Buffalo chicken bites, unsure what to have with these yet
White chicken enchiladas, rice

MominKC - thanks for your review of the pepperoni rolls! I will be on the lookout for how long mine take to cook, thanks for the heads up.

we are off monday d/t the mlk holiday. i have to work overtime so monday i am going to either cook or pre-assemble food. that way when i work late i can either warm it up in the microwave or pop dinner in the oven when i get home. leftovers will be used 4 lunches or frozen for meals another week.

tonight we are having dinner at my sisters.
the rest of the week i will be making
lasagna or spinach lasagna rolls
puertorican stew and rice
chilli/rice/cornbread/salad
chicken soup
breakfast for dinner
spaghetti/meatballs/italian sausage

all meals will have salad, fruit, and or veggis servied with them.

Tonight we are having meatball and tortelinni soup (eat at home) and Zucchini crispy oven chips (Pinterest).

UGH!! I was at a birthday party with my youngest. Left instructions for dh to just heat up meatballs and sauce and boil water for the pasta.

Got home and he is out getting Chinese. :headache: Guess we'll have the meatballs tomorrow. But was that really too much effort? Heating up?

Last night ds9 had a friend over for dinner, so I made frito pie, his favorite. It's just basically like tacos w/ fixings but over Fritos instead of in taco shells. Today has been completely crazy busy, dh made canned bean w/ bacon soup & grilled cheese while I was helping at dd12's b-ball fundraiser. Dd6 slammed her fingers in dh's pickup door, we had an emergency room visit & x-rays, she just has a cracked bone in 1 finger, so is wearing a splint for a few days. It was probably around a $700 boo-boo!

I had the flu pretty much the whole week. I still had to cook though! I made tortilla chicken soup and had that for lunch the next day. I made a stir fry with chicken and all the leftover frozen veggies, and tonight I made salmon wrapped in puff pastry. That one is a keeper and I will put it up on my blog tomorrow. Another good one we had this week was ground beef chimichangas with a white chili sauce.

I've been doing well this week, haven't gone out to eat once! :thumbsup2

Last night we had ziti that I had previously made and frozen.
Tonight we are having people over for dinner and I'm making roasted chicken, potatoes, brussels sprouts w/a maple balsamic glaze, steamed carrots and mini cherry cheesecakes.

I ended up not going shopping as expected last night because we took dinner to my MIL's house. She's been sick and we wanted to tempt her to eat, but she hates my cooking. So we picked up $60 worth of "dinner to go" from the market - there were eight of us, so not too bad, I guess - and went over there.

So I still have that chicken, which is roasting right now, and we'll have that tonight (with dry-roasted okra, roasted diced potatoes, and homemade applesauce). Over the weekend I made bean soup so we'll have that tomorrow and half will go into the freezer. The rest of the week will be:

Wednesday: garlickly beans, kale and pasta (trying a new corn pasta - keep your fingers crossed!). This is a basketball night so I appreciate that this cooks very quickly and is a complete "one bowl" meal.
Thursday: falafel in pitas with lemon tahini sauce, shredded veggie salad
Friday: Nachos (tortilla chips smothered in taco meat, cheddar cheese, salsa, homemade pickled peppers, diced black olives)
Saturday: Pork chops, saurkraut, glazed carrots, socca
Sunday: the guys are going skiing, so my daughter and I will make some cajun shrimp pasta as a treat (my son and husband both hate shrimp - crazy!)

How do you know she hates your cooking? Did she tell you or tell your DH?

I wonder if my inlaws hate my cooking too cause I bring food over there sometimes for their freezer yikes! (MIL is sick)

Just wanted to welcome aboard anyone who is new!:welcome:

Saturday I threw together a quick playoff party which went very well:banana:

Tonight I am making waffles with ice cream strawberries and homemade whipped cream ( dd's really like my pregnancy food cravings ;))

Tomorrow I think I shall make a soup

Wednesday I have a drs app and will go grocery shopping after
