Hey there! I'm not Diane, but I thought I'd take a stab at your questions. We stayed AKV concierge in a 1 BR this past December, and we really enjoyed ourselves.
What kind of food do they have??? Our kids are 12 and 14 - picky eaters. The breakfast is a traditional continental style breakfast. There were various cereals, oatmeal, quinoa (kind of like a porridge), mini muffins, danishes, bagels, fruit, juices, coffee and milk when we were there.
Mid-day snacks were things like cookies and gummy worms. They also had a mid-afternoon tea service with teas and scones.
The evening appetizers included various things from Boma and Jiko--grilled marinated chicken on skewers, mulligatawny stew from Boma (yum!), beef and pork sausage, a fish dish I can't recall, various cheeses, hummus with pita bread dippers, and marinated veggies (hearts of palm, red peppers, celery, carrots, olives). At dinner they always had PB&J uncrustable sandwiches and gummy worms out for the kids.
The desserts and cordials includes various cordials, small pastries that alternated out each evening (stuff like zebra domes from Boma, mini mousse desserts, etc.). They also had cookies for the kids (and I think rice krispie treats one night too). The desserts would disappear quickly, but they replenished the trays quickly too.

I read on the dvcmember site some of the perks but not enough info really. What extra services and can you be specific? The main service benefit is their pre-planning assistance. The concierge can book your ADR's for you, assist you with planning any special surprises you might want to do, book dinner shows and Cirque du Soleil, purchase items to have waiting for you in your room (like an autograph book for example), etc. Additionally, you get access to the Sunrise Safari as a concierge guest (it's an additional charge and sometimes books up early), which is truly fantastic! You also get a discount on the Wanyama Safari as well. I haven't been on that one, but I've heard it's really good as well.
Also, your room will have bathrobes provided. You'll receive daily housekeeping, plus nightly turndown service with chocolates on your pillow. Once you're at WDW, the concierge can help with any changes you'd like to make to your ADR's, assuming they are available. The concierge has some extra pull to get you into the restaurants at AKL, but not the other things, so if you want that castle breakfast, you should let them know before your 90 day booking window for sure.
Can a one bedroom legal sleep 5 on CL? Yes, there is the king bed in the master bedroom, plus a queen sleeper sofa and a twin sleeper chair in the living room.
What is the difference between Jambo House and Kadini? The Jambo House rooms are a bit smaller than Kidani. In Kidani the 1 bedroom bathroom will have a separate shower and jacuzzi tub. In Jambo House the shower and jacuzzi tub are a combo. Also, only Jambo House will have value and concierge category rooms.
I hope that helps! Here are some pictures of the food offerings that I took during my trip last December so you can get an idea about the food:
