Biergarten Gluten Free and Vegan

My husband is a picky eater. This will be his first trip to WDW (we're going early Nov), and my daughters first trip (she's 13 months). I've had a lot of trouble figuring out places for my husband to eat, and I liked Biergarten because it is a buffet and my understanding is that children under 3 can eat off parents plates at buffets. After showing my husband a video of the buffet he decided it was an acceptable option for him. Unfortunately, I've recently figured out that my tummy troubles are likely caused by gluten and dairy. I am a vegetarian, and dairy is what kept me from going vegan, so if I'm losing dairy I might as well go vegan. This means I'm going to be navigating Disney as a gluten free vegan. I was thinking we could just eat at various Food & Wine spots but I kind of wanted to sit down and decompress with a toddler. Is Biergarten even an option for us anymore? Or should I go back to the drawing board? I'm very familiar with Garden Grill (it's my typical go to for dining at EPCOT), but my husband thought it was too expensive for the portions and he tends to be a buffet kind of guy. I was also looking at Spice Road, because he does really like Mediterranean food. But, cost/person (since we'd have to get my daughter a meal) is again high.
 
Children under 3 can always eat off a parents plate, no matter the location. I would search the forum for vegan, i feel like there are blogs about GF at Disney and Vegan at Disney.
 
Tusker house has the most delicious vegetarian options of the theme parks buffets imo. Although lots of spices.
