Chicken-fried steak

Chicken fried steak is part of the Oklahoma State Meal. Mmmmmm. A good CFS is so good! I like mine with freshly mashed potatoes, cream gravy and fried okra. You can almost hear your arteries hardening while you eat it, but it's good comfort food.
 
Does anyone use cubed steaks for their homemade Chicken fried steak?
 
I used cubed steak for chicken fried steaks - I have also made chicken fried pork cutlets - :rotfl2: and while they sound stupid, they taste good.

A good chicken fried steak and gravy is heaven - a bad one is well, not much is worse. It is always such a risk to order it - but when you get a good one:cloud9:
 
Yes, we use cubed steak for ours. I think that's why we had it so much when I was growing up, cubed steak was cheap!
 

I LOVE chicken fried steak (country fried steak we call it around here). Sadly, I'm the worlds worst at cooking it. The good crunchy part always ends up sticking to the pan.......then we're left with over cooked meat and no good crunchy stuff for the top.

Luckily we have a Cracker Barrell close by. ;)
 
chicken fried steak is a texas religion with cream gravy , mashed potatoes, collards, and biscuits. needs to worship the chicken fried steak soon:rotfl:
 
I had never even heard of chicken fried steak until my first trip to florida. I've never, ever seen it anywhere in Canada and I've lived on both coasts and in the middle. Maybe out in the prairies... but I even doubt that. They like their beef out there!
As for the white gravy, upon reading about it it seems to be fat (generally sausage) mixed with flour and milk. Mmmm. Sounds healthy and delicious. :scared: :rotfl2:

I also use cube steak for my chicken fried steak. I love mine with French Fries and white gravey. I really likes I hops chicken fried steak. I'm not a breakfast person so when Dh takes the kids(their fave place to eat) I'll order it for breakfast. Yummy

My mom has tried a ton of times to teach me how to make it but this texas girl still can't master it. My poor white gravey comes out looking like lumpy half dried out glue! YUCK!
 
Chicken Fried Steak is round steak, cut in serving sized pieces, run thru a machine that tenderizes it (purists would do this with a meat mallet by hand). The pieces are dipped in seasoned flour and sauteed in oil or lard (your choice)--it should be about 1/2 of oil or melted lard in a heavy skillet (think cast iron).
Fry on both sides and remove to a serving platter and keep warm. Drain all of the oil/lard off except about 1 tablespoon full. Try to keep any little browned bits in the skillet. To the 1 T of remaining oil add 2-3 T of left over seasoned flour and whisk around for a minute to cook the flour so your gravy won't have an uncooked taste. Add milk (makes white gravy) or water(makes brown gravy) to desired thickness whisking for smoothness. Let come to a boil and adjust salt/pepper as needed.

Serve with mashed potatoes.....OH so good!!!:hippie:

If it is sticking to the pan, it is usually because the heat is either too low or too high. And I always use a spatula to flip it. It now comes out just right. And remember-things keep cooking even after they are removed from the heat-a huge lesson i have learned over the years. But believe, I learned this the hard way over the years!

So, do you heat yours on medium heat?? How much oil?? How long on both sides??
 
I had to leave home for a while right after I started this thread, and after catching up on it I must say that now I am really craving chicken fried steak. I guess I'll have to settle for my leftover chicken pot pie and sweet potato casserole from lunch today at Boston Market. At least it's in the right genre of food :).

I always order the white gravy on the side. I like my chicken fried steak to be nice and crispy. I just dip it in the gravy, or eat it without the gravy. Maybe all of our mom's make good chicken fried steak. My mom (KayTX) sure does ::yes::.

Has anyone had the chicken fried steak at Outback? I haven't, but I did try a bite of my MIL's chicken fried chicken there. It was delicious ::yes::.

Using a heavy skillet and enough oil/lard AND not crowding the pieces and letting them crust before flipping or moving them around helps keep the crust intact.:goodvibes I'd estimate 5-7 minutes on the first side--you can turn the heat down a bit if they seem to be cooking too quickly. The second side only 3-5 minutes more.

Medium-high heat and I use a combo of oil & stick margarine. I cook it until lightly golden brown on both sides as it will continue to cook even after removed from the heat. I think the big "trick" is to coat the meat and then chill it in the frig for at least 10 minutes before cooking. :upsidedow

White Gravy is not popular either here in Maine.
 
I call it cream gravy and it is my favorite gravy!!!!!!! I also love chicken fried steak!

Not exactly low cal but yummy. Maybe we'll have to do a DIS meet in Carrollton someday. The Roanoke location might be closer to you we were glad when they opened one here :) The only place I know where the Biscuits are the dessert.
 
Oh yeah, I love chicken fried stake but I feel like I'm clogging my arteries just by looking at it, lol. So I haven't eaten it in a very long time but after this thread I might indulge in it soon, just this once ;)
 
Chicken fried steak is one of my favorites and also chipped beef gravy on biscuits. I was born in and still live in East Central Indiana.
