Sunday - Invited to in laws for dinner
Monday - Track Meet so it will be soup and sandwhiches or hot dogs
Tuesday - Beef Strognoff
Wednesday - Track Meet again so it will be "walking tacos"
Thursday - Chicken Paramaign, salad and garlic bread
Friday - Jumbalya, fruit salad
 
Last night we had Wendy's for dinner. I worked on my day off and pulled an open to close.

Tonight we are having hot dogs, potato chips, and watermelon in honor of the Cleveland Indians home opener.

Last night: Rotisserie chicken, mashed potatoes and broccoli/cauliflower mix
Tonight: Fish and chips and green beans
Tues: Homemade pizza and raw veggies
Wed: Steak, baked potatoes, some frozen veg and sauteed shrimp
Thurs: Chicken Enchiladas and salad
Fri: Butter chicken and basmati rice with salad
Sat: Leftovers
Sun: BBQ Pork chops, fettucine alfredo, not sure of veg yet
Mon: Homemade pizza and salad
Tues: Wonton soup, chicken fried rice, egg rolls
Wed: Meatball subs
 

As if things can't get worse for my family, my little DD came home from school with lice today! I spent about 3 hours going through her hair and cleaning the house! (and she has short hair now) Just to be safe, I am giving myself an olive oil treatment tonight!

I was supposed to be in school tonight so I prepared enchiladas so my DH could just throw them in the oven. But it worked out well because I threw them in the oven while I was cleaning to the house. God bless my hubby for doing loads of laundry today:laundy:

I have school all day tomorrow and then we go to see the surgeon on Thursday. I thinking tomorrow will be a pizza night for my family. We got Red Barrons bogo and for free with our Walgreens rewards.
 
Last night was fend for yourself/clean out fridge night.

Tonight is chicken salad with crackers and fruit.
 
Saturday - Sausage and peppers over rice

Sunday - Crab cakes with garlic & parm pasta / asparagus

Monday - Steak sandwiches with grilled mushroom and onions / salad

Tuesday - Waldorf salad with grilled chicken

Wednesday - Mickey waffles / bacon / sliced fruit

Thursday-Tortellini with white beans and spinach

Friday - Chicken pasta primavera
 
Wednesday we ended up eating out while running errands.

Last night we had chicken paprikash and salad.

Tonight was dinner at the hospital. My grandma was taken there today for an infection in her leg.
 
Well, I am trying to go gluten free for the next several weeks to see if it helps my digestive issues. My Celiac test was negative, but I wonder if I still have a gluten sensitivity. My GI said it would not hurt to try, and at this point I'm game for anything if it will help. Anyway, that will complicate the meal planning process a little, although not that much. I'm also omitting milk, although I'm still eating cheese and eggs.

Sunday (today): honey garlic chicken in the crock pot - over brown rice with cabbage on the side.

Monday: Spaghetti (with gluten free pasta for me) and salad

Tuesday: Sloppy joes with homemade sweet potato fries (bunless for me)

Wed: leftovers (church night)

Thurs: spinach and turkey bacon quiche (crustless) with fruit salad

Fri - Sun: DH out of town at a men's retreat, I'll forage around the house :) I bought a few potatoes too so I might work those in somewhere. I eat a lot of scrambled eggs and fruit when it's just me.

So far, the gluten free diet is going well. Not too hard to follow. And I think I have felt better this past week, although maybe it's all in my head. :lmao:

This weeks menu -

Sunday (today): chicken tacos - made in the crock pot (chicken breasts with taco seasoning and salsa, sooo good)

Monday: Spinach, ground beef, and "noodle" casserole (gf noodles)

Tuesday: general tso's chicken in the crock pot with rice; creamed spinach or some kind of spinach on the side (I got a great deal on big bags of spinach!)

Wed: church - leftovers

Thursday: breakfast hash

Friday: out with friends

I also got a great deal on a lot of fruit at Aldi (I LOVE Aldi! :goodvibes), so I'm going to make a big fruit salad to eat all week.
 
I am trying to make better meals for my family and I am not the best cook so this should be fun. I am trying use up some of the items we have on hand while have something healthy at same time.

Friday: Homemade sloppy joes and French Fries. The homemade sloppy joes turned out great and my family wants this version over manwhich from now on. :goodvibes

Saturday: Tilapia, mashed potatoes, rolls, salad

Sunday: Grilled pork chops, green beans, stuffing

Monday: This is 12 yr old son's "Gotcha Day" and he picked pizza

Tuesday: Chicken Marsala

Wednesday: Soup and sandwhiches - track meet night
 
Last night was Chinese takeout and movies.

Tonight is London broil with roasted potatoes, salad, and fruit.
 
We made fish tacos tonight. Tomorrow is crock pot lasagna. Tuesday is chicken tortilla soup in the crock pot. Wednesday we are consulting with an Oncologist for my oldest DD. We still don't know what's wrong with her. The ENT we saw wants a second opinion. (our third opinion) That's ok because the scar will be pretty bad for the biopsy.
In the mean time, we think she had an allergic reaction to the antibiotics she was on because she has been covered in hives since Wed. My poor kid can't catch a break!

we have a quiet week DS is at his dad's and DD is still at college so just the Hubs and I this week..

Last night we had leftovers..
Tonight Monday - Mesquite BBQ Pork Loin in the oven w/ mashed cauliflower and brussel sprouts for me and Mashed potato & gravy and carrots for Hubs
Tuesday - Chicken parm with Dreamfields Pasta and canned sauce and salads
Wednesday - Hubs will have popcorn chicken, stuffing and carrots and I'll have shrimp with Cabbage
Thursday - Mini pot pies made with carbquick (type of low carb bisquick) served with gravy for dipping and salad
Friday - I think we are going to Texas Roadhouse with the in-laws
Saturday - burgers
Sunday ??
 
Hi Gang! My week is busy as DS is home this week and we have LAX 6 days/nights a week!

Sunday - I had roasted chicken and Hubs had a roast beef sandwich - DS ate at his dads
Tonight - Homemade Chicken tenders, Hubs with Cheddar, Jack & Bacon Kraft Fresh Take, DS with Extra Crispy Oven Fry and mine with Mayo, Parm and crushed bran flakes, DS will have garlic shells Hubs will have mashed potato and we all will have Green beans.
Tuesday - the boys will have Meatball subs and I'll have Shirmp and brussel sprouts after Zumba class
Wednesday - DS will have hamburger Helper and hubs and I will have grilled Pork chops (hubs will have potato) and we'll all have Green beans
Thursday - LAX Game 4pm - Pasta dinner for all - I'll be trying out the Dreamfield Pasta only 5 carbs per the box but we'll see what happens.. Friday - boys will get Pizza from the local pizza joint and I'll make a homemade pizza on a Low Carb crust
Saturday - Steak on the grill if the weather cooperates..
Sunday - ? Not sure yet...

So I tried the Dreamfields pasta and it DID NOT spike my sugar:cool1::cool1:.. I tested my blood at 6:30 before dinner it was 98,I was done eating at 7 so tested my blood at 7:30 it was 128 I tested it again at 9pm it was 120 and the next morning at 8:30 it was 85!!!! I am soo excited to add this back in (limited) to my diet!! I got angel hair and it tasted like Heaven!! OMG I didn't know how much I really missed it after almost 9 weeks without it.. haaa.. I plan to get a box of elbows next and make a Mac and Cheese.. oh and while it didn't affect my blood sugar I did gain a pound over night.. oh well .. the trade off I guess

Sorry to hear your DD doesn't have a dx. :(. I hope you get some answers soon! Can she take benedryl for the hives? Hope she feels better soon!

Mon.- rib eye steaks
Tue.- baked pork chops
Wed.- spaghetti (made w/ground turkey)
Thurs.-French toast w/ turkey sausage
Fri- bacon cheddar hamburgers (from the market)
 
A few changes to our menu for this week.

Sun: Sweet and Sour chicken with steamed jasmine rice

Mon: Cheeseburger pie, salad and peaches

Tues: Taco salad for DH & I. IDK for DD...spaghettios maybe?

Wed: Spring break for dance so we actually get a Wed meal at home!! Baked chicken, rice a roni, applesauce

Thurs: French toast, sausage patties

Fri: Dinner out for DH's grandma's birthday

I made up the wontons this morning in preparation for tomorrow night's wonton soup and fried rice dinner. It was actually kinda fun.

Handling raw ground pork and the shrimp was pretty gross, but rolling the dough out to such paper thinness was pretty amusing. It made me think that making homemade pasta (tortellini and ravioli) might be on the horizon for dinner sometime soon.

I made a batch of 40 wontons so quite a few will repose in the freezer to await another meal (or two) in the future. :cool1:

Well, I haven't actually TASTED them yet...so I can't say for certain how good they are, but...

Wonton wrappers:

1 egg
1/3 cup water
2 cups flour
1/2 tsp salt

Beat egg and add water.

In a large bowl, combine flour and salt. Create a well in the center of the mixture and add wet ingredients. Mix well, adding water if necessary until pliable dough has formed.

Knead dough, Cut in half. Cover dough balls with damp towel and let rest for 10 mins.

Divide each ball into 4...keep covered with damp towel (excluding the one you're rolling) and roll into a 10.5 x 10.5 inch square. Cut into 9 pieces.

**I only managed to get each one rolled out thinly enough to get 40 wontons wrappers instead of the called-for 72.

Filling:

1/2 lb chopped shrimp
1/2 lb ground pork
2 tbsp oyster sauce
1 green onion, chopped
1/2 tsp sesame oil
1/4 tsp ground pepper
pinch salt

**I didn't have oyster sauce so I used soya sauce instead. I omitted the onions (hate 'em) and used olive oil instead of the sesame oil. I also added garlic powder.

Combine all ingredients and spoon a heaping teaspoon onto center of wonton wrapper. Brush sides with water and fold to make a triangle. Seal edges tightly. Take side corners and pinch together at the bottom.

Freeze 30 mins on a cookie sheet, then transfer to freezer bag for longer storage.

Cook 4 mins in boiling water or broth.

Wonton Soup

4 cups chicken stock
2 cups water
wontons
Soya sauce to taste
Whatever garnish you prefer (green onions, mushrooms, bok choy, etc)

Bring liquid to a boil. Add wontons, soya sauce and garnish(es), cooking over med high heat for 4 to 6 mins.

Awesome, thanks!! Any tips for rolling/filling the wontons? Roll them very thin you said?
