Chocolate Covered Cherry Cookies

CookieDough:
1/2 cup butter 1-1/2 cups flour
1 cup sugar 1/2 cup cocoa (not instant-baking cocoa)
1 egg 1/2 tsp salt
1-1/2 tsp vanilla 1/4 tsp baking powder
1/4 tsp baking soda

In large bowl cream together butter, sugar egg & vanilla until light and fluffy. Then add remaining ingredients, blend at low speed until dough forms (dough will be a little stiff). Roll into one inch balls and place on a cookie sheet about 2 inches apart (I spray cooking spray on cookie sheet first)

1 lg. jar of maraschino cherries, drained (save juice & set aside in case you need it.)

Push one maraschino cherry half way into each dough ball. When all cookies are molded and cherries put in each one, then prepare frosting and use immediately.

Frosting ingredients
1 cup (6 oz pkg) semi-sweet choc chips 1/4 tsp salt
1/2 cup "condensed" milk (Eagle Brand) 1 to 1-1/2 tsp cherry juice

Melt ingredients together on a very low flame, stirring constantly until smooth. Or, you ca use one of those tiny slow cookers and melt it, stirring constantly.
Frost each cherry by spreading approx, 1/2 tsp frosting over cherry so that the frosting completely covers cherry and touches the cookie dough all the way around. Frosting will spread a little more during baking, sealing the cherry to the cookie.
Bake at 350 degrees for 8-10 minutes, until cookie is puffy. Let cool on brown paper and then place in container to store. You may want to leave the lid on lightly as the moisture from the cherries will make the cookies get too moist if they are stored too long.

Aww I still love ya DDad, I was catching up on all my other threads and someone I'm close to was having a really bad time of it and I was very worried about their emotional and mental health and was chatting with them on AOL and I just couldn't do it all. I am here though and just posed a recipe I promised Disneymom (and anyone else who wants it, feel free to copy it). I hope you all enjoy the cookies when she makes them, they are totally 100% calorie free
