My DH isnt a big rotisserie chicken fan. He doesnt like just slicing the chicken and serving it with sides. Since it is just the two of us, we make the chicken go a long way.

I usually take the meat from one side of the breast and make chicken caesar salad wraps or in a pita.

I take the dark meat and make what I call Mexican Chicken. I take a can of Rotelle tomatoes, a can of corn, a can of black beans and I bring that to a simmer, add the chicken shredded or just pulled apartm add some fajita seasoning or some taco seasoning (packet) and heat for a little bit and serve over rice. Very easy, very quick and it was pretty yummy.

With the rest of the breast meat, I usually make sandwhiches and bring for lunch.

Got good news for today, my MIL is sending over some stew so I dont have to cook tonight!!!!


Those are some good ideas for the chicken, our store has whole chickens on sale for 99 cents a pound, I think I'll pick up another one to make for recipes, I'm making broth to put in the freezer too.
 
tonight - breakfast - scrambled eggs with sister shuberts with sausage
thurs. - bunco - dh and dd eat hotdogs and tator tots
fri. - cream cheese chicken in crockpot
sat. - chicken and dumplings
sun. - corn muffin chicken casserole
 
I haven't posted to this list for a while!

But so far this week we had:

Sunday: seitan baked in barbecue sauce, steamed broccoli, baked spicy sweet potato wedges

Monday: black bean enchiladas and green salad

Tuesday: scrambled tofu with curry spices and lots of vegetables, plus steamed broccoli

Tonight: baked sweet potatoes topped with garlic hummus and salsa, with green salads (with cucumber, celery, and cherry tomatoes)

Tomorrow: Lentil vegetable soup in the crockpot

Friday: I'm the only one home for dinner, so I'm thinking I'll make quinoa burger patties and eat up whatever veggies are left in the fridge!

This week:
Monday - lentil one pot casserole (WW recipe, DH had his w/a fried egg on top)
Tuesday - chicken stuffed w/spinach and cheese, cauliflower puree, roasted fingerling potatoes
Wednesday - sirloin steak, leftover potatoes, collard greens
Thursday - pork stir fry
Friday - hot dogs and light potato chips
Saturday - ?
Sunday - roasted chicken, fresh baked bread, potatoes, veggies, mini cherry cheesecakes (WW recipe)

I am really trying to eat at home more and save some $/calories on eating out!
 
Easy dinner tonight- steak fingers and mac & cheese. Oh and glazed lemon poppy bread for dessert :goodvibes
 
Fighting the urge to get take out or go out to eat tonight. The reason I don't want to cook is because I am tired and cranky. I'll still be tired and cranky if we go out.. and will have spent money I didn't want to spend. So.. off I go to the kitchen.:rolleyes1
 
Changed dinner tonight to homemade baked macaroni and cheese with salad. We took longer running errands than I had anticipated and it takes too much time to make the breakfast casserole. We will have that later on.
 
I realized I forgot to post this week.
Mon-hot dogs & chips (soccer practice day, so something quick)
Tues-BBQ chicken, fries & steamed veggies
Wed-breakfast night (eggs & sausage)
Thurs-twice baked potatoes, salad & french bread (stole this idea from this thread)
Fri-Texas Roadhouse (out for DH's bday dinner)
Sat-fried chicken from store, throw a few sides together
Sun-enchiladas & Spanish rice
 
O'Charley's sent out $10 gift card for a purchase of $25 or more so DH and I get to go out to dinner tonight! The kids are with grandparents!! :cool1:
 
Had a 1/4 cup of leftover grilled onions and peppers, so I added some canellini beans, vinegar&olive oil to marinate them, yum.

Just made some pizza dough - it's rising now. I have leftover meatballs and sauce along with some mozzarella cheese, so we're having homemade pizza for dinner.
 
It was a loooong week here, and I was so very tempted to eat out tonight!!! I held strong though! I also went the whole week sticking to a GF diet! Yay me!! :rotfl:

Saturday- leftover Mexican soup, tortilla chips
Sunday- Salmon, mashed potatoes, sauteed zuchini, salad
Monday-Barbecued chicken, mashed potatoes, salad
Tuesday- (crazy band day) Tuna wraps, chips, fresh fruit
Wednesday-Black bean tostada's, spanish rice, fruit
Thursday- Clam Chowder, cornbread
Friday-chicken tettrazini, salad
 
So, my schedule for the next week has really changes from normal. School starts and I will actually be home every night over at least the next week. So I had to come up with MORE meals AND get them to fit on the days needed. Mom will still be working late during the week itself (not as late on weekends) and I will be cooking for myself Tuesday and Wednesday before I even go to class (so more like a late lunch).

So, this is what I came up with:

Saturday: Healthy, Homemade Chicken Noodle Soup and Crackers

Sunday: Eggs, Chicken Sausage, and Toast

Monday: Baked Falafal Pita Sandwich and Salad

Tuesday (class): Leftovers or something from the freezer

Wednesday (class): Baked Potato and Salad

Thursday: Veggie Tikka Masala (Spinach, Squash, Mushrooms, Onion, and Bell Pepper), Rice, and Pita

Friday: Leftover Tikka Masala, Rice, and Pita (this stuff makes a huge batch)

Saturday: Steak, Baked Potato, Salad

Sunday: Chicken Tacos (Fajitas) and Fiesta Lime Rice

Then Monday is the next grocery day! This weeks bill is going to be on the higher end I think, even though I don't need meat. Lots of fresh veggies will be needed though!
 
I keep putting off going to the grocery store! Somehow I've managed to put together meals with what's available in the pantry and freezer. I *think* I'll get away with it through the weekend, but only because I won't have to pack lunches for school and there's still milk for coffee. Sunday's really going to be the outer limit, though.

Tonight I made coq au vin, mashed potatoes (pre-made and frozen), green beans (frozen back in August), and applesauce (canned in October). I took a whole chicken out of the freezer which I'll roast tomorrow. Not sure what I'll serve with it yet - maybe kale and/or cauliflower and some kind of seasoned rice. There should be enough leftovers to power Sunday's post-church lunch.

After that I really MUST head to the market!
 
Tonight we're going to attempt to make the pizza rolls I posted in my menu post. So far this week we've had the chicken and dumplings (very good but for our family next time we need to double the recipe!), Hawaiian bbq chicken (GROSS,I do NOT recommend. My DH wouldn't even take the leftovers for his lunch), and baked spaghetti (REALLY good!!!). Hopefully the pizza rolls turn out good. We're having fun trying all these new recipes:goodvibes

MominKC - how did those pizza rolls turn out?? They look sooooo good! We are planning to have them SAt. night. but I'm going to use my homemade dough.

They were good! We went ahead and put pizza sauce in them. The recipe says to dip them in the sauce, but they were just fine with the sauce inside. It also took almost double the time to cook it seemed :confused3 Definitely something the family all said they want again :thumbsup2
