Dining Plan with Park Hopper

First time doing the dining plan and park hopper together, do you schedule all your reservations prior to the trip or do you leave some flexibility based on having a park hopper? If so, how hard is it get day of dining reservations? Always usually book dining at the 60 day window.
 
It's personal choice and depends on where you like to eat. We like to plan ahead.

You can look at the current availability and do that on various dates as you wait for your 60 day window to arrive and see if the options suit your needs. If you like them, it could be a fun adventure. If you're finding day of options don't interest you, I'd book ahead.
 
We like reservations, so we kind of already know where we’re planning to hop to based on where our dinner reservations are. If you don’t love that, you could plan to use your TS credit for brunch/lunch in whatever park you’re starting in, leaving the rest of the day unplanned and do quick service for dinner.

We were typically midday break people, so there have been times where we want to change plans once we’ve gotten through the first part of the day. During our break I’ve gotten on the app, found a different reservation and canceled the original before the 2 hour mark.
 

What you could do is book ADR for TS LUNCH in the park where you have your reservations. Then when/if you hop you use your QS for dinner wherever you like.
 
Hopping and dining work great if you stay at a Crescent Lake Resort including Swan/Dolphin. Back to your hotel in the afternoon. Pool, nap, shower, change then head over to EPCOT for dinner
