Made the Crockpot Chicken and Black Beans with Cream Cheese the other night (post #6) and.... oh my gosh. So good! It's like eating the inside of a burrito or enchilada. My BIL actually put some of his into a couple of tortillas and had them as burritos. He said he could eat it every day for the rest of his life.

My sister ate it straight up, and I had it over white rice.
The leftovers got eaten with tortilla chips to make a yummy nachos plate.
We're having it again tomorrow.

I used two cans of black beans instead of one can to stretch it a bit and that seemed perfect for us.
