Cheap, easy Crock Pot ideas.

Sorry if I overlooked this, I skipped a few pages of posts :rolleyes1
Has anyone ever cooked a whole chicken in their crockpot? If so, how? I'm always concerned about all the 'stuff' in the cavity (not the stuff in the bag) and the bones, I'm afraid I'll accidently get pieces of bones as I'm pulling the meet off...

I actually have a whole chicken in the crockpot right now. I do it all the time. I have never had a problem with bones, etc. (Im just really careful pulling the meat off the bones.)The recipe is Lemon chicken. I can post it if you would like.

I have! Great results too. I have cooked a whole chicken with just some Jane's Krazy Mixed Up Salt over it. Set the crockpot to low all day. Everyone loved it! Easy, easy, easy. :)
 
I was trying the chicken and biscuits tonight to make dumplings, but by the time I got home (8 hrs) there was no soup left! I put in 2 cans, I guess we'll have peas & carrots on the side. This new crock pot gets much hotter than my old one (if it ain't broke don't fix it!). I'll be looking for a kitchen timer now.

My Big Secret Is No Secret At All But My Hubby Hates Crock Pot Food If He Knows It Comes From The Crock Pot So I Get Full Racks Of Ribs And Cut Only To Fit In The Pot And Cook On Low All Day. When I Get Home 8 To 10 Hours Later I Lift Them Out Carefully And Place Them On High Heat Under The Broiler For 3-4 Minutes Each Side Then Glaze Them With Bbq Sauce, Honey/brown Sugar Is Our Favorite, And Under The Broiler Two Minutes Or So. The Outside Tastes Broiled And The Meat Is Wonderfully Tender, We Love It And The Hubby Does Not Know He's Been Tricked.

I do hot wings kind of the same way. I let them cook all day on low in the crockpot, simmering in the hot wing sauce. Then pour some more sauce over them and I run them under the broiler to brown them a bit. Soooo gooood!!! All I need is some blue cheese dressing and I'm in heaven! :)
 
This is like pork chops in and kind of like alfrado (sp) sauce. Actually really good!

2 cans condensed fat free cream of mushroom soup (undiluted)
1/2 cup skim milk
1 package (3 ounces) cream cheese, softened
1/4 cup fat free sour cream
2 tablespoons oil
4-6 pork loin chops, cut 3/4 inch thick
black pepper
1 jar dried beef (2 1/2 ounces)

1. Sprinkle chops with pepper and brown both sides of the pork chops (I use my George forman, super easy and quick)
2. nuke the cream cheese so its soft, add milk, and sour cream and mix.
3. Spray crock pot with cooking spray.
4. Place 1/2 chops on the bottom. Cover with 4 slices of dried beef, 1/2 of the cream cheese mix and one can of the soup.
5. Repeat step four.
6. Cover and cook on low for 8 - 9 hours.

How long do you cook them? Do they fall apart or are they still whole? Think this would work with a dry rub? I use a dry rub on my wings and serve sauce on the side.

The chicken I used was frozen and I usually cook them for about 6 hours and they are whole when I take them out. I like a lot of sauce on them and that may be why they stayed whole. Not sure they'd stay whole with a dry rub. It'd be worth a shot.

The reason I like to do them this way is the sauce really goes through the chicken!
 
Lemon Roasted Chicken


3-4 lb whole chicken
1/2 cup onion, chopped
2 Tbs butter
Juice of one lemon
1/4 Tsp salt
1/4 Tsp thyme
1/4 Tsp paprika

Rinse chicken, pat dry. Place onion in cavity of chicken.
Rub chicken skin with butter. Squeeze lemon juice over chicken.Sprinkle with remaining seasonings. Cover and cook on low for 10 hours or high for 6 hours.
 
Found some more I had saved:

Garlic Chicken

1-1½ pounds chicken pieces
1 cup brown sugar
2/3 cup vinegar
¼ cup lemon-lime soda (7UP, Sprite or Ginger Ale)
2-3 Tablespoons minced garlic
2 Tablespoons soy sauce

Place chicken in crockpot. Combine other ingredients and pour over chicken. Cook on low for 6-8 hours. Serve with rice.

Beef Tips

1 pound beef tips
1 can Cream of Mushroom soup, undiluted
1 can beef consommé
1 packet French onion soup mix
1 cup red wine
salt to taste

Combine all ingredients and slow cook all day. Serve over egg noodles.

Crockpot Chicken Tacos

4 frozen boneless chicken breasts
1 can chicken broth
1 envelope taco seasoning

Spray crockpot with nonstick spray. Put frozen chicken breasts in bottom of crockpot. Pour broth over chicken. Sprinkle taco seasoning over top. Cook on low for 8 hours. Shred chicken with a fork. Use meat for tacos or quesadillas.

Italian Crock Pot Chicken

4 boneless, skinless chicken breasts, (whole or cut into bite-sized pieces)
1 can Cream of Chicken soup
½ stick butter (no substitutes)
1 envelope dry Italian dressing mix
1 (8oz) package cream cheese, softened

Melt butter, pour over chicken in crock pot. Sprinkle with dry Italian dressing mix. Cover, and cook for 4 hours. Blend soup and cream cheese, pour over chicken for last 1/2 hour. Serve over angel hair or your choice of pasta.

Hawaiian Chicken

1 pound or more boneless skinless chicken breast tenders
1 cup soy sauce
1 cup teriyaki sauce
1 cup sugar
1 can pineapple chunks

Place all ingredients in crockpot; cook on high 4-5 hours. Great with white rice and steamed veggies!

Taco Soup

Into your crockpot, pour the following ingredients:
2 pounds browned hamburger meat
2 cans ranch-style beans
2 cans whole kernel corn
2 cans diced stewed tomatoes
1 can rotel
1 package Ranch Style Dressing Mix
1 package Taco Seasoning

Cook on low for 2-3 hours Serve with grated cheese on top and tortilla chips.


I made the italian crock pot chicken the other night and it was really good and took hardly any ingredients!!! i love cooking a meal where i only use what i have and don't have to make a grocery run!!!

I'm doing this for superbowl sunday!!!!!

also, for superbowl sunday a super tortilla chip dip:

1 can of chilli with no beans
1 brick of velveeta cheese


melt cheese, stir in chilli, keep on warm in crock pot. it's a dip my family loves. they make up holidays to celebrate so we can have it.........

Any good soup recipes out there that use a ham bone in the crock pot?

The recipe I have has stovetop directions of 2 1/2 hours! I'd rather throw everything in the crock pot at once and be done with it.
 
Santa Fe Chicken

Combine the following in your crockpot:

1 can black beans, drained
1 can corn
1/2 cup salsa

After stirring, add:
4 boneless, skinless chicken breasts
1/2 cup more salsa

Cook on low for 3 hours. Then add,

1 block of cream cheese

Cook one more hour. Serve over rice with flour tortillas.


This has become one of our absolute favorites. I added a smallish chunk of Velveeta the first time I made it because i wanted to get rid of it. I also added shredded mexican cheese towards the end. Here's how we use it.

Night 1: Fun night! We eat it with chips and additional salsa with a veggie tray on the side. It's our movie night/fun snack/dinner thing

Night 2: I make a package of Spanish rice. When it's finished I add it to the chicken mixture. Then I spoon the mixture down the center of whole wheat tortillas and roll them up. Put them in a greased baking pan and cover with enchilada sauce. Sprinkle with cheese and bake it at 350 until heated through.
