I am sure this question has been answered a thousand times but I can't find it anywhere... If a book a disney package (sun and fun) can I add a day to my park ticket at the discounted rate (5th day) or do I pay full price for a day...

If I am not mistaken, you can not unless that promotion is still going on. I could be wrong (shh...don't tell my husband).

If you click on the change reservation link, it may show the option to adjust the ticket without losing the package discount. You can also add a day at the discounted rate after arrival.

If you're making the reservation online, when you add the package to your cart you can adjust the number of days on your ticket. If you make the reservation over the phone just ask. Days 5-10 are inexpensive to add. If you've already booked the package, just stop by guest services at one of the parks or Disney Springs BEFORE you use the last day on your ticket. You'll be able to upgrade and they will reduce the amount owed by the amount already paid.

The sun and fun discount was a room discount so adding a day to park tickets doesn't affect it.

If you need to upgrade your ticket to add a day, you can do it prior to arriving or at the resort. You will pay the difference between a four and five day ticket. You do not need to purchase a separate one day ticket. Simply ask them to add a day to your existing ticket.

YMMV. We've tried this 4 times and have been unsuccessful each time. We were able to add a night or two, but at rack rate because the booking window for the discount had passed.
I was considering "discounted" the difference between a fifth day ticket and a single ticket

OP is asking about adding a day to the ticket, not a night to his stay.
