Last night I went to the Rascal Flatts concert and mom had Chinese chicken salad.

Tonight we had oven baked chicken tenders, home fries, carrots, and apple slices.
 
We also had Little Caesar's last night. It was grocery day, too.

Saturday/Monday: Italian sausage and pepper sandwiches, potato salad
Sunday/Tuesday: Chicken/rice casserole, black eyed peas, hoe cakes
Wednesday: Leave for WDW! :cool1:
 
Tonight I made Chicken Italian Stew: Chicken legs, 2 cans of stewed tomatoes, green peppers, zuchinni squash, onions, potatoes. All cooked together in a deep skillet w/ lid. It's 1 of my fav. meals!

Last night we ordered a pizza b/c we had a baseball game & no time to cook.

Tomorrow I'm thinking nachos and tacos.

I am so excited for you! I am starting to price Star Wars weekend but the system is saying hotels aren't available right now:(

Here's our menu for this week:

Sun - dinner out (we went to Applebee's)

Mon - Tacos & refried beans (maybe corn on the cob)

Tues - Sausage, egg & cheese English muffins & fruit

Wed - Grilled chicken sandwiches, sautéed green beans, fruit (maybe)

Thurs - Hamburgers on the grill, corn on the cob & fruit

Fri - Sloppy joes (or Grilled chicken from Wed)

Sat - Chicken kabobs (or stir fry) corn on the cob, salad, fruit

I went to the produce market and got a ton of fruit and veggies. My cousins bday is Wed and my aunt usually does some type of dinner but I haven't heard anything from them yet so I've planned a meal.
 
This week is a lazy kind of week. I didn't feel like doing anything too elaborate and want to use some things up
Monday - make your own burritos with beef, chicken, rice, black beans, avocado, cheese, salsa
Tuesday - French toast, pancakes, potatoes, fruit
Wednesday - pasta and salad; chili for son who doesn't like pasta
Thursday - hosting a cookout with friends - grilled chicken, hot dogs, coleslaw, watermelon, chips, cookie bars
Friday - kids have a pizza party pep rally for swim team. DH and I will have leftovers
Saturday - not sure yet, we are wiped out on swim meet days, maybe pita pizzas or something else easy
Sunday - always a "to each his own" night
 
Our menu for this week...

Tonight: Pork tenderloin, sauteed mushrooms/zucchini/squash
Tuesday: Artichoke spinach chicken, fresh tomatoes & cucumbers
Wednesday: Ginger cilantro tilapia, avocado, couscous/quinoa blend
Thursday: 4th of July get-together at my house - Low Country Boil, watermelon, cole slaw, cookie bars
Friday: Either leftovers or might just go out to eat
Saturday: Turkey burgers, sweet potato fries
 
My son made sauerbraten and buffalo chicken dip this weekend--my house smells terrible! :scared:

Anyway:
Sunday--sauerbraten, mashed potatoes, brownies
Monday--chili dogs, seasoned fries, orange slices
Tuesday--grilled chicken ceasar salad
Wednesday--ham steaks, green beans with yellow pepper butter, twice-baked mashed potatoes (leftover from Sunday)
Thursday--grilled brats, baked beans, corn on cob, ice cream
Friday--summertime corn chowder, bread
Saturday--eating at my parent's house (taking fresh fruit)
 
We do a whole lot of fish (catfish, salmon, and tilapia) and I'm running out of ideas for variety. Also, any ideas on sides to go with?

I usually serve rice with fish. A friend just made this yummy baked salmon for us with a marinade of balsamic vinegar and honey.
 
We ended up having Panera for dinner. I worked two hours later than I was supposed to today and was way too tired to cook.

Tomorrow night the plan is tacos with spanish rice.

Here you go! :) I've never made this before, but I have a similar recipe for tilapia that my boys just love, so I'm hoping this turns out well.

Artichoke Spinach Chicken

1/4 cup light mayonnaise
1/4 cup grated Parmesan cheese
1/3 cup shredded mozzarella
1/3 cup chopped artichoke hearts
1/2 cup baby spinach
Squeeze of fresh lemon juice
Hot sauce, to taste
4 boneless skinless chicken breasts

Preheat oven to 425. Spray a glass baking dish with cooking spray.

Combine mayonnaise, Parmesan, mozzarella, artichokes, and spinach. Add the lemon juice and hot sauce. Salt and pepper to taste. Place chicken in the baking dish; top each breast with 1/4 cup artichoke mixture.

Bake 30-40 minutes.
 
Sunday we had tacos.
Monday night we made nachos with the leftover taco meat, beans, cheese- it was yummy! Also had zucchini squash as a side.
Tuesday (Today!)- Baked breaded chicken cutlets, spinach w/ garlic oil, and brown rice which I added stewed tomatoes and garlic to.. was delicious!
Wednesday- We might have grilled cheese w/ tomato sandwiches.
Thursday is 4th holiday and going to a BBQ.
weekend meals are not planned out yet.
 
We had pan fried strip steaks with baked potatoes, carrots, and watermelon.

Dessert will be berry shortcakes.
