Carbs ARE Evil!!

If you google muffin in a minute, there are all kinds of ways you can modify them. I have added blueberries, nuts, and other things to spice them up.

I have found that putting pork rinds in the food processor will create a 'bread crumb substitute' usable as a binder in meatloaf or a breading for chicken strips. I make chicken strips with an egg wash and pork rinds (no flour).

I am working on making home made deep fried mozzarella sticks using almond flour and pork rinds, but I haven't perfected it yet.
 
I can now confirm with certainty that carbs are evil. Over the past year my blood sugar has steadily gone up and after the last doctor’s appointment, he indicated that I really needed to shed pounds as I was pre-diabetic.

So, I’ve been doing carb counting and doing substations for all the foods I enjoy. One of my big sacrifices was going to be bread (toast, sandwiches, etc), however, I found a bread made by Pepperidge Farms called Carb Style. It’s only 5 carbs per slice!!!!

So over the past 8 weeks, with NO exercise, I’ve lost 17 lbs. I actually did not exercise on purpose because the doctor said I would be amazed on how much weight I would lose by reducing/eliminating carbs without exercise. I thought he was full of it but wanted to see if there was any credence to his statement. Well, there is.

Beginning today, I start my exercise regime. If I’ve lost that much in 8 weeks with no exercise, I can only imagine how much I’ll lose with it!! :goodvibes

Great job on the 17lbs lost! I'm actually planing on starting low carbing. This week my goal is to slowly start by eating more veggies and gradually lower my carbs instead of only doing 20 per day. Week is going to be very stressful and dealing with the low carb headach wont be fun so thats why i'm gradually eliminating the carbs.

I would like to join a group of other low carbers to help, support and give ideas. I know there are many hardcore low carbers who go 100% but I have dd14 and dh who I also need to cook for and its to much for me to make 2 meals. I know they wont eat califlower mash potatos and low carb bread, squash noodles etc Plus its to expensive to buy for seperate sides and entrees. I need to learn how to make it in the real world when it comes to dealing with food. In the past when i did atkins we would go to in and out burger and I would get a protein style burger, no fries and water..easy so

if I can prepare meals and eat low carb breakfast and at work eat low carb lunch and snacks and eat lower carbs and portion control at dinner like spaghetti(small portion) small side salad and no bread, or meat, veggie small salad instead of potatos or rice

if theres a group like this on the DIS please let me know or maybe those of us who cant go all 100% low carb with subsitutions(like califlower mash potatos instead of regular mash potatos) because of other family members and budget wise can start our own group for support and ideas.

I would also love to be part of a low-carb support group on the DIS if anyone else is interested. I lost 5 lbs this past week! Of course some of that was water weight I'm sure, but I feel great! The first 3 days were really rough, but once I got past that all my cravings disappeared. Now I am not hungry at all. In fact, I am home this week on spring break and I completely forgot to eat lunch! I looked at the clock and it was 1:30 and I wasn't even hungry. Usually I am starving by noon! All I can say is so far, so good!
 

Congrats! I've been low carb for 7 years and I've maintained a 45 pound weight loss all this time. It is tough at the beginning but once you keep at it you don't miss it all the carb foods at all.

That is awesome!!! And I totally agree!! I did loose 100lbs with a low carb diet & exercise in 2008. Then fell off the wagon and over the last few years most (but not all, thankfully) have found me again! :rotfl2: Now I am back on my wagon and so far down 16lbs since the first of the year. :cool1:

You could always skip the side dish yourself or what we do, is have more servings of veggies instead of some starchy side.

Agreed. Not all carbs are bad.

It's having one extreme or the other that is bad (ie, no carbs or all carbs).

So true!! When I first was doing low carb, my DD called me the "Carb Nazi" :rotfl: But the side effect was that there were times I got seriously hypoglycemic to the point I was almost unconscious and my DD was having to help me eat a banana (the only carb in the house at the time because I was such a freak about carbs)! This time I am incorporating complex carbs in moderation. And I do feel much better this time around.

Trader Joes sells almond meal. I use it to make no sugar added banana muffins.

I will buy bulk almonds and flax seed and then grind them up with my magic bullet. I do prefer the flax meal to almond meal because it has less fat. Also with the flax meal its best to grind it fresh (or at least a couple day supply) to retain the benefits.

It all comes down to what works best for you & your family. If it works and everyone likes it, you will stick with it. If its a struggle and youre the only one trying it, the chance of success drops significantly!! I never count anything, because I get lost most days and have always been horrible at journaling my meals, so I just make smarter choices. Even when I am out shopping or running errands, I can always go to Subway & get a chopped salad! :cheer2:

I've just gone wheat-free after reading "Wheat Belly" and while I'm fine so far, I *know* it will be a struggle to completely avoid baked goods because they're my FAVORITE!! :D

I'm going to try the "muffin in a minute" recipe tomorrow and have bookmarked some of the other websites, especially "I breathe, I'm hungry"... those jalpeno/cheddar/cauliflower muffins look great! Sadly, I can see in general this is all going to take much more time than standard cooking, but I'm sure it gets easier as you get used to it.
 
Hi everyone, I see no activity since 4/1 but thought I'd post anyway .. I am a type 2 diabetic and had to start giving myself a once a week shot in addition to my oral meds to try and get my blood sugar under control, its been creeping up.. (I was diagnosied 4/2010) my A1C in Jan 9.1 so my dr said you need to start the shot.. well after 3 weeks I'd had enough of poking myself with a needle in my upper thigh and started Atkins on 2/18/13 .. OMG what a difference! I feel better, I look better, I have more energy, I sleep better.. I just went back to the Dr last thursday and I no longer have to give myself the shot !! :cool1::cool1: Still am on my oral meds which is ok.. My daily BS have droped from the 250 am range to about 120 range most days. and in the 11 weeks I have managed to lose 22.6 lbs.. (which is two pants/shirt sizes - I no longer have to shop in the plus size! :cheer2:) I've not really added in excersise in yet, I do go to zumba once a week but that is it so far... weather is getting nicer so we'll see about some walking maybe.. because I love how I feel and look I do not see me going back to eating the way I was.. my family still eats the bread/pasta/rice/potato/sugar I just make an extra serving of veggies for myself..

I am interested in the almond flour and how to use it.. Just use it like white in cookies/cakes/muffins?? along with splenda for sweetness vs reg sugar?

Low carb living works for me..

There is also a website called Low Carb Friends that I read through when I need inspiration, recipe ideas or support. It's a forum format similar to the DIS.

I have followed a low carb diet off and on for about ten years. Problem is, my husband is the biggest saboteur and if I start adding in more carbs things get out of control.
I know I feel better physically and mentally when I follow a low carb, moderate protein and higher fat diet.
Anyways, for health reasons and to lose weight I am back following this way of eating. Have lost 13 pounds since mid March.

The muffin in a minute is a great breakfast or snack, I just had a chocolate one this morning. They are very filling.
You can find recipes on Pinterest also, I always search out recipe ideas on there.

My husband isn't following the same diet, but since he eats what I make for dinner, and takes the leftovers for lunch, it has helped him lose a little bit as well. Also his cholesterol and BP have dropped.
I do still make brown rice or pasta for him and our DD, but I don't eat any. I am usually full from the other food I have fixed.

I made pureed cauliflower one night and didn't say what it was and my family didn't even bat an eye.
All I did was steam it in the microwave with a bit of chicken stock and added some butter at the end and then used my stick blender.

Brown rice is pretty good as well.

Go looking there are some great resources out there to help. Netrition has some great low carb products that will help you too. Just don't eat to many what the low carbers call frakenfoods. If you are trying to lose weight natural food really are your best bet but there are some products out there that can help you over a hump if needed.

I WAS going healthy though, but if this is the route you wanna travel....
Steam in chicken stock...add a knob of butter, the heavy cream and a smidge of cream cheese....THEN purée the heck out of it, dump into a casserole dish sprinkle some cracker crumbs and top with cheese and bacon. The toss under the broiler until its a bit brown.
