MazdaUK asked about chicken Parmesan recipes over on the Crockpot Crazy thread, but since these aren't done in the crock I'm putting them here.

Chicken Parmesan
4 boneless chicken breasts pounded to 1/2 inch thickness
1 egg and 1/2 cup milk mixture for dipping
Italian seasoned bread crumbs
8 slices mozzarella cheese, or more
1 jar 16 oz. spaghetti sauce
Parmesan cheese
Dip the chicken breasts in milk/egg mixture and then in bread crumbs. Brown on both sides until golden. Set aside in baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese, and a little more mozzarella. Bake for 30 minutes or until bubbly. Serve with garlic bread and a nice green salad.

Chicken Parmesan
1/3 c Italian-seasoned bread crumbs
¼ c grated Parmesan cheese
4 boneless, skinless chicken breast halves
2 large eggs, beaten
2 tsp olive oil
½ cup shredded reduced-fat mozzarella cheese
9 oz BUITONI® Linguine
23½ oz BUITONI® Marinara Sauce, heated according to package directions
4 fresh basil sprigs (optional)
PREHEAT oven to 375° F. Lightly grease 8-inch-square (2-quart) baking dish.
COMBINE bread crumbs and Parmesan cheese in shallow dish. Dip chicken in eggs, then cover with bread crumb mixture. Arrange chicken is prepared baking dish. Drizzle with oil.
BAKE for 25 to 30 minutes or until chicken is tender and no longer pink in center. Sprinkle with mozzarella cheese. Bake for an additional 2 minutes or until cheese is melted.
PREPARE pasta according to package directions; drain. Toss pasta with sauce; divide among plates. Top with chicken. Garnish with basil.

Not figure friendly, but DD wanted to have these for a sleepover once. They sounded like "Hot Pockets" to her...a convenience food that you pop into the microwave.
Chicken Parmesan Pockets
Yield: 6 servings
Dough
2 envelopes FLEISCHMANNS Active Dry Yeast
1 cup warm water (100 to 110 degrees)
1/4 cup grated Parmesan cheese
1 tablespoon sugar
1 teaspoon salt
2 tablespoons butter or margarine, softened
1large egg
3 to 3 1/2 cups all-purpose flour
Chicken Filling
1 cup prepared spaghetti sauce
3/4 teaspoon garlic powder
2 1/4 cups shredded cooked chicken
1 cup chopped green pepper
1/2 cup grated Parmesan cheese
1 1/2 cups shredded Mozzarella cheese
Egg Glaze
1 egg white, lightly beaten
2 teaspoons water
In large bowl, dissolve yeast in warm water. Add 1/4 cup Parmesan cheese, sugar, salt, butter, egg and 2 cups flour. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough remaining flour to make soft dough. Knead 8 to 10 minutes. Place in greased bowl, turn to grease top. Cover; let rise in warm, draft-free place until doubled in size, about 1 1/2 hours.
Punch dough down; let rest 10 minutes. Divide dough into 6 equal pieces. Roll each piece to 6 x 6-inch squares. Combine spaghetti sauce and garlic powder; spread on squares. Top with chicken, pepper, Parmesan cheese and Mozzarella cheese. Fold to form triangles; pinch sides to seal. Place on greased baking sheet. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes.
Slash tops of pockets. Brush with egg white combined with water. Bake at 375 degrees for 35 minutes or until done. Serve warm.

And last...this is something I've done when I didn't have time to start from scratch. (aka I forgot to get meat out of the freezer
) I use a bag of the shredded chicken I make ahead & freeze. It takes very little time to defrost those! No measurements.
Quick Faux Chicken Parmesan
shredded chicken
shredded mozzarella
jar of spaghetti sauce
Italian bread crumbs
Parmesan cheese
olive oil (in a Misto sprayer)
Put chicken in the bottom of a casserole dish. (I don't grease it - just keep the cheese away from the edges. LOL But if you need it, I'd spray the oil on with the Misto.) Cover chicken with mozzarella. Pour sauce over cheese. Top with bread crumbs. Sprinkle bread crumbs with Parmesan. (or mix together in a bowl, but why bother with more dishes? LOL) Spray top with oil, which will make it get crunchy. Bake at 350 for 20 to 30 minutes - just long enough to heat it through & melt the cheese. The top will get a golden brown.
