Eat at home 2!

Last night turned out to be "one of those nights", both DH and I got home late from work and were too tired to cook. But instead of grabbing take out (which is what I really wanted to do!), we found stuff to eat at home. I had a frozen french onion soup and he threw together some chicken and pasta. I'm really glad we did, I would have been so mad at myself if we bought food!
 
Well, we wiffed last night. I got home from work and wasn't feeling all that great and was frustrated about some other things so my husband rounded us all up and got us out of the house. We ended up eating a fairly modest - but nice - meal at a local pub that came in under $50. Not all that terrible, and at least I didn't have to clean up!

When we got home I started soaking beans right away for soup since tonight is a basketball night. Originally it was going to be kale and beans, but I just want something simple instead. I've got a box of medhu vada (little "donuts" made of lentil flour - so gluten-free) in the freezer so I'll get those out for dipping.

Even though I'm not even dressed yet for work, it's nice to know that there's a dinner plan!

What's a zucchini plank? Sounds interesting - and maybe a good thing to help use up summer squash excess!
 
Must have been something in the air last night. Local pizza place was having customer appreciation night. So 3 large pepperoni pizzas came to less than 15 bucks. Made a salad and had dinner with my sister and our family. There's leftovers for lunches today. Could have been way worse on the budget, but I still don't like deviating from the menu plan when we have a trip we're saving for.
 

would you mind sharing the recipe? this sounds really good.

This is the one I'm making. I haven't tried it yet, but it looks good. :) I might have to tweak it some and use some things I have on hand.

Low-Fat Loaded Baked Potato Soup

3 large baking potatoes , peel and cut into 1/2-inch dice

1/2 large yellow onion , chopped

2 (14 1/2 ounce) cans low-sodium low-fat chicken broth

1/8 cup margarine

1 teaspoon salt (to taste)

1/2 teaspoon white pepper

3/4 cup fat-free half-and-half

3/4 cup low-fat sharp cheddar cheese , shredded

2 tablespoons fresh chives , chopped

4 ounces low-fat sour cream

3 slices turkey bacon , cooked and crumbled

Directions:

1. Combine first six ingredients in a slow cooker.

2. Cover and cook on HIGH for 4 hours or LOW for 8 hours,until potatoes are tender.

3. Remove 1 cup of mixture and mash potatoes; return to cooker.

4. Add Half and Half, cheese, and chives; mix well.

5. Heat thoroughly.

6. To serve: Top with dollop of sour cream, sprinkles of cooked bacon and more cheese, if desired.

Just saw this thread and love the idea! I'm a very busy mommy who rarely gets home before 6:00 or 6:30, so am always looking for ways to get good meals on the table (whether I'm prepping them or DH is).

I'll post what our week looks like. It's not a typical week - I had outpatient surgery on my leg yesterday, so we had leftovers last night...

Sunday: Soy Ginger Salmon w/Broccoli & Rice
Monday: Chicken Apple Sausage Stir Fry w/Rice
Tuesday: leftovers - pizza for DH and me, pasta for the kids
Wednesday: Chicken Paprikash (that my grandma made and brought over last weekend - my FAVORITE meal!)
Thursday: Turkey Joes w/sliced raw veggies
Friday: Taco night!

Just saw this thread and love the idea! I'm a very busy mommy who rarely gets home before 6:00 or 6:30, so am always looking for ways to get good meals on the table (whether I'm prepping them or DH is).

I'll post what our week looks like. It's not a typical week - I had outpatient surgery on my leg yesterday, so we had leftovers last night...

Welcome!

Tonight I have put on a BIG pot of chili in the crockpot. We will have crackers and cheese with it. I made enough for a "recycled" meal of Fritos Chili Pie later this week.

Patting myself on the back I made Tortillas!! :cheer2:

Tonight I am using the leftover pulled pork for some quesadillas. Which wouldn't be made without the tortillas.
 
We had salmon with a parmesan crust, baked potatoes, and broccoli. The salmon was good for a change.

It was on the back of the salmon package. I was going to just use some pesto but it sounded good so I made it. It was really, really good. I know I'll make it again. :) I'll get the package.

Creamy Parmesan Salmon Fillet (serves 4-6)

1/2 c. mayonnaise (I used the kind with olive oil -- worked fine)
1 tsp garlic powder
1/4 c grated Parmesan cheese
1 tbsp fresh chives minced
1 tbsp fresh lemon juice
Salt and pepper to taste
Salmon

Preparation instructions:

1. Preheat the oven to 400.
2. In a small bowl combine all ingredients except the salmon and mix well.
3. Spread mayonnaise mixture over the top of the salmon covering all of the meat.
4. Place salmon, skin side down, on a parchment lined baking sheet and cook for 25-30 min. until the fish flakes with a fork and the topping is golden brown.

The one time I didn't have lemon on hand. Plus no chives tonight. But it was wonderful even without those two things. If you give it a try, let me know how you like it! Everyone really liked it at our house. :)

Hellman's has a similar recipe for parm crusted chicken. Yummy!
 
Oh, please review the cheesy chicken casserole, I've never made it.

We ended up having grilled cheese and tomato soup as we were short on time because of kid's activities. I'd like to try it, it looks yummy! Tonight was chicken & vegetable soup and crescent rolls. It's been cold here so soup is hitting the spot:).
 
A funny thing happened at store the while I was shopping today. This toddler was talking loudly about the pancakes he was going to have for dinner. He and his mom were talking about them. The clerk said he made the pancakes sound pretty good and she was going to make pancakes for dinner. I said I was too! And I did. :)

I had about 4 bananas that were getting too ripe, so I threw them in the mix. I used 1/2 c. almond milk, a tsp. of vanilla, and just one egg with some Bisquick. Then I made two batches to make everyone happy. I made banana blueberry and banana chocolate chip pancakes. We had turkey sausage with them. I think it was the best I have ever made. :upsidedow
