I'm planning our trip in late August/September and its much different this year.

- My wife and I (in our 50s) just want to do 1 park a day (4 days max) - NO HOPPING. As she has knee issues and this wouldn't be ideal like we use to do in the past.
- Our energetic youngest son and his girlfriend (age 19 and 18) want to do a 5 day hopper and they will probably be at the park all day
- Our 20 something daughter (and young toddler) has limited budget so I'm not sure what she is going to do .. definitely not a 5 day hopper.

Questions:
- Can I book separately and still make dining reservations for all? How would you book this? I want to have it on everyones phone.
- Where can the teens get an Uber/Lyft to get back to our Marriott Resort?
- Any pitfalls?

Since you are staying off-site you'll be buying tickets separate from a package anyway. Just get each whatever ticket type/length they want. You can still make park reservations and ADRs for everyone.

As above, you can make ADRs without regard to park tickets. Assuming that everyone is linked to your MDE as F&F, just book the ADRs you want and check off their names as guests on the reservation. The ADR will automatically show in their MDE.

^this is a very helpful tool. As others have posted, you can each buy tickets that match your desire.

WDW currently has 4 day 4 park ticket for around $400. You must do all 4 parks (no doubling up MK and skipping another park for example). Sounds expensive but it is a relatively good deal now prices have increased so quickly.

5day hopper is likely cheapest through BWticketing. I’ve used them many times with no complaint.

that 4 day ticket is blocked out Sept 1-4, so probably not an option for their time frame
