Well, long story short, I just got out of the hospital after 4 days.

We had a huge ham slice I froze after Christmas and some pierogies.

Tonight we had homemade vegetable beef soup and garlic cheddar biscuits.

I am currently working on this week's menu
 
Sun - Stuffed clams, scalloped potatoes, corn and peppers, and strawberry/kiwi/banana salad
Mon - Leftover stuffed clams, stuffed portobella mushrooms with sausage, leftover corn, sliced apples
Tues - Crockpot chicken cacciatore, pasta, strawberries
Wed - Chili cheese hot dogs, oven-roasted potatoes, broccoli slaw
Thurs - Meatloaf, sauteed spinach, sliced apples, biscuits
Fri - Pizza with fruit or leftovers from week
Sat - Out

Awwww, I hope you're on the mend!

We had crockpot beef roast, noodles and honey carrots. Had enough beef and noodles left for my lunch tomorrow plus another dinner. Going to move the salisbury steak I had planned for later this week to next week and add beef and noodle leftovers. No food waste this year!
 
heres my plan for the week-not in order

taco mac and cheese, salad
tuna melts, chicken soup
grilled chicken, steamed broccoli, rice
breakfast for dinner
homemade black bean burgers, oven roasted potatoes, green beans
taco style lentils and rice
frozen pizza, salad
 
I cheated - the grocery store was having a great sale ($1/each for huge stuffed clams which each feed 1 adult:), so I bought and used them as a special Sunday treat (and they were good:)...

Maybe I'll have to try and duplicate them sometime!
 
Well we just finished week 1 of our 4 week meal plan and we stuck to it. We decided we needed to be healthier and not spend so much on eating out. I meal planned and shopped for the entire month (of course still have to go get bread,milk,etc weekly). We spent new yrs weekend cooking and freezing so now we can reap the rewards. This week's menu is
Monday parmasean meatloaf rice and green beans(this is a new recipe for us)
Tues brisket w/ pot and carrots, and corn bread
Wed chicken pot pie and salad(pot is in freezer ready to put in oven)
Thur beef roast with carrot and mashed pot (crock pot)
Fri homemade pizzas
Sat chilidog casserole and tater tots (another new recipe)

I am trying to figure out why we didnt do this before. It made life so much simpler last week. I am planning on doing this all year. We were eating out 3-4 times a week. It was expensive and unhealthy so we decided not eating out in Jan and then starting in Feb we will eat out 1x a month for supper. We are also stopping the picking up lunch together on my days off and eating leftovers or sandwiches at home.

Just Hubs and I this week we are planning on eating in every night except Sat night date night :)

Mon - Chicken Stirfry (using left over chicken, pasta with fresh vegs and stirfry sauce) and Egg Roll for Hubs and a couple potsickers for me
Tues - Chicken with Brie and Apple (barber foods) leftover mashed potato and frozen corn
Wed - Pork Roast, white rice and carrots for Hubs and leftover corn for myself
Thurs - Hot Turkey Sandwiches (leftover turkey, gravy) stuffing, cranberry sauce on a toasted roll
Friday - Steak dinner (we got an Omaha package for xmas) Omaha pototo puffs and green beans
Saturday - Date Night - Smitty's or Espo's (we have gift cards)
Sunday -

Next week it will be all four of us (DD goes back to college on 1/21)
Mon - homemade chicken nuggets (coconut for me & hubs and plain for the kids) rice, green beans
Tues - Burgers, chips or tater tots
Wed - Barber Chicken (apple & brie for me and hubs and Kiev for DD) chicken strips for DS, Noodles, and green beans
Thurs - Meatloaf, mashed, corn
Fri - Homemade pizza night (and a movie!)
Sat - HS Hockey game, eating out
Sunday - Boiled Ham Dinner, mashed and green beans

We're having homemade turkey,bean, and rice burritos. Salad on the side.
 
It's my husbands 30th birthday today, we had a party for him on Saturday but today we, my mom and I, are making him a special meal of shrimp enchilado (not the Mexican kind and def no tortillas, more of a stew served over rice) with lobster tails.

In Spanish it's called camarones enchilados con langosta. It's a fancy meal for us lol! A birthday worthy meal.

I have been keeping it really simple this week. Even though I am still not feeling the greatest, I have to go grocery shopping tomorrow. I plan on making Chicken in Mole' sauce. I might have to do it in the crock pot. I had to go back to work. I am sitting most of the time thankfully and it wasn't that bad yesterday.

Last night I kept it simple and made hamburgers in mushroom sauce with some instant potatoes. We still have a lot of veggies left but I am really out of meat. Monday was a huge slice of ham.

I am back off to bed. :(
 
We had leftovers from my daughter's party this past weekend that I'm trying to use up.
Monday- Leftovers: Baked Ziti, salad & mini BBQ Meatballs
Tuesday- More Leftovers: Finish up the baked ziti and meatball sandwiches
Wednesday: Pizza leftovers (Ordered 1 too many pies on Sunday lol) with a veggie
Thursday: Homemade chicken soup
Friday: Tacos
Saturday: Leftover chicken soup with biscuits
Sunday: This is the 1 day I am not sure of yet! :)
