Care to share your favorite recipe that uses canned pineapple?

I've been on a pineapple kick lately, I can't get enough!

Anyone have a favorite dessert recipe that uses canned pineapple?
 
Very easy and tasty. Serve with ice cream or whipped cream.


Scalloped Pineapple

1/2 cup melted butter
1 cup sugar
1/2 cup milk
4 cups soft bread crumbs
3 beaten eggs
28 oz. can crushed pineapple, undrained

Mix first four ingredients. Add the eggs and pineapple, stir until blended.
Bake in a casserole dish at 375 for 45 minutes, until golden brown.
 
I have a great yummy one that is kinda like a cobbler. Very easy to make too.

2 cans drained chunk pineapple
2 cans cherry pie filling
1 package yellow cake mix
1 stick of butter (melted)

Mix the pineapple and cherries together and pour into a baking dish. Sprinkle dry cake mix over the fruit mixture. Pour the melted butter over top of cake. Bake at 350 for 45-50 mins or till golden brown. Can be served warm or cold.
 
What a coincidence!!! Just today a coworker was raving about this cake with pineapple in it that she made this weekend. Super easy and delicious according to her! So here it is, and I didn't even get a name for it from her :blush: So, if you like it, I guess you can name it whatever you want to! I plan on making it this weekend, and maybe calling it something "springy".

Place in bowl and mix with electric mixer

1 box yellow cake mix
3/4 cup veg. oil
4 eggs

ADD:
11 oz. can mandarin oranges undrained
mix with electric mixer (this will break up the oranges)

Place in 9x13 pan bake 350 for 30-35 minutes

cool

Frosting: 8 oz. cool whip, 20 oz crushed pineapple undrained, 3.5 oz instant coconut cream or vanilla pudding. Mix together with electric mixer. Frost cake and refrig.

Very Very Good.
 
Pina Colada Cake (doing this from memory..)

Make one white cake mix according to directions in 9x13 pan.

When it's done poke holes with a wooden spoon handle (or something that will make "holes" )

Pour one can of Pepe Lopez Creme of Coconut over the holes, also one can of sweetened condensed milk.

Drain one largish can of pineapple and spread over top (save juice for topping)

Put in refrigerator to cool completely - frost after cooling

Frosting:
Mix 8oz container with a little pineapple juice and about 1 - 1 1/2 cups flaked coconut - frost cake and refrigerate...

This is much better VERY cold. It is ALSO very rich... my family are huge sweet eaters - and I always give away 1/2 because we never finish a whole one.

Wow!! Talk about a coincidence! I have made this cake--which I call, simply, Mandarin Orange Cake--for Easter every year, almost, since time began. The whole family loves it. The only difference is that I always use vanilla pudding, NEVER coconut cream. And, I always bake it in two round cake pans. Easter wouldn't be the same without it.

For what it's worth, I've also heard it referred to as "Pig Pickin' Cake." According to the few people I've heard call it that, it's always served when there's a pig picking (butchering, I guess?). :rotfl:
 
FOr a quick pineapple fix

try mixing one can crushed pineapple with 1 block cream cheese -
then put on ritz crackers mmmmmmmmmmmmmm :teeth:

make sure you do one at a time as you eat or the cracker will get soggy :rolleyes:

or buy the store bought 'puffs' cut and put the mixture in the middle for a good dessert!
 
This is by far my most requested rec.

Hawaiian Wedding Cake

-1 box yellow cake mix
-8 ounces cream cheese
-1 small box vanilla instant pudding mix
-1 cup milk
-1 can crushed pineapple
-small package crushed pecans
-1 tub cool whip
-1 shredded coconut

bake cake according to package directions in a 9x13 pan. When done, poke holes in top and drizzle on a small amount of juice from pineapple. Drain the rest of the pineapple well.
Let cake cool.
Mix cream cheese, milk and pudding mix until creamy
Spread on top of cooled cake
Spread crushed pineapple and pecans on top
Frost cake with cool whip
Top with shredded coconut
Enjoy!!
 
This is a casserole so it can be a dessert or side dish. Great with ham.

3 large cans pineapple chunks (drained, but save some juice)
1 cup shredded sharp cheddar cheese
1 stick melted butter
1 cup sugar
1/2 cup flour
1 1/2 packages (sleeves) Ritz crackers
1/2 cup pineapple juice (drained from the pineapple chunks)

Preheat oven to 325 degrees
put pineapple in bottom of casserole pan
mix cheese, sugar, & flour in a bowl and pour over pineapple
crumble crackers over top
drizzle butter & pineapple juice over top
bake 30-45 minutes

My husband's family makes me bring this to every get together. It's even better warmed up in the microwave the next day.
 
1 can crushed pineapple
1 box single package angel food cake mix

Mix dry cake mix with the can of crushed pineapple. Pour into 9x13 cake pan. Bake on 350 untile cake is done. This cake freezes well.

Another coincidence. I saw the post asking for canned pineapple recipes and I was going to head to the panty and get the cookbook that included THIS recipe!!

This cake is AWESOME. Very moist and yummy. I call it my "summer cake." Wonderfully refreshing! I've never seen it with coconut pudding, always used vanilla.

My recipe also says to bake it in two round pans, split the layers, frost all layers and stack, then frost the sides. YUCK, what a PAIN! I also just make it in a 9x13 pan (greased and floured) and then frost it directly in the pan (so sides aren't frosted)

Man, now I'm hungry for cake!!
 
Pineapple Upside Down Cake

1 pkg of yellow cake mix (make as directed on pkg, use pineapple juice if you want more flavor and/or moistness in cake)
1 can of pineapple, drained (chunks or rings)
1 cup of brown sugar

Line cake pan with pineapple, drizzle brown sugar on top of pineapple. Top pineapple with cake mix. Bake as directed on pkg. of cake mix. Let cake cool and present turned over on platter. Enjoy! :)

This is one of my mom's favorite recipes... it's so simple!

Just wanted to say thanks for all these nice recipes. I love pineapple too. I'm going to pick one to make for Easter.

Off topic but I had a Hawaiian omelete (pineapple, ham and onion) the other day and it was really good! :goodvibes
 
Mini Pineapple Upside Down cakes

1 small can crushed pineapple, drained WELL
1/2 cup brown sugar
1/2 stick butter, melted
1 tube refrigerated biscuits (NOT Grands)
10 marachino cherries

Spray muffin tin with cooking spray. Preheat oven as instructed for the biscuits. Mix melted butter and brown sugar together until you have a mixture the consistency of wet sand. Add in the well-drained crushed pineapple. Place 1 cherry in the bottom of 10 muffin cups. Divide the sugar/pineapple mixture between cups and then top with a biscuit. Bake according to biscuit package directions. Let cool for about 5 minutes then flip them over and serve.
 
When I had DS #2 my friend brought a yummy cake. Just bake a lemon cake mix in a 9x13 pan. Spread a large can of crushed pinappele on top. Frost it with whipped cream. So easy and sooooo yummy.

Funny you should ask about a pineapple recipe. I'm trying this one out for Easter. :) Saw it in the Sunday paper. It's a Dole recipe. Just got the ingredients today.

Pineapple Angel Lush (15 minute prep)

1 pkg. (4 svg size) Jell-o Vanilla Flavor Instant Pudding and Pie Filling

1 can (20 oz.) Dole Crushed Pineapple in juice, undrained

1 cup thawed Cool Whip Whipped Topping

1 pkg. (10 oz.) prepared round angel food cake

10 small strawberries

Mix dry pudding mix and pineapple with juice in medium bowl. Gently stir in whipped topping.

Cut cake horizontally into 3 layers.

Place bottom cake layer, cut side up on serving plate. Spread 1 1/3 cups of the pudding mixture onto cake layer, cover the middle cake layer. Spread 1 cup of the pudding mixture onto the middle cake layer; top with remaining cake layer. Spread with remaining pudding mixture. Refrigerate at least 1 hour or until ready to serve. Store in refrigerator. (makes 10 servings)

ETA- Arrange the strawberries on top to decorate!
 
Here is a recipe that my family has made for years, while we don't serve it as a dessert, it could be a dessert.


Pineapple Souffle

2 eggs
1/4 cup butter, softened
1/2 cup sugar
1 Tbsp. flour
1 20oz. can crushed pineapple
5 slices of bread, broken in pieces

Preheat oven to 375 degrees. In a medium bowl mix butter, sugar, eggs and flour. Fold in the crushed pineapple ( juice and all) and bread pieces. Pour into casserole dish and bake for 45 minutes.

Whenever I make it for someone who hasn't had it before they rave and request the recipe.

I love canned pinapple. I'm going to have to test out some of these recipes.
