Could you have them shop for you while they are there? Pick up a quick themed T-shirt?
I'd ask first then be prepared to give them a few choices. I know I wouldn't mind doing it for a co worker if asked.

I attend a 3 day conference in Orlando for work every November. In 2004 it was at the Royal Pacific Resort (Universal Studios), and this year it will be at the Beach Club. From what I was told, our events at night are scheduled at EPCOT. I usually take my wife (company pays for it), and leave the kids with Grandma. It is a nice little break every year.
