Off to a much better start this week then last!


Sun: Chicken parm, spaghetti, garlic toast, salad

Mon: Dinner out with the bestie (her month to treat...WOOT), daddy/daughter date

Tues: Smoked turkey sausage, shells & cheese, corn, applesauce

Wed: Soft tacos, chip & salsa

Thurs: Scrambled eggs, sausage links, biscuits

Fri: Sloppy joes, tator tots, pineapple

Sat: Going to my mom's

Sun: Happy Easter! Dinner @ my moms

Mon: Chicken fried rice, egg drop soup

Tues: Homemade pizza

Wed: Chicken enchiladas
 
Tonight we had meatloaf with mashed sweet potatoes, and broccoli.

Tomorrow night I have bacon, apple, and cheddar mac and cheese (Everyday with Rachael Ray) planned.
 
I ended up making the peanut/cornflake breaded chicken strips in a wrap with cast iron skillet potatoes. I cheated and used a taco bell spicy sauce as a topping:) Both the chicken and potatoes were baked. I will have to post it on my blog soon!

Ahhh the menu this week for for myself - atkins friendly, the Hubs and DS.. my DS has LAX from 4-6pm but the school is only 8 mins away so dinner will almost be done when either I or Hubs go to get him and we'll all eat when everyone is home..

tonight - Shepard's pie for the boys and shrimp and sauteed zucchini for myself
Tuesday - parmeasan coated chicken strips, green beans for all and noodles for the boys
Wednesday - Breakfast - egg sandwiches for all (i have a low carb biscuit for mine)
Thursday - Hamburg Helper for DS, Pork Egg roll -fried rice-potstickers for Hubs, shrimp and L/O GB for me
Friday - Pizza for everyone - 3 Meat for the boys, crust made from carbquick (bisquick type baking mix) for myself with sauce, cheese, onion and maybe some meat?
Saturday - IDK - Lol..
Sunday - easter dinner at the in laws..

Had a stressful morning so I turned to the kitchen for comfort.

I made cornbread muffins, 2 loaves of bread (which will be frozen when cooled), 2 batches of pizza dough (which I froze for later) and a chocolate pudding pie in a graham cracker crumb crust.

Because I am eating low carb for two weeks (starting yesterday) I can't eat any of this stuff (not any time soon anyway) but the baking DID relieve my stress so I'm feeling good.

Tonight we are having chicken breasts, homemade fettuccine alfredo (for the lucky ones who get to eat carbs...I have to make it and smell it but not partake) and garden salad.

Tomorrow will be meatballs in gravy over mashed potatoes with broccoli and cauliflower on the side. (Of course, I'll be skipping the mashed potatoes but I will have a wee bit of gravy.)

Thursday will be butter chicken over rice with salad (no rice for me and just a touch of sauce with my chicken). I'll add a chunk of cheese to my plate to help fill me up.

Friday will be smokies (no bun for me) with kraft dinner for the kids/DH and green beans.

Saturday will be pot roast with potatoes, carrots and peas (I'll be having salad instead of these veggies) and we'll have the leftovers on Sunday.

And if I survive this week, I'm going to do it all over again next week with some new menu items! :faint:

Saturday - Grilled chicken, pasta salad and grilled veggies.

Sunday - Egg salad on mini croissants, ham biscuits, potato salad, asparagus, sliced cukes/tomatoes in vinaigrette and carrot cupcakes

Monday - Leftovers

Tuesday - Cream of chicken over rice and peas

Wednesday - Grilled steak and strawberry spinach salad

Thursday - Steamed mussels and scallops over pasta with marinara sauce / salad / garlic bread

Friday - Burgers on the grill with homemade french fries
 
I'd say the recipe I use is close to this one. We do put some olive oil in the pasta and we make sure to cover the noodles with the sauce or they get dry and crunchy on the edges and the kids don't like it that way. Ours has a layer of cottage cheese as well.:)

I made this last night and my entire family said make sure you go back on that thread and say thank you :rotfl: They loved it and said it was a definite make again. So thanks again for the recipe!

Tonight will be parmesan crusted tilapia, rice and a yet to be determined green veggie.

Tomorrow we are treating my BIL, SIL and Dnephew to dinner out to celebrate their closing on their new house today! And Sunday is Easter, which I am not hosting, so I get off easy this weekend!

DH has decided to go low carb with me for a few days this week and a few days next week too. I haven't got all the sides sorted out yet because we won't be having any starches for some of the nights and when we can have them, we'll just eat what we may be craving...the veg will be salad until it runs out and then frozen veggies after that and then back to salad next Sunday or so.

Tues: Surf and Turf (steak and shrimp)
Wed: BBQ Pork Chops
Thurs: Chicken breasts
Fri: Homemade hamburger helper
Sat: Bean and Rice Burritos

Saturday 6: Chicken stir fry with rice
Sunday 7: Not sure, but something light - we're having lunch out with friends after church.
 
We spent the day in the ER with my grandma. She is okay, she was dehydrated. So we stopped for takeout on the way home.

Been away from this thread for awhile and it's time to get back on track.

Sunday was dinner at our house for 15 people( small crowd this year).
Monday: Left overs from Sunday, Ham, potatoes, sweet potatoes, corn
Tuesday: Homemade pizza and salad
Wednesday: Sheppard's pie
Thursday: Meatloaf, roasted potatoes, broccoli casserole
Friday: Cheesy chicken in the crockpot
Saturday: Clean out the fridge day. Finish up all the left overs.
 
I'm a bit late this week, but here's our menu:

Saturday: Beef stroganoff over egg noodles with peas
Sunday: Taco Salads (I got the pans to make the shell bowls and they worked great!)
Monday: Pork chops on the grill, baked beans, tossed salad
Tuesday: American Chop Suey, garlic bread, tossed salad
Wednesday: Roast beef, baked potatoes, corn, squash
Thursday: Leftovers and/or breakfast for dinner
Friday: Take out - probably Chinese

Sunday-Breakfast- Hash browns, turkey sausage and cinnamon rolls
Dinner- Baked ziti w/ meat, green beans, garlic bread ( We had Easter dinner the night before at my in-laws house and a dessert party at our house for 20 people on Sunday afternoon).
Monday- Turkey kielbasa, gnocchi, spring mix salad w/ walnuts and craisins
Tuesday- Beef in mushroom gravy in crockpot, noodles, mixed veg.
Weds- something fast, dd12 has dance class
Thursday-Rosemary chicken and red potatoes( I use the seasoning packet from McCormick), aspargus
Friday-Chili and cornbread, fruit

my week is pretty quiet.. just the Hubs and myself..

Sunday for Easter dinner we had steak on the grill, roasted brussel sprouts for me, onion rings for hubs and salads for both of us
Monday - Hubs had shepard's pie and garlic bread and I had tilapia and sauteed cabbage
Tonight - we both are having grilled chicken, sauteed zucchini and hubs will have some pasta
Wednesday - we are both having pizza - hubs will have the traditional crust and I'll have a low carb crust made from shredded chicken and cheese. we will load on the veggies and some meat..
Thursday - we both are having burgers Hubs will have a bun and I'll have mine on a 1/2 of a low carb wrap
Friday - Hubs is having Chinese - potstickers, eggroll, rice and chicken and I'll have grilled shrimp and brussel sprouts
Saturday and Sunday I don't really know yet..
