Cheap, easy Crock Pot ideas.

I've got one that hasn't been posted yet....

Cream Cheese Chicken

  • 4 chicken breasts
    • 1 stick of butter
      • 1 pkg of Good Seasoning Itailian dressing mix (dry)
        • 1 can of cream of chicken soup
          • 1 block of cream cheese

place chicken, butter and Italian seasoning in crock pot. Cook on low - 8 hours, cook on high - 4 hours.

30 minutes b/f serving, add in the soup and cream cheese.

Serve over egg noddles or rice.

Yummy, yummy!! This dish never has leftovers at our house. We also use this recipe a lot when we camp.

Can you use low fat cream cheese? That is all I have right now. Thanks!
 
take a deer roast put in some water to cover it up and i big onion and cellary sprinkle season salt and garlic powder and cook for 20 hours but the loose meat on a hambeger bun with Horseradish sauce

and watch it disappair

I don't see why not....I've never tried it, but since your not really "cooking" the cream cheese, it would probably work.

Let us know how it turns out.

I'm going to try the Santa Fe chicken for after church tomorrow!!
 

Okay.... I know that this was originally posted several months ago,but I hope the original poster is still "listening". In regard to that Hawaiian chicken recipe.... Did you really mean a full measuring cup of Soy Sauce??? That seems like an awful lot of sodium. Doesn't it taste salty?? Otherwise, it sounds delicious and I'm anxious to try it. Thanks!.................P

A cup of Soy and Teriyaki....major sodium content there. I would think it would be way too salty.
 
Chicken tortilla soup - Very nice on a cold day.

2 boneless, skinless chicken breasts chopped in bite-sized chunks
1 box of chicken broth
1 can rotel
1 tsp cumin
1 tbl chili powder
1 can corn (drained) or frozen corn
1/2 cup of crushed tortilla chips

Combine in crockpot and cook on high for 4 to 6 hours or on low while at work. You can add water or chicken broth and more spices to make more.

Serve the soup over more tortilla chips (not crushed).
Top with any or all of the following:

shredded cheese
cilantro
jalapenos
sliced avocado
salsa
 
I've got "regular" chili in the crockpot right now. Another really good one we like is:

Crockpot White Chicken Chili

1 pound navy beans, soaked
1 medium onion, chopped
3 cloves minced garlic
8 ounces chopped green chiles
2 teaspoons ground cumin
1 teaspoon oregano
1 1/2 teaspoons cayenne pepper
1/2 teaspoon salt
2 tsp dried cilantro
1 pounds boneless chicken pieces
14 ounces chicken broth
1 cup water

Put beans in medium pan and cover with water. Bring to a boil; reduce heat and allow to simmer 20 minutes. Discard water.

Put all ingredients in crock-pot.

Stir to mix thoroughly. Cover.

Cook on low 10-12 hours or high 5-6 hours. Serves 6-8

You might want to cut back a little on the cayanne and cumin, it is a little spicy.

I use one full bag of dry Northern beans and put half in a ziplock bag in the freezer with all of the other ingredients except broth and water so I have another quick meal to throw in the crockpot later.

Strangely enough, I don't really like the way that chicken breasts come out in the crockpot, though. It seems to make the meat stringy and tough.

I know just what you mean! My chicken used to come out tough and stingy too!

Here's my chicken in a crock pot tip (actually it works any time you cook chicken, or any meat).

1. Salt your chicken. Sprinkle liberally with salt about an hour before you start to cook. It can be longer. After an hour pat dry (but I bet you won't find any salt crystals!) then cook as normal, and season how you normally would, but without salt. It comes out very tender.

I solved my issue with my "gone too long even for the crock pot" problem. I went out and bought a small appliance timer (under $10). It's extremely easy to use, I just set it to turn the crockpot on about 10-11am and then set it to shut off around 6pm.

Even though I am home before 6 it allows dinner to be finished around the time the hubby is home from work and the kids are home from after school practices. Works out GREAT!

Usually I prepare whatever we're having for dinner the night before (or early in the morning since I leave for work about 6am) and then put the removable crock in the fridge. Then when my DH leaves for work around 8am he just puts the removable crock into the "pot" and then the rest or the work is done by the timer!:cool1:

Place boneless skinless chicken breasts in crockpot and cover with salsa. Cook on low for 6 hours.

The chicken falls apart and is super easy to shred with a fork.

Place in tortillas or taco shells along with favorite toppings like cheese, lettuce and sour cream. YUMMY!

The Garlic chicken sounds yummy - i have not used my crockpot since last winter - i like how chicken parts come out much better then cutlets!

Found some more I had saved:

Garlic Chicken

1-1½ pounds chicken pieces
1 cup brown sugar
2/3 cup vinegar
¼ cup lemon-lime soda (7UP, Sprite or Ginger Ale)
2-3 Tablespoons minced garlic
2 Tablespoons soy sauce

Place chicken in crockpot. Combine other ingredients and pour over chicken. Cook on low for 6-8 hours. Serve with rice.

Beef Tips

1 pound beef tips
1 can Cream of Mushroom soup, undiluted
1 can beef consommé
1 packet French onion soup mix
1 cup red wine
salt to taste

Combine all ingredients and slow cook all day. Serve over egg noodles.

Crockpot Chicken Tacos

4 frozen boneless chicken breasts
1 can chicken broth
1 envelope taco seasoning

Spray crockpot with nonstick spray. Put frozen chicken breasts in bottom of crockpot. Pour broth over chicken. Sprinkle taco seasoning over top. Cook on low for 8 hours. Shred chicken with a fork. Use meat for tacos or quesadillas.

Italian Crock Pot Chicken

4 boneless, skinless chicken breasts, (whole or cut into bite-sized pieces)
1 can Cream of Chicken soup
½ stick butter (no substitutes)
1 envelope dry Italian dressing mix
1 (8oz) package cream cheese, softened

Melt butter, pour over chicken in crock pot. Sprinkle with dry Italian dressing mix. Cover, and cook for 4 hours. Blend soup and cream cheese, pour over chicken for last 1/2 hour. Serve over angel hair or your choice of pasta.

Hawaiian Chicken

1 pound or more boneless skinless chicken breast tenders
1 cup soy sauce
1 cup teriyaki sauce
1 cup sugar
1 can pineapple chunks

Place all ingredients in crockpot; cook on high 4-5 hours. Great with white rice and steamed veggies!

Taco Soup

Into your crockpot, pour the following ingredients:
2 pounds browned hamburger meat
2 cans ranch-style beans
2 cans whole kernel corn
2 cans diced stewed tomatoes
1 can rotel
1 package Ranch Style Dressing Mix
1 package Taco Seasoning

Cook on low for 2-3 hours Serve with grated cheese on top and tortilla chips.
 
One of the simplest and best things I make in the crock pot is pulled pork sandwiches. I buy a pork roast on sale, and throw it in the crock pot then dump a bottle of bbq sauce in on top of it and cook it all day long. At dinnertime, I take it out and use two forks to shred the meat and put them on hard rolls. Its so easy and really yummy.

Other things I do: Corned Beef and cabbage: Toss the corned beef, the seasoning package, a head of cabbage cut into wedges and some baby carrots into the crock pot and cook all day. Thats it. This is a good one for this time of year because within the next couple of weeks corned beef gets really cheap.

Spaghetti sauce and sausages: I put a big can of tomato sauce, a big can of crushed tomatoes and a big can of tomato puree in the crockpot, add a bit of diced sauteed peppers and onions (you can skip this if you want), pepper, a pinch of sugar. garlic powder (or minced garlic), italian seasoning and a package of italian sausage links (uncooked, cut in half). Cook all day and serve over pasta of your choice. Or to make it even easier: toss a bag of frozen prepared meatballs in there instead of sausage and make into meatball sandwiches at dinnerime.

Has anyone ever cooked a whole chicken in their crockpot? If so, how? I'm always concerned about all the 'stuff' in the cavity (not the stuff in the bag) and the bones, I'm afraid I'll accidently get pieces of bones as I'm pulling the meet off...
 
I haven't done a whole chicken in the crock pot, but lately I've been buying the large package of bone-in chicken breasts, season with salt & pepper and pile them in the crock pot. When they're done, I let them cool down a bit and the meat comes right off the bone. I use this in all sorts of dishes... chicken pot pie, soups, stir fry, salads. It's a great time saver!
