Eat at home 2!

Well, tonight would normally be one of those nights where I fall into old habits and get fast food (bad for both the "eat at home" target AND the new healthy lifestyle). My boyfriend is sick so I will now be home for dinner... and without a plan. Luckily, I have some left overs so I will heat those up tonight!

So tonight will be:
Baked Chicken Parmesan
Spaghetti
Garlic Bread (made with a hamburger bun with butter and garlic powder and then broiled)

The thread has me sitting at my desk thinking of what I will make the rest of the week and next!

Maybe mexican chicken or shrimp with broccoli and stewed tomatoes.

Boy am I hungry :)

So for this week we have

Tonight one pot chicken, potatoes and onions in this chicken stock yummy to dip it up with french bread- which we'll also have

Wed. Crispy spicy Beef with Broccoli(thanks to this thread!)

Thursday Crispy chicken thighs, rice and broccoli

Friday Turkey Balls with spaghetti , garlic bread and salad

Saturday Pork chops, corn , and roasted potatoes

Sunday Flank steak! Fries and green beans
 

Pigletto, thank you so much for posting your pizza dough recipe!! It's alot like the one I make except for the milk.
 
Tonight was Mac & cheese, fish sticks & mixed veggies, still using up the pantry & freezer. This thread has kept me on track this week, I've had a cold, no energy & no menu plan but am still plugging away at eating at home:).
 
Pigletto, have you ever frozen your dough for future use? I'd love to have a handful of Pixza doughs in mine.

That's a good question. The other night was the first time I made it.
I'd love it if I could, because it would be a really easy week night supper! But making it at dinner time and needing the 45 minutes of rise time makes it unlikely that we will. By the time I'm done working, it's 5, sometimes 6pm and too late to start the process.
 
Have not eaten out since 1/2!

Had soup and grilled ham and cheese tonight

Beef with snow peas and jasmine rice tomorrow night

then...husband and I are going to try a juice fast. A friend recommended we watch Fat, Sick and Nearly Dead on netfllix....basically these people lose massive amounts of weight juicing fruits and vegetables for all meals, and that is all they consume for x amount of days. Not sure how long we will last, especially since I work night shift, can't imagine not "eating" all night.....

but we still have the kids, so I ideas of what to make them:
tacos x 2 nights
ravioli
grilled chicken
steak

I'm really not sure how this is going to pan out, we shall see.
 
My new favorite easy at hone dinner is a rotisserie chicken (on sale at Target today for $3), Stove Top stuffing, and refridgerated mashed potatoes. Makes enough for plenty of leftovers, too!

We pick them up from Costco a lot. Throw a few sides with it and voila, dinner is served!
 
Last night I gave in to temptation and we had chinese takeout. We had a busy day and I was in no mood to cook. The upside is that where we go you get so much for your money that we have lunch tomorrow as well.
 
had spicy bean enchiladas last - was a nice quick and easy recipe...
tonight is broc cheese soup, a new recipe I am trying so hopefully its good!
 
Tonight we're going to attempt to make the pizza rolls I posted in my menu post. So far this week we've had the chicken and dumplings (very good but for our family next time we need to double the recipe!), Hawaiian bbq chicken (GROSS,I do NOT recommend. My DH wouldn't even take the leftovers for his lunch), and baked spaghetti (REALLY good!!!). Hopefully the pizza rolls turn out good. We're having fun trying all these new recipes:goodvibes
 
Change in plans for tonight
Hi Everyone --
we are having BBQ Boneless spare ribs in the crockpot, Tater Tots, Broccoli and Carrots for dinner
Rest of the week is still on track

Thursday is Mock Chicken Parm using leftover homemade ranch chicken nuggets and the leftover baked spaghetti and leftover garlic bread

Friday is late date night - we signed up to make Team Dinner for the HS Ice Hockey team then we'll go when our part of the dinner/clean up is done

Saturday is Steak tips, Loaded baked, Corn

Sunday is grocery shoppping day and when the kids come back home so we'll see what we end up with.
 
I wish we had a costco nearby, the closest one is 4 hours away, I've heard their rotisserie chickens are amazing! Our little store has awful ones, so I'm making one in the crockpot today. The next few days are:

Crock pot rotisserie chicken, mashed potatoes, peas

Tuna melts, salad, chips, apple slices

Baked potato soup, broccoli & carrots w/ dip, rolls

Their rotisserie chickens are really good and quite a bit bigger than the ones our local grocer sells. They are also cheaper by a few $$.
 
Same thing with our Sam's club here... bigger and little less $$
 
My DH isnt a big rotisserie chicken fan. He doesnt like just slicing the chicken and serving it with sides. Since it is just the two of us, we make the chicken go a long way.

I usually take the meat from one side of the breast and make chicken caesar salad wraps or in a pita.

I take the dark meat and make what I call Mexican Chicken. I take a can of Rotelle tomatoes, a can of corn, a can of black beans and I bring that to a simmer, add the chicken shredded or just pulled apartm add some fajita seasoning or some taco seasoning (packet) and heat for a little bit and serve over rice. Very easy, very quick and it was pretty yummy.

With the rest of the breast meat, I usually make sandwhiches and bring for lunch.

Got good news for today, my MIL is sending over some stew so I dont have to cook tonight!!!!
