We enjoyed dinner at the local Greek festival. Good food and the money goes to a good cause.
 
Well, I went to the grocery store Sat and Costco Sun, and still don't have a plan for the week. UGH! All I have accomplished so far:

Last night we had Salmon, couscous and broccoli; fellow posters, we are supposed to be healthy and eat lots of fish, have you seen how much fish has gone up in price????? The Salmon at Costco, I could not afford the "fresh from the USA"; it has tripled in price; I went to the "frozen from Chile" which was $10 cheaper but still expensive; ugh; any suggestions on how to buy fish cheaper, and not the imported from China?

Tonight- Chicken spaghetti and spinach salad

Questions:

Eureka - how do you roast your cauliflower?

I will post again tonight once I figure out the rest of the week.
I did make homemade pizzas Friday since my brother and his kids came in for the day; my mushy spinach loaf was pretty good as a meatball pizza

Eureka - how do you roast your cauliflower?

Break the cauliflower into small florets and toss with a little bit of olive oil, salt and pepper. Spread out on a cookie sheet and bake at 400 for 15 minutes or longer, depending on how crunchy you like it (and how big the pieces are). Then sprinkle some grated parmesan on top for the last 5 minutes and broil.

Yummy, and the cheese gets crispy and nutty.
 
Oven fried squash:

Preheat oven to 400. Thinly slice squash. (We do one squash per person if the squash are small. I prefer the smaller ones because they are much more tender.)

Mix an egg wash (whole egg or just white is fine) with either water or milk.

Season cornmeal with salt and pepper.

Spray baking dish or cookie sheet with baking spray and a little oil (can do just baking spray).

Dip squash in egg then cornmeal mix. Put in single layer in baking dish. This part is very important! Single layer only!! You can spray the tops with baking spray or very lightly drizzle a bit more oil over the top, but just a little to keep the pieces crispy.

Bake 12-15 minutes until golden or as crispy as you want. Serve immediately. Yummmmmmy......
 
We had small sirloin steaks with hash browns, and apple slices.

Tomorrow night the plan is crock pot beef and broccoli over rice.
 
I have not stayed on target at all. Too much junk going on. Too much stress. I will be going out of town for awhile and will try to get back on track when I get home.
 
I shopped for the week last night with the Eat at Home meal plan....
last night we have red beans and rice with ham, salad and tonight I have a pork roast in the crock pot for pulled pork sandwiches and hashbrown casserole.
I am hoping to not visit the grocery store until the weekend or even next Monday!
 
Hi all - long time lurker here! During the school year my husband cooks during week and I handle weekends, holidays and lunch box duty. Now that I'm off for the summer, I handle all the meal planning, and there is huge shift in how we eat- it's so easy to take the kiddos to chic-fil-a after camp and I dont want to fall in that rut!! I really do love spending time at the markets and fields and cooking my summers away! So, I'm hoping my posting will keep me on the right track- I've had some great meals thanks to many of you!

So,
Last night- cola marinated London broil, baked potatoes and brown sugar carrots
Tonight- grilled adobo pork, saffron rice and tomato/cucumber salad, oatmeal choc chip cookie bars
Wed- buffalo chicken wraps, cucumber/vidalia salad,
Thurs - Cajun BBQ chicken, macaroni salad, angel food cake and strawberries
Friday - hubby and sons are at a ball game, so I'll do leftovers. If its a rainout, cheese omelets and sausage.
Saturday - attending neighbors BBQ
Sunday - NY strips, grilled corn and homemade banana bread pudding.

Lunches - I have bowl of fruit salad already made, yogurt, cottage cheese, a lb of turkey and cheese, spinach wraps and chips. That should get me to the weekend!

this week is just the Hubs and I but it's hotter then hot around here ..
Monday - Grilled steak & corn on the cob, O-rings and loaded banquet potato bites.
Tuesday - Grilled chicken, leftover stuffing, sauteed cabbage and salad
Wednesday - Grilled spareribs, leftover rice a roni, salad
Thursday - Hubs will have leftovers and I'll have fried tilapia
Friday - homemade Chicken Alfredo with garlic bread
Saturday - homemade pizza and movie at home date night!
Sunday ??

They are really good. The worst part is the breading of the squash.

We had my DD's boyfriend over yesterday so for the first time in a long time, we at Little Ceasars $5.00 pizzas for dinner last night. I have class til almost 5 Monday thru Thursday and I hope to go grocery shopping tonight.
