Carbs ARE Evil!!

Congratulations on your outstanding weight loss, and also on getting healthy!
I poked around that website for awhile and found lots of recipes I want to try. I just need to find someplace that sells almond flour so I can make those lemon almond cookies that look so good!

I also liked the look of that meatball parmesan. What are your favorites from that website?

I don't know if you have Kroger stores up there, but if your Kroger doesn't sell it, they may order it. Our Kroger store will order and stock anything requested for allergies, diet, etc. They just ask that they have a picture from a computer or a box top to make sure they get the right thing. I've never been to a Trader Joe's, but the Whole Foods in Memphis will let you return anything you don't like so when we go to Memphis, we stop there and get some things to try. They opened a box of gluten free oreos to try before I bought them. The employee said, "Since we let you bring it back, you may as well try it here before you take it home and return it if you hate it". I thought it was pretty nice.

Care to share your recipe for the muffins?

Here you go:

Banana Muffins

• 3 cups Almond Meal
• 1 teaspoon Baking Soda
• 3 Large Eggs
• 1/2 cup no sugar added apple butter
• 3 very ripe bananas
• TJ's Canola Oil Spray
Preheat oven to 350 degrees. In a mixing bowl, combine almond meal and baking soda. Whisk eggs in a separate mixing bowl. Add pumpkin butter to eggs and stir until thoroughly combined. Add pumpkin egg mixture to almond meal and mix to create batter. Mash bananas and fold into the batter. Spray a muffin pan with canola oil spray. Evenly distribute batter amongst the 12 muffin cups. Bake for 35 minutes.
Serves: 12
Cooking Time: 45 Minutes



I actually got this off Trader Joe's website. It originally called for pumpkin butter but that had a lot of sugar. I found apple butter at Stop&Shop that was only made from apples and cider without any added sugar. I added another banana to the recipe to up the sweetness a little.
 
Don't be surprised if you get to a point where you plateau - your body will start to think there's a famine out there, and hold onto those fat cells like crazy. That can make losing the last bit of weight very difficult.

Also must point out that there are dozens of fad diets out there, and to be careful and sensible about what you eat. A body needs a healthy balance of carbs, fats, and proteins. Going without one makes the body have to adjust in strange, unhealthy ways. We are omnivores!

I've never had a weight issue (except being underweight for a while in college) mainly because I try to be sensible about what I eat. Portion size is a lost art in the US, that's for sure!

My husband went on the low carb diet and lost lots of weight at the beginning, plateaued, and then started putting the weight back on, while staying off carbs.

Read the label on that lo-carb bread-its largely made from artificial and process ingredients. ewwwwwwwwwwwwww.
Truth is that very low carb or no carb can be dangerous-glycogen, the metabolic by product of carbohydrate digestion is the brains main source of fuel. Non-diabetic ketosis so valued by low carb dieters is an evolutionary adaptation to flucuation in available carbohydrate in the diet-its the brain telling the liver to metablolize fat into glycogen because you are starving to death.
avoiding simple, process and refined carbs is definately a good thing-but your brain needs some carbs so complex ones are an important part of a healthy diet.

I agree with all of this.
I am trying to focus on getting bad processed carbs out. homebaked bread using organic whole grain flours instead of store bought, home made treats for the kids., etc.

whole real food, I can never get bread completely out, I fail when I try.
but I can cut back.
just 1-2 servings a day, is good for me, satisfies, and will still allow weight loss.
 
My plan is going ( hopefully) something like this
breakfast ( I am not a huge morning eater)
peanut butter on whole grain toast

lunch
salad with some kind of protein added ( grilled chicken, tuna, etc)

dinner
grilled chicken or fish, or a tofu based veg meal
along with lots of veggies
maybe a baked pot or brown rice
 
Been doing this for a long time. If you eat several servings of veggies a day, maybe some berries, you get plenty of carbs for your brain and fiber too. Those of you that are hungry need to add some healthy fat! Grass fed butter, olive oil, coconut oil, avocados, fatty fish, range free eggs, all good for your brain and everything else. And it will NOT make you gain weight, I promise.

I do eat a bit of carbs these days, but only in the morning. My local baker makes a rice and nut based gluten free bread. I have some a few times a week, it goes so well with my butter and local organic red chile raspberry jam! My other splurge, there's a little bit of sugar in it. I am more in maintenance than losing, however. Could stand to lose a bit more, but my body seems to like where it is. That, and I love the wine too, though it is low in carbs. It does stop the weight loss somehow.

I read that less than 4g of sugar an hour, along with no simple carbs, will keep your blood sugar under control. So that's my guide when looking for a treat, like a couple squares of dark chocolate. Not every hour, though, maybe once a day!

Agree that it's bad to stay VLC (under 50) for too long, most people can lose weight on 50-100 grams and that allows for lots of veggies. But you can cycle that amount to boost your weight loss.

Those of you that have to have potatoes, sweet potatoes are lower glycemic and have more good vitamins. Purple potatoes are good too, if you can find them.

I haven't tried that particular recipe. I usually substitute bread crumbs with a 50/50 mix of ground flax and parmesan. I made chicken parmesan meatloaf muffins last night that were really good. The original recipe wasn't LC/GF but that was easy to alter.

When reading food labels try to stay away from items that contain more than six grams of sugar. one reason I like Fiber One is the label shows 0 grams sugar and the net grams of carbs is 11g ... 25 g carbs minus 14g fiber = 11g net.[/quote]

I stopped at a health food store on my lunch hour to pick up some almond flour. All I could find was an 8-oz. bag for $16.29! :scared1:Is that the usual price? I figured I would try a few more places before I spend THAT kind of money on such a small bag.

Around here they are $11.99. I can get them at Publix. In the gluten free area. Though Walmart had some the other day too in the gluten free area. Check prices on Amazon.

That's CRAZY expensive!!! Walmart should have Bob's Red Mill for no more than $10/lb. Netrition has Sensato for around $8/lb and NOW for $4.69/10 oz. I've been ordering from Netrition because that's also where I get xantham gum and a few other things and they offer flat rate shipping of $4.95

That price is crazy :faint:. The almond meal from Trader Joe's is a 16oz bag and costs between $4-5.
 
We have a local store called WinCo that carries bulk almond flour for $4.99/lb. Even at Safeway Bobs Red Mill is $9.99/lb.

Exactly. As all of my doctors and nutritionist have told me, the best diet is no diet. It's a lifestyle. It's about not depriving yourself but being aware of portion sizes.

But I also have to deprive myself of o many foods because of allergies that I can't fathom doing it by choice....but jmo
 
I'm some kind of a medical freak with diet. When I went to the doctors, I told them I'd recently lost 60 lbs and started getting dizzy when standing up. They assumed I'd cut out carbs too much or hadn't had enough sugar and was crashing, which tbh I did too.

When I told them I eat rice, white bread or potatoes with pretty much every meal I eat, they didn't really know what to say. Blood tests came back with my blood sugar fine, cholesterol low and pressure normal. I stumped them and myself. I lost my weight cutting out fried foods, fatty food and excess protein, since I was eating way too many eggs etc.

Oh well. I'd still like to cut down on carbs mind, so ill be trying to cut back on complex ones a bit more. Different strokes I guess. Oh, and I've stopped getting dizzy, so I'm not sure what that was all about. I keep an eye out for anything more serious though.

Thanks for all the links! I ended up placing an order on Netrition. I ordered a couple of boxes of Atkins meal replacement bars too since it was flat rate shipping. I am really tired of eating eggs for breakfast.

Cut out the simple ones like white potatoes and pasta. Not the complex. Those are the good ones.
 
Can I be the lone wolf here and say I love my carbs! I eat rice, pasta, bread, veggies, fruit, legumes, potatos ect. Most of the grains I eat are whole grain but still as a vegan I eat them ALOT. Never had a problem with my weight. In fact I could stand to gain a few pounds. I never count carbs, calories or anything else. I make sure my meals contain ALOT of fresh fruits and veggies, eat lots of beans, whole grains, seeds and nuts. I feel great:thumbsup2
