Well I was going to say my menu for the week changed but I don't think I posted it..
everyone is home this week plus my parents are in town to do some work at my house and my gramps.. (we are getting a new screen door, a new floor in our hallway leading to the back door - it was rotten, some new shelving and maybe new faucets if my dad has time!)
Monday - Sloppy Joes
Tuesday - Meatloaf, fresh green beans and pasta roni for everyone but me
tonight - Pizza from a local store 2 large one topping for $16 ! I will make a homemade pizza on a low carb tortilla
Thursday - Meatball subs - I will have dreamfields pasta with a meatball and sauce
Friday - General Tso chicken & plain chicken strips, fried rice, egg rolls, pot stickers - I will have a frozen atkins meal
 
I need a plan for the next few days and will have to do my grocery shop on Friday night since this weekend is crazy. I'll update once I make my menus but so far..

Thursday night.. Baked Parmesan Chicken, Salad, Baked Potatoes (Fish for dd)
Friday.. Frozen pizzas, garlic bread and salad. Easiest thing I can think of. We have a crazy busy weekend and I just want to relax after work tomorrow while I can. Then it's off to do groceries.

Well, I have already mixed up my menu for the week. Am I the only one out there who gets mad at themselves when they work hard on dinner and it doesn't turn out right? My guys were nice enough to eat it and say it's okay. I made my usual Turkey Spinach Loaf last night. But, I realized I didn't have enough fresh spinach so I used a bag of frozen spinach instead. BIG MISTAKE. Too much mushy spinach and the "loaf" wouldn't set right. It was done, but just too mushy. All that work. I made two loaves and put one in the freezer for another day, maybe I can slice it and make it into a "meatball" pizza. On to an easier and more reliable dinner tonight.

Ugh!!! I had the exact same kind of night. That chicken I made was awful!! And not only was it awful but I rushed around like a crazy person trying to make something decent before our soccer game and it was a complete fail. The whole double batch went in the garbage and we had toasted peanut butter and jelly and ate it in the car on the way to the game.:crazy2:
I hate when that happens.
 
Tonight: the last of the sweet Italian chicken thighs and green beans. Pineapple.
Saturday: Chicken Santa Fe (black beans, tomatoes, zucchini, Mexican spices) with brown rice. Kiwis for dessert
Sunday: Slow cooker beef curry with oven roasted curried cauliflower; yogurt and berries for dessert
Monday: Leftovers from Sunday
Tuesday: Garlic lemon pork chops, peas, peaches and gingersnaps for dessert
Wednesday: Leftovers from Tuesday
Thursday: Spaghetti and Meatballs, broccoli, citrus salad
Friday: Salmon cakes, corn on the cob, peaches
Saturday: barbecued beef, potatoes and more corn, strawberries
 
We had Chinese take out tonight. First time in three weeks that we've had take out, though. Today was also grocery day.

Saturday: chicken salad, seafood salad, deviled eggs, and fruit
Sunday/Tuesday: sloppy joes, oven fried squash, tomato/cucumber/onion salad
Monday/Wednesday: baked spaghetti, veggies and dip, garlic bread
Thursday: fish sandwiches, pasta salad, cucumber/onion salad
 
Not a very exciting menu this week.

Sunday: Pizza with neighbors
Monday: Lasagna with Zucchini from the garden
Tuesday: Leftover Lasagna with green beans from the garden
Wednesday: Crock Pot Fajitas (more zucchini)
Thursday: Bangin' Good Shrimp and green greens (copy of Bang Bang Shrimp)
Friday: Take Out - dd's choice for graduating kindergarten


My garden is doing well and I have more zucchini than I know what to do with. I started freezing it. Any suggestions? I have read just chop it up and freeze it to shred it for muffins and some say I should blanch it or cook it first.
 
This week was a bad one eating out wise. But I am back on track.

Tonight we had London broil with potato pancakes and spinach salad.
 
My menu always seems to be changing!
They had a parade and picnic locally today so we did that- had hamburgers, hot dogs, sausage and peppers.. it was free! So that pushed back our pre planned menu.
Tomorrow (Sunday): Going to have peppers and egg subs for lunch that was supposed to be for tonight's dinner. Then having Tacos for dinner.
Monday: Spaghetti with sauce, broccoli and italian bread
Tuesday: crock pot beef stew
Wednesday: pizza ($6 deal at local pizzeria)
Thursday: Pierogies w/ sauteed onions and baked beans
Fri-Sun, TBD!
 
Back from a week at the beach. We cooked most of the week but were with another family so it was not all on me. So, if I *have* to go back to real life, at least I had a break and am ready to cook again.

Sunday: grilled chicken ( broiled if the rain doesn't stop), roasted cauliflower, rice
Monday: turkey burgers, sweet sausages, baked beans and corn on the cob
Tuesday: tortellini and salad/ frozen fish for non-pasta eating son
Wednesday: leftovers
Thursday: soup, sandwiches, salad
Friday: homemade pizza, salad
Saturday: grilled steak and baked potato, salad -- hearts of romaine were b1g1f, gotta use it up!
 
We have been on the go with summer sports. So it's been quick and easy meals for the most part. Haven't really planned meals much in advance. Just kind of have an idea a day or less in advance and go with it.

Tonight- BLTs and veggie chips

Mon.- Ham and cheese calzones with potato salad

I have some fruit and yogurt to go along with the meals. The rest of the week, not sure.
 
Battled morning sickness/fatigue for awhile & I just haven't had the energy or desire for meal planning. I'm ready to cook again. Some of these meals may not happen as my brother is coming for a visit after spending many months in Afghanistan. We might go out to eat one night or go to my mom's for dinner.

Tonight: No idea, LOL. DH usually likes to grill on Sunday nights, so I'll leave it up to him.
Monday: Cajun Stuffed Chicken, Louisiana rice, fresh tomatoes/cucumbers
Tuesday: Spaghetti & salad
Wednesday: Leftover spaghetti
Thursday: Tilapia, sauteed kale, corn
Friday: Cajun Jalapeno Cheeseburgers, sweet potato fries
Saturday: DH will grill - probably salmon
 
We've done really well with our eating at home the last week. I started Weight Watchers online last week and DH is doing his own calorie tracking program. We had our first weigh in today and I lost 11lbs this week and DH lost 15! DD is doing VBS from 6-830 all week at her summer camp location so I will feed her on location before VBS starts.

Sun: Turkey hot dogs, roasted potatoes, fruit salad
Mon: Chicken Parm (grilled chicken w/ tomato sauce), whole wheat spaghetti, salad w/fresh veggies. I have some asparagus that I may roast as well.
Tues: Crockpot chicken tacos (shredded chicken breast with salsa) with whole wheat tortillas, fat free refried beans
Weds: Baked Parmesan crusted tilapia, honeyed carrots, salad w/fresh veggies, fruit salad
Thurs: Having dinner with BFF. DH is on his own..LOL
Fri: Not sure yet...
 
Yes it's 85 degrees out but I still baked some breaded Tilapia and made some zucchini fries.
