Peppers, onions, stewed tomatoes)
Monday: Tacos and salad
Tuesday: Pierogies, had to be something quick. DS had baseball game.
Wednesday: Chicken fajitas
Thursday: Left overs of chicken fajitas and rice and beans in addition to.
Friday: breakfast for dinner. Scrambled eggs, sausage and pancakes
Saturday: Lasagna
Sunday: Subs b/c we have baseball practice in middle of day. These subs are FREE!!! Got them from groupon deal and had a credit. :cool1:
 
Meatball subs tonight with broccoli and cauliflower. I made the rolls myself and they're delicious!! I also made choc chip cookies and butter tarts this afternoon. I missed my calling as a pastry chef!:rotfl2:
 
I am so happy I have been able to use my outdoor grill again! It finally feels like spring in PA!
Mon.- Carribean jerk chicken, bbq chicken, grilled peppers, rice, green beans
Tues.- Pork tenderloin, red potatoes ( kids had them fried, DH and I boiled), aspargus, pumpernickel bread
Weds- Grilled steak with mushrooms and onions, rice, corn on the cob, french bread from the breadmaker
Thurs- Salisbury steak, gravy, mashed potatoes, broc, califlower and carrots
Fri- Grilled chicken, linguine with parmesan sauce, peas
Sat.- Girl Scout Event
Sun.- Sausage, pancakes, fruit, hash browns
 
The budget it SUPER tight this week for groceries. I shopped our freezer and pantry to create a menu that would require very minimal purchases from the grocer this week. Our menu...

Saturday:
Cookout at my Brother's house. I have no idea what I am supposed to bring because they plan everything at the last minute. :sad2:

Steamed Broccoli (still have a bag from last week's grocery trip)
 
Saturday - Beef stroganoff over egg noodles / peas

Sunday - Grilled brats, pasta salad and corn on the cob

Monday - Beef and broccoli stir fry over rice

Tuesday - Chicken salad on rolls with left over pasta salad

Wednesday - Leftovers

Thursday - Chicken fried rice / glazed carrots

Friday - Herb crusted fish/ aparagus / risotto

Sorry I have not been around on the thread. Mom has been back in the hospital for three weeks now and does not seem to be really recovering. We are having to start thinking about hospice or full time care at home. So I have been dealing with that plus the last month of the last semester of grad school. I am supposed to graduate May 11th. After that... I have no idea where my life will go.

I am still trying to cook when I have an energy. Here is my menu for the rest of the "week":

Tonight: Pan fried steak, baked sweet potato, and steamed broccoli
Saturday: Huevos Rancheros (vegetarian)
Sunday: Pasta with Butter, Parm, Peas, and Chicken
Monday: Steak Hash and Eggs

And then at some point Monday or Tuesday night I have to go to the store.
 
Last night was scallops, rice and green/yellow beans

Tonight: Spaghetti bolognese, garlic bread and salad

Tomorrow: Chicken fingers and fries...probably salad as well

Mon: Sticking with my New Years Resolution and having my monthly dinner with my BFF. DH and DD will have a much needed date.

Tues: Hot ham and cheese on Hawaiian rolls, baked beans

Wed: Dance night so quick dinner out. Thinking of maybe grabbing one of those new deep dish pizzas from Little Ceasers.

Thurs: Stadium brats, pasta salad, leftover baked beans

Fri: BBQ pulled chicken sandwiches, seasoned fries, sliced peaches

Sat: Lasagna, garlic bread, salad

Sun: Crockpot roast beef, noodles, salad, green beans, biscuits

Mon: Chicken fries rice, egg drop soup

Tues: Breakfast burritos, sliced kiwi, hash browns

Saturday - Pizza Night - most likely Dominos
 
Now that we have trip dates, I'm cracking down on the eating out so we can have more money for pin trading (Where's the maniacal laugh smiley?!?) which means I need to do better with meal planning! I'm excited to get recipe ideas from you all too!
