Mine was ready about 2 hours before everyone got here. I cook mine in a roaster and read that I could hold it at 200 degrees so that's what I did. About 15 minutes beore they got here I cranked it back up to 350 let it get hotter, double checked the internal temperature and everything was good.
I don't think I could ever go back to cooking a turkey in an over. I love my roaster!
