Is that category just as hard to book as the Standar View studios? I think I’ve kind of overlooked what a great point value those are until one randomly popped up as available for our trip in November. I know standard view studios are almost impossible to get, but I never really considered the other categories.

No, they’re easier to book. Generally speaking, 1BR villas remain available longer than other villas. They cost nearly double the amount of points and have fewer sleeping surfaces than a studio.

No, but for the DVC "busy season", you almost always need to book during home resort priority period. I've booked them for early December most years, and never needed to walk the reservation. They are sometimes available at 7 months outside of mid-September to Marathon weekend. Of course the pandemic has made past patterns moot for this year.

I love the BWV standard view 1 bedroom villas. IMO, they are the best bargain available for WDW DVC.
 
Another question for those of you reading this with more experience than me. In the 1 BR is there room on the floor for a twin sized inflatable mattress with the sofa bed pulled out? Or alternately, would there be room for two twin sized inflatable mattresses on the floor without the sofa bed pulled out? My teens don’t want to share a bed, but I like the space in a 1BR, and we always drive so hauling inflatable mattresses down and back is not a big problem.

Yes, there should be room to put it on the floor near the lock off door. We have done it.
 
As to putting a twin size inflatable in the living room with sofa bed out, one can likely fit if you move th bar stools or put it between couch bed and window. As to being able to book 1BR standard views, their reservation pattern is substantially better than studios which have an 11-month issue much of the year. The standard 1BRs are usually open even at 7 months out during the moderate to low demand season that runs from the Monday after marathon weekend in Jan to late Sep. For the high demand season from late Sep to marathon weekend in Jan, they are usually difficult at 7 months out although you may find a few days here and there once in a while, and usually easily available at 11-months out except for a minor risk otherwise during early Dec and around NYE.
 
We are staying in a BWV Standard 1 bedroom right now. Plenty of room for 2 twin air mattresses. You could put one by the door to the hall and one under the kitchen counter and have the sofa bed open :)
