Cheap, easy Crock Pot ideas.

I have this one and its YUMMY

Jalapeno Corn Pudding:

--2 cups of frozen or fresh corn kernels (I used frozen, 1 cup regular corn, and 1 cup roasted)
--2 T unsalted butter, melted
--1 cup milk (2% or lower)
--2 eggs
--2 T white sugar
--2 T flour
--1 tsp baking powder
--1/2 tsp Kosher salt
--2 T jalapeno pepper slices, chopped
--1/2 cup shredded sharp cheddar cheese

The Directions.

Spray the inside of your crockpot with cooking spray. Melt the butter in the microwave and put it in. Add milk, eggs, salt, sugar, flour, and baking powder. Whisk the ingredients together. Stir in the corn kernels, cheese, and chopped jalapenos.

Cover and cook on low for 3-5 hours. This is cooked through when the edges brown and begin to pull from the sides and the center is set. Take the lid off for 20-30 minutes when set and continue to cook on low to get rid of the added condensation.

cook pudding for exactly 4 hours on low, then let it cook for another 20 with the lid off.

This sounds yummy. I'm going to add this to our Thanksgiving menu. Thank you for the recipe!!
 
I put 2 large chicken breasts in, covered it with taco seasonings, cumin and enchilada sauce, cooked it all day, added some salsa towards the end, shredded it and we had that with chips and taco toppings like nachos.


BBQ beef, any cheap cut of beef roast, drench in BBQ sauce, shred and serve with bread or buns, onion, cheese, pickles for BBQ sandwiches.


Chili in the crock pot, hamburger or ground chicken or turkey, put it in the crock pot frozen, add a can of corn, a can of black bean, a can of pinto beans, a can of tomatoes, add some seasonings (I use taco again) and cook it all day.

I don't really use "recipes" when I use my crock pot. I just tend to dump a bunch of stuff in and cook it all day...works great for me, most of the time. LOL I like that chicken and dumplings idea tho, that one sounds good!!

four boneless skinless chicken breasts
1 can chicken broth
1 can cr chicken soup
1 can cr muschroom soup
1/4 c milk
2 c stuffing mix
1 stick butter - melted

season chix breast with salt and pepper, put in crockpot, pour can of chicken broth over chicken

mix two cans of soup and milk together - spread over the chicken

cover that with the stuffing mix and pour the melted butter over the stuffing mix

cook 6 hours on low or 3 on high

It was deeeeelish!!!

I use only low fat/sodium soup. From what you tasted, do you think they would be okay to substitute?

I don't see why not...you'll get plenty of sodium from the stuffing mix

I say it's worth a try.

By the way, I used cornbread stuffing. yummmm!

Reuben Chicken Casserole

Ingredients:

* 32 ounces sauerkraut (jar or bag), rinsed and drained
* 1 cup Russian dressing
* 4 to 6 boneless chicken breast halves, skin removed
* 1 tablespoon prepared mustard
* 1 cup shredded Swiss cheese or Monterey Jack

Preparation:
Layer half of the sauerkraut in the bottom of the pot. Pour 1/3 cup dressing over it; place 2 to 3 chicken breasts on top and spread the mustard on chicken. Top with the remaining sauerkraut and chicken breasts; pour another 1/3 cup of dressing over all and reserve the remaining 1/3 cup of dressing for serving.

Cover and cook on low for about 4 hours, or until chicken is cooked through and tender. Sprinkle Swiss cheese and cook until cheese is melted. Serve with reserved dressing.
Serves 4 to 6.

chicken n duplings

4 frozen chicken breasts skinless
2 cans cream of chicken soup
1 small onion, chopped
1 can refrigeraton biskets

put 1st 3 ingredents in crock, add water to cover top of chicken.
cook on low all day.
1 hour or so before serving, shred chicken with fork and return to crock. cut biskets into 1/4 pieces and add.
finished when biskets are cooked through (about 1 hour). don't overcook.

this is like real chicken n dumplings.

I made this today. It was really good except the biscuits were almost raw. Was I supposed to mix them in? I just let them float on top. I had to cook them for an hour and a half.
 
I bought a 6lb bag of really yummy egg noodles at Sams club and I need some ideas . I'm looking for a cream of chicken over noodles or a beef tips over noodles type recipe.

I stick stew beef or beef tips in the crock pot along with 1-2 cans of cream of mushroom soup, a can or so of beef broth, and a few splashes of Worscestire sauce. Cook until the meat can be chuncked up or shredded. Cook noodles separately. Add a cup or so of sour cream to the beef mix just before serving over noodles for an easy stroganoff. My family loves this!
