Thanks Deb! Tomorrow is Garrett's birthday & I have ordered him one of those high calorie, very sweet tasting cakes. I think I will make the cupcakes & this way while everyone else is eating that yummy cake, I can in indulge with a cupcake & not feel to guilty. I will have to get some cool whip tomorrow when I pick up the cake.
You can use any boxed cake mix with any diet soda. We've tried white cake with diet orangechocolate with lime pepsi
white with diet cherry coke
Honestly I haven't tried one that we didn't like. My only complaint is that if you make it in a cake pan it is so moist that it is impossible to cut and get a piece out. It sticks to the knife and the pan. I use a regular muffin tin with the papers in it and fill each one about 3/4 full. It works great and makes them easy to serve. We don't frost them as they are good without frosting, but you could use cool whip free or a diabetic frosting.
